Pumpkin bread with whole grain flour

Ingredients

Whole grain flour 60 g
Wheat flour 260 g
Butternut pumpkin puree 50 ml
The water is warm (~ 30 degrees) 160 ml
Dry yeast 1 tsp
Sugar 1 tsp
Salt 1 tsp
Vegetable oil 30 g
Milk for lubrication 1 tbsp. l.
Pumpkin seeds 2 tbsp. l.

Cooking method

  • Pumpkin puree (I had a small butternut pumpkin, which gives the brightest and most beautiful color) diluted in a glass of warm water, the liquid should reach the 210 ml mark. Mix all dry ingredients with flour, pour pumpkin water into it, add vegetable oil (I had olive oil), a tablespoon of pumpkin seeds and knead the dough. I kneaded first with a fork, then with my hand, for about 3 minutes, until the bun formed into a smooth ball that did not stick to the hands and walls of the bowl. Cover the bowl with the dough with foil, a lid or a towel, and leave in a warm place to come up for 25-30 minutes (I put it in the bathroom, it's warm there, about 25 degrees). Knead the risen dough by folding it with an envelope (stretching the dough in opposite directions with your hands and folding these ends to the middle, repeating this from different sides 3-4 times). And leave the dough to rise for another 20 minutes. Throw the dough that came up the second time on a surface dusted with flour (I took a handful of whole grain). Form a bar, transfer to non-stick paper with the seam down. Cover with non-contact foil and leave in a warm place for 30-40 minutes.
  • During this time, preheat the oven to 200 degrees.
  • Grease the bar with milk, sprinkle with the remaining seeds, squeeze them a little to keep it better.
  • Make steam in the oven - or set it up if it is done automatically for you, or put a bowl of boiling water on the lowest level in advance.
  • Throw the loaf on a baking sheet or on a stone (I baked on a stone). For the first 15 minutes, bake with steam at 200 degrees, then remove the bowl, reduce the heat to 180 degrees, and bake for about 15 minutes (look in your oven and check, as usual, by tapping on the crust).

Note

The result is bright, tasty bread, easy to prepare. It keeps well for several days, does not get stale.
Of course, the color depends on the pumpkin, but now there is a butternut in almost all stores, so you can buy and please yourself and your family with the sunny color and good taste of bread.
