I went and smelled again ... "Macho" (leafy with strong fermentation and frying) now smells like good black tea, the sweetness seems to be gone, you have to brew and try. Some of them smelled like fish. Others are again sweet or just plain tea. In short, it's completely ambiguous, I'd better wait for my husband, tell him what he smells like, here I believe him more than myself.

Much also depends on the material in which the tea is stored: glass, plastic, tin, wood, paper. Are the lids, storage temperatures, etc. sealed? In my glass jars with twisted lids, the tea stopped smelling, and after pouring it into a tin can, it started again.
Okay, let him stand, he doesn't ask for food. Suddenly, then I change my mind and the tea smell acquired over the years will change and I will like it.

Divnay, Irina, last year I tried (and I'm not alone) to make leaves together with the stems. Nonsense turns out - it is not possible to evenly wither the raw materials. The leaves have already wilted, but the stems are not (very juicy and tasty, by the way, sweet). An incorrectly dried mass went to fermentation. I did not like the result - not beautiful and not tasty. Excessive moisture in the stalks did not allow the fermentation to pass qualitatively. We need to remove 60% of the moisture during the drying process. And if you dry the stems and leaves together, then this is almost impossible to do. So, although it took a lot of time to pluck the leaves, I did it.
About languishing in a cast iron ... But no one canceled the withering. And then I tried to do it, I didn't like the result either ...
