Ivan tea (fermentation of fireweed leaves) - master class (page 62)

lappl1,
I would definitely like to express my deep gratitude for the science of fermented teas. In fact, the longer they are stored, the more aromatic and tastier they become. I wish you happiness on the eve of the women's holiday with all my heart. We drink - we are not overjoyed.

Do you know that I personally met with Lena Borisenok? And Lenochka shared with me tea from Ivan-tea simply, from Ivan-tea with apple and pear additions, and also interesting teas of our own production! The tea is very tasty, with a light aroma and still soothing (after meeting Lena, I brewed, drank and fell asleep for 3 hours ... in the afternoon !!!) Guys, you are just great !!! Honestly, store-bought tea cannot be compared with Ivan-tea !!!

My aunt was a herbalist, she treated people with herbs. Well, my mother dried grass for the family. We drank tea from the leaves of apple, cherry, raspberry, currant, but the truth was, my mother did not know about farming ... We also drank thyme and many kinds of mint ... It was tasty and healthy !!!

Thank you for a good deed !!!

lappl1,
Lyudmila and all visitors to the topic, good day. I have this question. We decided to prepare Ivanushka again in the summer and the question arose with drying. There are a lot of dryers for all tastes and wallets. And that is impossible to choose. All dryers are designed for a maximum temperature of 70 degrees, but given that the tea must first be dried at a temperature of 100 grams (and if with frying, then all 150), then none of them are suitable. Driving to the city every day to dry is also not an option. So I'm thinking, or is there a dryer with a high temperature and the ability to adjust or take an independent oven with convection? Who has any thoughts on this subject, please share.
You can, of course, fry first on the stove, but when the temperature outside is 30 in the house and you don't want to heat it for 20-30 minutes
francevna
Divnay, Irina, two years ago, when she discovered the tea theme, she bought a specially portable oven. Not small in size, but lightweight. There is a built-in oven, but in summer it is very hot in our house, the split works constantly.
I take the oven and Isidri (dryer) into the staircase.
Divnay
francevna,
Thank you. And you can ask what kind of oven? And then I still come across some heavy (((.
francevna
Irina, somewhere in tea topics I described the oven, it says Economy, the temperature is from 65 to 240 degrees, there is a grill and a timer.
Divnay
francevna, I looked, again twenty-five, the temperature regime starts from 65 degrees
Albina
And my Ivan-tea didn't like it. It's good that I didn't do much.
Divnay
Albina, And my children did not appreciate either the big or the small, and even though everyone has (pushed) relatives, they drink these chemical tea bags.
francevna
Divnay, and what does not like the temperature from 65 degrees?
paramed1
DivnayIrina, basically all teas are dried at 60-65 degrees. Only plants containing essential oils, such as lemon balm, at a lower temperature. But you can open the oven door and the temperature will drop. I dry in an airfryer, and if I'm making mint, I open the lid and increase the speed. But I make few such teas. And currants are perfectly dried at 65 degrees, the tea turns out to be very tasty.
Divnay
francevna, And I have already seen what is being dried at 65-70. I forgot, I thought at 30
Divnay
Can you please tell me whether convection is mandatory? My husband is going to take just an oven without convection, and I protest.
Elena Kadiewa
Well, I don't have convection in any of the ovens, so I can't tell you.
I went here to my mother, on the way I treated the passengers to our tea, gave practically a master class, gave the address of our topic.
Albina, the taste and color ... you hide it, it will only be tastier!
Divnay
elena kadiewa, Thank you.
Anatolyevna
Divnay, Irin, study the topic about the convection oven. What are the pros, what are the disadvantages.
I have a regular oven.

Albina, the taste and color ... you hide it, it will only taste better!
My husband and I would have drunk it, but my children are still fussy. Therefore, I also cleaned it up. If I'm in the mood, I'll do a little more in the summer. You just have to get used to this tea. I remember when 20 years ago my bread from KP all the guests said "sweet". And we did not notice, we always ate our own at home.
NatalyaP
Lyoshka, Good evening! Thanks again for the tip and link on this topic.
Radushka
Divnay, Irina, I have a regular tabletop oven. No convection. I dry with the door ajar. Drying already in the dryer. Three "portions" in the oven are placed on one drier tray
Divnay
Radushka, Thank you.
Divnay
lappl1, Lyudmila, please share your experience. You made a device for tea, what distance between the grooves did you take? You already have experience of using, can you have any recommendations?
Elena Kadiewa
Irina, Luda cannot answer yet, can one of our tea-makers tell me?
Divnay
It's a pity, but who else has not done such a thing for himself?
I'm thinking 2 cm or more? And the top one seems to be quite 1 cm distance.
Elena Kadiewa
Did someone! It's just that they rarely look into tea-houses now, the season has not yet begun. Now I'll write in the Gazebo.
Divnay
Elena, Write, otherwise they don't answer me there. The team does not take.
Albina
Irina, it's just that it's not the season yet ... And the mistress herself has no topic
francevna
Divnay, Irina, go to page 1. in the Tea Gazebo.
There Lyudmila gave a link to this device for grinding leaves, from that link you will get to the topic of fermented tea on page 677, everything is described there.
On page 679 there is an adaptation made by Lyudmila's husband.
Ira, go straight to the topic of fermented tea and read these pages.
Divnay
francevna, Alla, thank you very much.
Elena Kadiewa
Allochka, thanks!

Divnay, Irina, I made myself such a device for grinding leaves. I don’t have Ivan-tea, it doesn’t grow, maybe a cool adaptation for him. But for other leaves, it's sheer nonsense, a meat grinder is better. I made the distance 1 cm on both the bottom and the top.

And mine didn't take root?
Luna Nord
And, girls, I made a conclusion for myself: there is nothing better than Ivanushka. This year I will not waste time and energy on cherries, apple trees, etc. Only Ivanushka, and the most delicious teas came from May (young) and from seed boxes (Fluffy).

And mine didn't take root?
Well, last summer I didn't have it yet!
Divnay
In general, I tell my husband that I want cancer, but he claims that I will adapt to do it.

Hello everybody. I think such an adaptation has the right to life, but in my eyes the corners are too sharp. You need to do it like on a washboard. So as not to chop the leaves and roll them.))
Elena Kadiewa
Lucilia, but I'm not very "fluffy", and not only me. But the cherry is needed!
turner

cherry-needed!

Sergei, as I understand it, is it heading for a tea season ?!

There is still snow in the taiga. But spring, spring. Our people are already wearing summer tires in all their cars))
Elena Kadiewa
Well, we also have snow, and not only in the taiga, but the mood is springtime, the temperature is above zero during the day.

We also have a stable plus during the day)) The fields are opening. I have already traveled through the fields. But we need better mud tires))

Oh, I’m here again, but because. Now the dryer is next in line. We opted for 2 variants of the Walter 1000 and Isidri 1000.
Despite the fact that they have read a lot of articles, the principle is the same for everyone, the initial drying is 100-150, but then many adhere to the temperature of 60 degrees. Although many people try a different temperature well, we cannot choose
Isidri's reviews are all wonderful, smooth temperature regime and takeoff run of 35-65, Voltera likes the height of the pallets (more than in Isidri), but the temperature regime only 40 and 60 is not regulated in between, so we sit and think which one to take? Is there any point in overpaying for a small difference in temperature? My husband sent to you and told you what the people would say, you have more experience in drying ivanushka.
It is important for him to know there is a fundamental difference between drying 65 and 60? I am personally embarrassed that Walter does not have a smooth choice of temperature: (that is, I want to use the dryer not only for tea, but also for marshmallows, vegetables and fruits.
We will courageously accept all critical remarks addressed to us, with pleasure we will take note of your experience in drying Vanyusha. For the first year we used to dry it ourselves in the oven and on the stove in pallets (it's hard to fry, you can't adjust the temperature with wood).
Elena Kadiewa
Divnay, the difference in 60-65 I think is not critical, in my airfryer it starts from 65. But I fry Ivanushka at the beginning at 150-180, and will the dryer give it?
There is a topic here about dryers, read it.
Isidri girls praise, but it's up to you.
Divnay
Yes, Izidri is very much praised by everyone, but mostly reviews for vegetables and fruits, for tea, I did not see.
And at the expense of primary frying, of course, an oven is needed, there are no high temperatures in dryers.

Elena, and at this temperature does not burn?
I've read that everyone agrees that the aroma suffers from high drying, I fry it at 120, 180 was afraid.
Elena Kadiewa
Irina, on page 1 there is a link to drying in an airfryer, Veronica and I dry only in it.
Divnay
And we don't have an airfryer.
Tricia
Irina, Divnay, personally, I don't use a dryer for drying tea at all - I don't like dried tea like that - it gives off with grass ...
for that tea taste that our family likes (thick, dark, like an ordinary black long leaf or large leaf), I, too, like Elena, first always fry ivan tea at 150 gr. It is also necessary to instantly stop fermentation and "clog" the desired pleasant aroma in the tea.
If you dry tea at 40-60 grams in a dryer, firstly, you will have "green" tea from willow tea, and secondly, you will need to select the mode and time of fermentation so that your tea does not sour completely in the dryer , because there will be insufficient temperature to stop fermentation.
In no case will I dissuade you from buying a dryer - this is a very necessary thing and I myself love my dryer tenderly and dry everything from berries, vegetables, fruits, to meat, balyks, fish in it.
It's just that Ivan-tea at the drying stage loves attention and care (these are my personal feelings :)). It turns out that this is almost the most important stage in the preparation, since you can find the correct leaf, assemble it correctly, wither it correctly, grind it / grind it correctly and then ... just dry it in a dryer at a low temperature and you will get not quite tea ... I repeat once again that this is just my opinion.
There is another option: subject the tea to shock drying, sealing the smell at 180-150 grams in the oven, and then put it in the dryer for drying. But even in this case, the tea needs to be checked, stirred, sherud and touched at least once every 15-30 minutes - it does not tolerate connivance. A little less respect, and everything - smells like silage. But this is my personal relationship with Koporsky. Maybe you have your own algorithm and I shouldn't have climbed!
But if you love green tea out of all the possible variants of Koporsk tea, then the dryer can help.

Let me disagree with the fact that 180 gr frying removes flavor!
Quite the opposite! Frying quickly seals the aroma that was fermented at the time of drying. And you get a tea with the aroma of prunes or fruit compote. But here each tea-maker has his own taste and experience. I would advise you to run your own experiments and decide which one you like best.
For the second year we have been drinking "prune" Koporsky tea of thick dark color, aromatic and fragrant, which makes us happy.
