Jam from jemalina

Ingredients

Fresh ezemalina berries 1 kg. mashed potatoes
White sugar 500-600 grams to taste

Cooking method

  • First, let's get acquainted with a berry called "ezhemalina". I met her for the first time this year.
  • It is a hybrid of blackberries and raspberries. The plant has taken the best qualities from its "parents". Jemalina berries are very tasty and healthy. They contain a lot of vitamins B, C, carotene, pectin, organic acids
  • The taste is both blackberry and raspberry. The color is very dark, blackberry.
  • Jam from jemalina
  • It seemed to me that there are much more bones in this berry than separately in raspberries and blackberries, well, just a double portion))) And the bones are so small, they completely hammered me into a fine grate for rubbing berries at Kenwood. I had to stop the process of rubbing the berries several times and clean the grate))
  • I do not recommend making jam from this berry, the bones will “hammer” the whole taste, and it is very unpleasant to grind the bones in your mouth. The most optimal solution is to make jam from jemalina.
  • The berries have enough juice, so I did not add water to the syrup, only about 100 ml. To make the sugar dissolve faster.
  • I immediately covered the berries with sugar and started making jam.
  • When the sugar dissolves in the berry syrup, I transfer the berries to a rubbing sieve and separate the berry puree from the bones.
  • Then I pour pure mashed potatoes into a saucepan and boil it until jam thick, it cooks very quickly, since the berry contains gelling properties inherited from raspberries.
  • I pour hot jam into jars, close them with lids, and put on the lids until they cool completely. The jars are now well protected and the jam can be stored in the pantry or closet.
  • Jam from jemalina
  • Jam from jemalina

Note

The taste of the jam is reminiscent of both raspberries and blackberries, the smell is also.
The color of the jam is inky!
Good blanks to you!

As far as I know, and I saw on the internet, ezhemalina has various varieties.
And then, this berry tastes different from pure raspberries, it tastes like a mix of raspberries and blackberries
And the jam has the same taste - two berries.

Quite right, there are several varieties of ezemalin and they all differ from the usual black raspberry (I have three bushes in my country house, unpretentious, resistant to severe frosts, and gives a good harvest, which cannot be said about ezemalin (a very capricious plant).

Of course, this berry does not have the usual taste of raspberries, rather the taste of sweets, but ezhemalina has a distinct taste of blackberries.
Tatyana, I am not persuading you, but ("Let friends and truth be dear to me, but my duty commands me to give preference to truth." Aristotle)

Sergei, you want to force my nose and tongue to change their minds, which clearly feel both tastes in the berry, especially in the finished jam

Fresh berries also differ in appearance and texture from regular raspberries.
I bought ezemalin and the person who grows it

Let's talk about the taste of jam, not about "whose truth is more to the right"
