Because of my work, I didn't have time to do it, and the tea rolled in a meat grinder lay in the pan for at least 36 hours, and the days were also hot. I remembered that some of them could withstand such a period, and therefore I was not particularly worried.
But when I began to dry it, the tea smelled kind of sour ... And now the finished tea has a sour smell and the same taste. The brew is very dark and strong. Strongly fermented tea should be like this, or is it sour? ..

Temperatures over 30 * harm tea - it stops fermentation at an undesirable moment, and then spoils the tea altogether. It is better to observe the temperature regime after all. If it's hot in the house, then just wrap the container with blankets - they will work like a thermos. And don't let the process go by itself - catch the delicious aroma. It begins to appear after 2 to 3 hours, especially in case of heat.
