masjavka , with cereals, of course, they obviously bent in their recipes. I brew like this:
semolina 6h l - with butterfly \ 20 \ 90С \ sk.2
corn 5h l - 30 \ 90S \ sk.2
rice 6h. l. (pre-grinding) - 25 \ 90С \ sk.3

Omela, thanks. And what is the ratio of liquid and cereal?
Omela
I added the amount of cereals to my post. But I don’t remember the water, or 250ml, or 500ml. I haven't cooked it for a long time.

... And then I was looking for how to cook buckwheat porridge, I found one, it needs to be cooked there for 12 minutes, and I cooked a total of more than 40 minutes ..
I cook buckwheat (as a side dish, not milk porridge) for 30 minutes, then it turns out to be boiled and juicy.
I put cereals (optimally no more than 200 grams) into a steam basket, salt, pour boiling water about a centimeter and turn it on for half an hour.
I cook semolina according to the book without deviating from the recipe.

I downloaded both books (classic and base). Thank you very much! I have them, but they get dirty in the kitchen. And so convenient: printed out the recipe and threw it away.

Are there any more recipe books for the Thermomix?

Good day!

Who is interested in porridge in the thermomix. By trial and error, I offer my options for cooking porridge:

Semolina

Ingredients:
o 0.25 l milk + 0.25 l water
o sugar to taste, salt (I put 1 tablespoon of sugar without a slide, even a little less, and 0.5 tsp of salt)
o 3 tbsp. l. with a top (with a slide) semolina (if you like it thinner, as for small children, then 3 tbsp. l. WITHOUT a slide)
o butter to taste
Preparation:
o Heat the milk: 5.5 min / 90 ° C / sk. one.
o Install the Butterfly. Add 1 tbsp. l. sugar without top, 0.5 tsp. salt, oil, start TM (the mode is indicated below), pour semolina after starting with a butterfly. Cook for 9 min / 90 ° C / sk. 2.

Oatmeal

Flakes and water in a ratio of 1 to 6: 80 grams of oatmeal - 480 grams of water - thick porridge.
If thinner is 1 in 7, then: 73 grams of oatmeal - 500 grams of water.
Put the butterfly. Pour water into a bowl, put cereals, salt 0.5 tsp, sugar 1 tbsp. l. without a slide, oil. Cook WITHOUT a measuring cup! If we cook 1 to 6 (that is, thick porridge), then 25 minutes / 90 g / sk 1, and 30 minutes if 1 to 7.

Rice porrige

Ingredients:
o 150 g round grain rice
o 800 ml of liquid (400 ml of milk and 400 ml of boiling water), proportions can be taken at your discretion)
o 1/2 tsp salt
o sugar as desired and to taste. (I put 1 tablespoon)
Preparation:
o Rinse the rice.
o Place the rice directly into the thermomix bowl.
o Pour in 800 ml of liquid. Add salt and sugar.
o Boil 30 min / 90 ° C / CK2 with MCH.
o After boiling, add butter.

Bon Appetit!

Thank you from the bottom of my heart to Bluekitten for the wonderful books and your work !!! Thank you!

From the book "I cook it my own way" I made a cheese soufflé from page 64. It turned out tasty and satisfying. A very high-calorie dish!
But there are remarks: at the very end, when you need to add grated cheese and cream to the mixture, it is recommended in the book to beat for 10 seconds per sk. 6. This is not enough !!! As a result, all the cheese settled on the bottom - it didn't stir, in the end I had to spoon it out into the molds with a spoon. Stir for at least a minute! (maybe it depends on the cheese, I had an ordinary "Russian" cheese). Unfortunately, there is no photo - they ate everything quickly))

good evening. Many thanks to everyone for the recipes and advice, with your help I already know something. I cook corn porridge so-1 mch of cereal for 2 mch of water and 2 mch of milk. I pour the liquid into the bowl, warm it up for 4-5 min / 100 / ck1, put the butterfly on and fall asleep in the cereal, set it for 30 min / 90g / ck1, if I put the coarse cereal for 40-45 minutes, the hole in the lid is closed. after the signal, spreading it out into plates, I add oil.

FISH UNDER THE MARINAD

The original recipe is taken from here: 🔗

My variant tested:

o for 500 grams of fish fillet (I took pink salmon, you can take your favorite fish)
o 2 medium onions
o 2 medium carrots
o 1 bay leaf
o 4 black peppercorns
o 2 carnation buds
o 1 tbsp. l. tomato paste
o 1 tsp. sugar (in the original recipe 1 tbsp. l.).
o a drop of 9% vinegar (in the original recipe 50 grams of apple cider vinegar (or wine vinegar))
o 50 g of refined vegetable oil
o 100 grams of cold water.
o Salt - 1 tsp. with a small slide.

Cooking fish:
Pour the fish with lemon juice (if any), put it in the sleeve, add a sprig of dill and parsley there, pinch the edges of the sleeve (the main thing is that the juice does not leak out) and put it in a double boiler for 25 minutes.

Cooking the marinade:

Chop the peeled onions and carrots for 3 sec / speed 5.
Add 50 g of vegetable oil and fry for 8 minutes / 100 degrees / speed "Spoon" WITHOUT MCH.
Add tomato paste, 100 g of cold water to the Bowl and cook for 10 minutes / 100 degrees / reverse / speed "Spoon" with the MCH.
When stewing, add bay leaves, pepper, cloves, salt and sugar.
In 1 min. until ready, add vinegar to the Bowl.
Pour the cooked fish with marinade, pour the juice from the fish (which remained in the sleeve) there.

Rice for garnish:

For 300 grams of parboiled rice - 700 ml of water. Boil the water for 7 min / 100 g / sq. 1 (or pour boiling water into the TM). Salt. Rinse the rice, put in the steam basket. Boil for 15 minutes / Varoma / sk. 4.

If there is no separate steamer, you can combine steaming fish (step 1) and boiling rice in TM, but I have not tried.

It turns out well, a very tasty dish !!! Try it!
We eat fish marinated hot, it tastes better for us) It took half a kilogram of fish for "one-two-three", so the second time I already cooked from a kilogram of fish))
In the marinade, I also cooked peas with ordinary black pepper and took a "mixture of peppers" (from the series "Let's eat at home" from Yulia Vysotskaya), there are 4 types of peppercorns (I selected all types of pepper in equal parts and added to the marinade). Both with black pepper and with the mixture it turns out very tasty, but with the mixture it seemed more interesting to me.

Recipe for liqueur "Baileys" ("Baileys")

Ingredients:

- 0.5 liters of vodka;
- 1/4 spoon of ginger;
- on the tip of a knife - cinnamon;
- 1 teaspoon of oak bark and cocoa;
- 2 teaspoons of honey and instant coffee;
- 2 yolks and 0.5 cups of sugar;
- 0.7 liters of heavy cream (not less than 10 - 15 percent);
- 0.3 liters of chocolate milk, long-term storage (for example, "Miracle");
- 350-400 grams of condensed milk;
- 2-3 packets of vanillin (not vanilla sugar).

Now let's start cooking.

Pour honey, ginger, oak bark and cinnamon with vodka and put in the refrigerator for 6-7 days, but shake it periodically.
After 6-7 days, filter through cheesecloth folded in 3-4 layers.
Then beat everything on a sc. 4-5. Time is at your discretion. You can also beat with a blender.
Grind the yolks with sugar; add condensed milk; cocoa and coffee, dissolved in 1 tablespoon of hot water; then add cream, miracle milk, vanillin. Mix everything thoroughly, add the vodka tincture (the one that was infused in the refrigerator), and beat thoroughly again. After all the procedures, we bottle it and hide it in the refrigerator. Serve after 3 hours. Such a liqueur is stored only in the refrigerator for up to six months.

I made with 250 ml of vodka (that is, I took half the ingredients), it turned out a liter of liquor or even more (very economically). And the main thing is delicious !!! Sweet liquor, very pleasant. Alcohol adds spice. Perfect for women's gatherings))

What recipe are you cooking? At a cooking temperature of 90 degrees, how can glue turn out
Bekki
once according to the book, the second according to the recipe from the forum.
Vei
Did you turn on the reverse?
Bekki
Yes! that's why I can't understand why this porridge turns out. really not tasty!
Vei
: girl_cleanglasses: write the sequence of your actions, and whether you crushed the cereal before cooking.

By the way, Bekki, what is your recipe book? In my basic book, recipes are like from another planet - nothing ever worked, I had to do everything by typing. But recently I got a book published in Yekaterinburg - it's just a miracle. With pictures, everything is clear, understandable and the result in reality is very pleasing)))
Bekki
The first time I didn't crush, the second I did. My book is basic in German, because I live in Germany. I just thought, maybe pour more water than in the recipe?
Vei
You definitely don't need to crush. If we take round rice of the "Kuban" type, then try the following option:

Rice milk porridge

- step 1:
Place the steam basket on the lid, press the "scale" button, weigh 80g rice for porridge, rinse in a basket under running cold water. Open the lid, pour the rice into the Bowl.

- step 2:
Press the scale button. Pour 500 ml milk or milk and water in equal proportions. Add salt and sugar to taste, close the lid, install the MCH. Set on display 30 min. / 90 * S / Sk.2, reverse

- step 3:
Open the cover after the ready signal. The porridge is ready.

Good luck

I have tried many different recipes and only one gives excellent results:

1.5 ms of rice
0.5 liters of milk
3 MS boiling water
salt sugar to taste

Turn on the reverse 90 degrees and 30 minutes.

The porridge turns out to be excellent !!! This even in a slow cooker does not work for me on languor.

I liked both cake and cream awesome. There's a step by step recipe:
https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=167668.0

I poured cream into TM, 90gr / Ck 2-3 / 15-20 min. At this time, whipped the yolks and sugar with a whisk in a separate bowl. After the temperature reached 90 degrees, carefully through the hole in the lid of the bowl, I poured the yolk mixture in a stream into the bowl, where the cream was spinning, I did not turn it off. Heat and stir them until they thicken to the consistency of thick sour cream (it took me about 15-20 minutes), as shown in Nata's photo.

Everyone really liked the cake and cream, but I got the leftovers and lick the bowl

I give one more recipe for making butter

-500 g of rustic sour cream or cream (35%)

- install the butterfly. Pour in well chilled, salted sour cream and beat for 3 minutes. / Sk 3-4
- drain the buttermilk, wash the butter 2-3 times with clean cold water. Next turn on 20 sec / sc 3-4 to remove residual water from the oil, (can be repeated several times).

Add butter, refrigerate.

Periodically I drop in and change the speed from 2 to 4-5 so that the top layer is not ventilated, but stirred.

After it cools down, I add candied fruits (I don’t like raisins and nuts), mainly cherries, chopped dried apricots and homemade candied orange fruits.

And then in the form and under the oppression in the cold. As a rule, after a couple of hours I add to the mold something that did not fit right away.
