Sesame paste (tahini holmite) in soy milk maker (Midea Mi-5)

Ingredients

white sesame 600-700 g
sesame or grape oil 300-400 ml

Cooking method

  • 1. Place the sesame seeds in the flask of the soy machine, filling it about 2/3 full.
  • It turns out differently every time. Last time I hung the rest in the bag, it turned out to be about 650 g.

  • 2. Pour in about 1 cup of oil. The result will be something resembling wet sand (in the photo I poked the sesame seeds with "cow" knives so that it could be seen).

  • 3. Cook with grind without heat.
  • Allow the machine motor to cool down for approx. 5-7 minutes. Remove unmilled sesame seeds from the walls with a silicone scraper.
  • Pour in more oil (focus on the consistency). Repeat the dry grind cycle.
  • Result. The paste is soft, not very liquid, homogeneous.

The dish is designed for

about 1000-1100 ml

Time for preparing:

25 minutes (10 minutes + 5 minutes break + 10 minutes)

Note

Tahini Holmite is just a natural sesame paste, with no added garlic, spices, herbs, or salt (as opposed to a ready-made tahini sauce). Tahini holmite is suitable for both savory and sweet dishes.

I found the recipe a long time ago on some Israeli forum and since then has done it many times.
It is intended for those who do not have a powerful high-speed blender or melange (which explains such a large amount of oil).

The oil exfoliates during the day and rises above the sesame seeds in a layer of 1-1.5 cm. You can drain it, but I usually do not. Due to the fact that the oil protects the sesame seeds from contact with air, the paste does not go rancid and retains its pleasant taste without bitterness longer.

Oil is best taken odorless (fried sesame oil will not work). Grape seed oil is suitable as a substitute. (I took ITLV, it is odorless).

It is better to take sesame seeds in a vacuum package: this way there is less chance that it will taste bitter. The original recipe suggested lightly roasting the sesame seeds, but I don't.

Keep refrigerated.

Puree. There are no granules, nothing crunches. Someone will not like this (halva should crunch). But you don't have to grind as long as I did.

Hard halva made from pure sesame seeds, I think, cannot be obtained. Dry meal is probably needed ... And in sesame seeds there is oil, it gives a puree-like consistency.
