I have my beloved Vanechka, the bear sharpens! I chase her, and she gnaws! She spat on the opportunity, at least a little, to pick leaves and processed the minks. I'd better mix it now than tea ... Eh ...
Radushka, sorry how! Imagine, I first met this beast here! I was stunned, what this bear is huge and terrible ... So, maybe, it threatens me too ... And what do the bear's mink look like? And how do you handle them?

lappl1, Lyudmila, in our heat it seems that Ivan's tea has taken root. From seeds 3 bushes and Natasha sent rhizomes. Everything overwintered. Seated in different places where the shadow happens. Under the fences, near the pond. Growing everywhere. Last year I even made a little tea. If there is an opportunity, it is better to order rhizomes. Well, it's very difficult to grow from seeds. (I was)
Vasyutka, Natasha, yeah, thanks, I have already read about this in the next topic and answered ... Only I have such a slow Internet that I can’t keep up with you ... I’ll only answer, and already a bunch of new messages.

Unfortunately, I don't have access to growing Ivan tea ... But my mother and I buy fermented tea on the market. Expensive, 100 g - 350-400 rubles. But we love him very much ...
So my mother read somewhere that if you brew ivan tea, then pour it into a container, you can drink it for almost 2-3 days (without a refrigerator). Personally, I am against it, it seems to me that fresh tea is always better and healthier ...
Tell me, which of us is right?
lappl1
Alinenokk, mom is not far from the truth! Nothing will come of tea! There are substances that prevent souring. I've never gotten a moldy drink yet. Moreover, Ivan tea can (and even should) be brewed 3 - 4 times. With each subsequent infusion, those substances are removed from the tea with which they could not come out with the first infusion, for example, hanerol is a substance that helps fight cancer.

Good day to all. The other day I decided to go fishing .. instead of fish I got a healthy broom of young shoots of Ivan tea, about 15 cm long. It took about 20 minutes to get ready. Tore off - it turned out 10 l = 1.6 kg. The wilted twigs were peeled off better, it took 30 minutes. Found leaves with clutches of eggs .. the child was happy! We spent the night in the cold in a bag. Then she laid it out to dry on a sheet at a rate of 19 *. Time took 5 minutes. It was dry for half a day, stirring up. The smell is magical. Then my husband and I screwed up such raw sausages, it took 20 minutes for two. Wrapped it tightly in a damp pillowcase, 15cm thick and in a saucepan under the lid in the bathtub, there is 23 *. Didn't wrap it up. It took 10 minutes, taking into account the search for an unnecessary pillowcase)) inside after 2 hours there was 26 * next to the battery. The smell is good. I removed it from the battery for the night. It took 12 hours of fermentation, inside the pot 24 *. At 6 in the morning I began to dry ..... the dry land is still .. for 12 hours already dancing with a tambourine around the stove and dryer ... I have 1 baking sheet and 8 batches came out. So: the first 3 batches cut the sausages, the material is dark green brown ty, interspersed with green leaves 5%. The smell is good, it hasn't changed much since the evening. # 1) Put the oven at 100 *, stuffed the tray. Layer 1.5-2 cm. I stir every 15 minutes for hours. After half an hour, I put a thermometer in there in a mass of tea, there is 60 *. I'm surprised to make a 150 * pen. Smells good so far. In 20 minutes there is 85 *, it starts to smell like hay .. It doesn't look like burnt paper. The tea is dry and crumbles when pressed. Another 10 minutes and there 100 *, it began to smell like fruit and hay. I take it out to the dryer. There is 30 * hour. It smells like hay ((((, take # 2) fermentation for 12 hours. Everything is the same, starting from 100 * temperature, then I write on a thermometer in the mass of tea. I thought to boil and lower the temperature. In general, an hour from 100 * lowered to 80 *, I stir every 15 minutes. At first it smelled good, then dried fruit, then strongly with hay or even such low-quality hemp, but it's not her ... it's definitely fireweed, I know him .. in short, the tea crumbles, put it in the dryer for half an hour, my nose is bigger I could not stand this stench. Double 3 #) fermentation for 13 hours. 1.5 hours in the oven at a temperature of 60 * to 85 * as soon as the "hay" appeared, I took it out in the dryer. Bottom line: nothing smells like that, with a hint of hay. Take # 4) fermentation 16 hours, I didn’t cut it, I don’t give a damn. I want a normal tasty tea. I just put the "rotor" in the dryer for 1.5 hours 60 * on the handle. It turned out to be slightly aromatic, but in the box after an hour of lying it smells more like herbal green + 5% apple smell.: - Double # 5) fermentation for 20 hours, drying in the oven for 30 minutes from 85 * to 110 * "hay" hatched, by running into the dryer, the leaves are 90% crumbled, 10% soft, although the layer was very thin and interfered every 5-7 minutes. Fuf. I ate all the candies and half a pack of chocolate balls with a liter of milk. Nerves fail. I stupidly sit at the stove and look at the tea, I want it, I interfere with it, I follow the thermometer. What's the catch ?? Take # 6) fermentation 21 hours, a thin layer in the oven, stir every 5 minutes, from 85 * to 135 * for 25 minutes. The leaves rustle, I take them off to the dryer. The jar smells of hay and that's it. Take # 7) fermentation for 21 hours, a thin layer in the oven for 15 minutes at a temperature of 85 * to 100 * (I suspect that hay appears when the leaves dry in the oven to a crunch) I took out the dry ones in the dryer for an hour. There is hay in a jar. The last take, aka # 8) yes, this is my face, probably a bunch of eyes and a moronic smile. In general, I was tired of meditating on the oven, waited 60 *, put the tea in and turned it off, languidly interfered every 15-20 minutes. An hour passed from temperature 60 * to 25 *. I shoved it into the dryer. It smells like always .. I won't even write anything. You already know ... aaaaah what a ... day.

It's a shame to snot, and here it is, the smell, straight delicious and then - bang and hay. Well, why-why-so. All the time from the fermentation it smelled good, at the beginning of drying too, at the end - hay.that's 15 minutes, that's 1.5 hours. What 60 * what 130 *.
lappl1
Boyarskaya, Irina, yes .... I'm with you now snot I will shed tears ...
You are a heroine !!!! I'm not talking about tea, although what you have done is almost a feat!
I mean the description! Thank you. that they wrote so much! I love to read such details. But I can imagine how many emotions poured out during this process!
So, let's go in order.
1. You have made tea!!!! In any case, the one that does not stink, but smells like hay. Freshly dried tea is virtually odorless... Only during dry fermentation for a month or more, in a dry, dark place, the aroma you have been waiting for will appear. Have you read in the recipe that it is not recommended to taste the tea immediately after preparation? Be patient!
2. May tea from such tiny and delicate leaves I personally like less than from the leaves collected during the flowering fireweed. But many people really like it. Here is a matter of taste. Maybe you should wait for flowering?
3. Are you sure the leaves have withered enough? Didn't the clump of leaves crumble after opening the cam? If you don't wither enough, it may not work very well.
4. You have loose leaf tea, therefore need oppression during fermentation... Did you put oppression? greenish blotches indicate that the mass is partially fermented. This may be due to the fact that you did not crush the leaves enough and did not put oppression. It would be nice not to twist the rolls, but to knead like dough. Then everything will definitely be rumpled. And fermentation will go better. And so you have left untreated areas on the leaves.
Therefore, many people prefer to make granulated tea. There, the leaves will have no chance of being left untreated.
But you no disaster happened... There will be tea, you'll see. But it won't be black. Many people like this.

A 2 cm layer is a lot. It can become steamy and lose its smell. No need to "stick" the thermometer into the mass. This, of course, is not bad for tea, but it is very bad for your nerves. See, you started going from one extreme to another? 150 * can be set at the beginning of drying, but not in the middle! Late. It may not turn out what you expect.
Quote: Boyarskaya
I put it in the dryer for half an hour, more my nose could not stand this stench.
Irina, VON ??? What smelled like? I have never stinked tea during drying, even spoiled! Unless I burned it ... Then there was just a burning smell. But don't stink ... Are you sure what exactly stank? Then it says about one thing - the tea went bad during fermentation. But with you it simply could not deteriorate - it did not have time in the time that you are writing.
Quote: Boyarskaya
I stir every 15 minutes.
At the beginning of drying, this should be done more often - after 5 minutes, especially leaf tea - it dries faster than granulated tea. And given that the layer is too large during drying, it is likely that the tea steamed up in 15 minutes and lost its smell ...
Quote: Boyarskaya
oven dry 30 minutes from 85 * to 110 *
ARE NOT CONFUSED? It is necessary the other way around - from 100 * and below ... Otherwise, it will be worn out again ...
Quote: Boyarskaya
the leaves are 90% crumble, 10% soft, although the layer was very thin and interfered every 5-7 minutes.
They crumble because they are leafy. Without this, it does not happen. But this is not a marriage. And soft ones will dry at a lower temperature in a dryer and a bag ... Do you remember what else you need to dry in a bag?
Quote: Boyarskaya
I have a suspicion that hay appears when the leaves dry in the oven until they crunch
You are smart! And there is! This is the only way it should be! I will write again - ONLY THAT DRIED TEA DOESN'T SMELL ANYTHING !!!!!!
Quote: Boyarskaya
sluggishly interfered every 15-20 minutes.
Be sure to shorten the time, especially at the beginning of drying. For loose tea this is a lot !!!! 3 - 5 minutes at the beginning of drying, as you lower the temperature, you can also 7 - 10 minutes. For a sheet, a lot of 15 - 20 minutes. lots of.
conclusions:
1. The tea is too dry due to the fact that it is leafy, and you rarely interfere. And it looks like it took a long time to dry. Hence it is brittle.
2.Make the layer thinner when drying, then you need to mix it even more often.
3. You have one baking sheet, so the tea will dry even faster than two or three. You are clearly overdrying the tea. Hence the hay ...
Recommendations.
1. It is necessary to look not at the time, but at the state of tea. As it begins to dry out, you need to be especially vigilant. Dried in a dryer and a bag. Better to put underdried there than overdried.
2. Set the temperature to high only at the beginning, not in the middle of the process. This also makes the tea dry.
4. Only granulated tea can be "fry" at 150 * at the beginning of drying. Leafy run the risk of overdrying or burning. For sheet, 100 * is the maximum.
5. I strongly recommend trying to knead the next tea like a dough, or twist it in a meat grinder. Granulated tea is almost hassle-free. And the result is always more predictable. The tea is black, strong and aromatic due to better fermentation and more even drying.
6. Wait for June, until you get the hang of making tea. The result will be much better. Or do less than you did this time so that the process does not take so long.
7. Place tea away in a dark place hermetically sealed. Forget it for at least a month, better - longer. Your first tea will surprise you. You will see!
Question:
What kind of oven do you have - electric or gas, stationary or mini, where does the heating come from - top, bottom or top / bottom, is there convection, how many trays can fit? The characteristics of the oven greatly affect the result. You can dry in any, but there are nuances.
Advice.
1. Making tea is magic ... And for some reason you have stretched this process so much that you lost your nerves. you need to correlate your time capabilities and the amount of tea prepared at a time. Otherwise, the magic will turn into violence against yourself and everyone around you. Such tea will not bring pleasure - neither now, nor later.
2. Irina, please reread my answer to you several times. If you have any questions - ask. We will find you a way to make tea for pleasure, not flour ...

Boyarskaya, Irina, I sympathize with your torment. I always say, take as much raw materials as you can process without harming yourself and your nerves.
Well, Lyudochka has painted everything for you, I also think that it was badly dried up. I did the sheet one once, and even that one of the young leaves of Ivanushka, and yes, I kneaded it like dough. But for me he is not strong, he went to gifts.
Irish, take it away for half a year, just control it so it doesn't get moldy. Ivanushka is such a grateful plant that she still pleases afterwards.

Thank you very much, I'm here. I decided to leave a little thought about tea, even though I dreamed about it all night. I didn't try it. Until. I'll wait a month, sometimes sniffing jars .. with regards to different temperature options, I decided to try different methods in order to immediately understand which one works. Hence the experiments. Wrapped a dense bundle of leaves in a cloth, like the rolls are cooked, only thick, then rolled it into a saucepan under the lid. Today I drank green oolong tea at a party, I realized that the smell of my jars would be more pleasant. Oolong tea just reminded me of the smells of the whole day) I’m just probably very critical + at the 7th month, I am a little crazy, but I would not say that my smells have changed a lot due to pregnancy. I love pure fruity and herbal scents without brooms. I'm afraid to burn my flimsy meat grinder, I'll be in the next. once probably freeze the leaf. I'll make this tea anyway) Thanks again for your support.

Yes, I did not put oppression, I did not overexpose the fermentation. About the stench, well, it's like if you put the straw in the oven, it probably smells the same. Take a thin layer on a baking sheet. That is, the wet leaves smelled divinely of fruit, then the smell in the oven weakened for 10-15 minutes, in the next 10 minutes the temperature of the layer rose sharply by 20-30 * relative to the initial one (apparently this happened when the leaves dried up) began to smell like hay. Further in the dryer, the hay evaporated and when sniffing, the mass smelled very faintly but very tenderly of apples. And then, after cleaning in a jar, hay with apples appeared again. This is in all the jars except the burned-out one, there the apples don't even hatch. Conclusion: when dry, the mass sharply increases its temperature, this happens literally in 5-10 minutes by 20-30 *. The total drying time on a baking sheet took me 20 minutes. Further crumbly and the smell of hay.
Ivanovna5
Boyarskaya, Ira, you do not need to wrap the raw material in a wet pillowcase for fermentation. It is placed in a suitable container and covered with a damp cloth so that the top layer does not dry out. If necessary, the napkin is moistened several times in the process, but it does not come into contact with the raw materials. In a pillowcase (dry) ready-made tea is dried after the oven.
Now I have only a tea-mix, granulated from non-fluffed boxes and a mature late leaf, with the addition of Ivanushka's dried flowers. I like it very much, the aroma has a hint of prunes and is brewed with a dark, rich color.
Girls, last night I accidentally discovered its healing properties - it turns out that such a strongly brewed tea relieves an attack of heartburn. With other batches of tea, there was no chance to try its effect in case of heartburn, therefore, I will definitely prepare "Fuzzy" tea this season, but of course, I will prepare a lot from leaves of different maturity.
lappl1
Boyarskaya, Ira, that's good! Take a little rest, otherwise you shouldn't worry ... And then just do it a little at a time. you won't get tired, and the result will be better.
Correctly, the tea was removed. Let it ripen more. I'm sure you will like it.
And next time, consider the points that the girls and I wrote to you. The main thing is not to overdry. 20 minutes to dry is very fast. Something needs to be reconsidered with your oven. I asked you questions about her in the past. Try to answer, maybe it's all about her?
Ivanovna5, Anya, thank you for such valuable comments for Ira and your own observations. You are right, our tea helps a lot. It's great that you felt it yourself. Harvest a lot, steadily, so that there is enough for everything - both for pleasure and for treatment!

thanks for the kind words. I have a terrible electric oven, novoyatka eks, a standard stove in a municipal apartment for military personnel. This technical masterpiece requires a special approach. The temperature as it turned out on the handle does not correspond to reality. For example, on the handle 60 and inside 85 ..and 1 (!) Baking tray without a grid included .. amazing thing! The tea began to acquire an aroma. Of course, I carefully read all the tips. Thank you. And she wrapped the fermass in a rag (what a word I came up with!) To compress it properly.

Good day everyone! I have a question about Ivanushka! Today we went after him to the place where they took the blooming one last year, but there is no color yet. And I’m not blooming, and I’ve never seen him young! There are plants similar in appearance and structure of the stem and leaves, but they have small reddish villi on the stem. So the question is: does a young fireweed have a completely smooth stem or does it have villi? (the flowering stem was kind of smooth). In general, I typed nothing, I decided to clarify whether it was.

Irina, in my opinion this is not Vanechka.
The stem is smooth in fireweed and the leaf is slightly different in shape.
And you put it in the bag, carry out the aroma test.

filirina, this is definitely not Ivan-tea.

filirina, Irina, the narrow-leaved fireweed has a different arrangement of leaves, they grow very often in the young. There are no villi on it, the stem is smooth. And the leaves are narrower.

Natalo4-ka
lappl1, Lyudochka, that's exactly what I'm collecting now.
I'm making the second batch of tea. My husband asked me in winter: - Well, what? will you have enough tea for a long time now?
This, so as not to go fishing with me, and then not twist in a meat grinder, although I often knead, I like large-leaf Ivanushka more. But I know that tea only gets better with time. And despite his sidelong glances, she brought another armful of raw materials and did not ask for his help. He kept shaking his head (read, twirling his finger at his temple). But one of these days a friend of ours asks to treat him to Ivan-tea, they say he tried my tea with our relative, and he really liked it. Look, my dear is already proud, last year we made tea together. Here, consider, "good" for further experiments received, Hurray! Now I will hone the technology and try different methods.
Today I am finishing the batch processed by steaming. I read that not everyone likes this method, but last year I accidentally left the leaves in the bag and the aroma was so delicious yum that I decided to try it.

Lyudochka, and if you do it young, can you do it with stems, or is it better to have some leaves?
lappl1
Helen, put the stems on something else. You can also in salads! They are delicious and very juicy. For this reason, (juiciness) will not work. The leaves have already wilted, but the stems did not even think ... Fermentation will not go as it should. I've tried ...From the first minutes of twisting, I realized that it was not necessary to do this - the mass was munching ...
But it is very possible to dry the twisted stems. And then grind them on a coffee grinder. And put this powder into baking. And add it anywhere as a source of fiber - in cereals, yoghurts, cottage cheese ...
Eh ... There is no way to try it now. Helen, maybe you can try? I think the result will be great! I'm just sure of that.

Elena Kadiewa
You can simply tie it into bundles and air dry. Someday there will be sun and warmth ...
Elena_Kamch
elena kadiewa, Len, this is not our option! It will mold faster than dry. We have 80-100% humidity almost always
And if it's warm during the day, then such a tumaaan creeps in in the evening (as in the movie Silent Hill)
Elena Kadiewa
Even so!
At least I have a stove in the country and a heater.

Elena_Kamch, Helen, everything is much simpler! We do it in the same way as pine candles. Twist in a meat grinder, and then dry in the oven at 50 *. And you don't need to dry. Although, if you do not miss a sluggish state, then you can, as Lena wrote, wither in bundles, and then in a meat grinder, and then in the oven ...
Girls who have a dryer! Maybe try to do stalks of young Ivan-tea like fiber and powder? A masterpiece will turn out, I'm sure! Can you imagine what is the use? And in bread, and in porridge, and in yoghurts !!!! Wherever you want! Such power is in these stems! They are sweet, delicious! I just ate them! It is a sin not to preserve such a benefit.
