Girls, I have a book "Classics in modern processing", released for the 10th anniversary of the "Center TM" in Russia.
Scanning and uploading everything is laborious, I upload the content, and if you are interested in any specific recipes, you write what exactly, and I will gradually scan and upload.

Aaaaaa, I thought I'd choose a few recipes, my list is already 2 pages long !!! I understand this book is not being sold yet? And in general, where and how much you can buy them, do not know?
prascovia
I know that it is almost impossible to buy these books in retail, only from distributors! And there the prices I was offered to buy a book about baking for 40 euros

And in general, where and how much you can buy them, do not know?
Here are the two main books (red and green) - they seem to cost a thousand each.
International costs 1,500 rubles.
And I don’t know "Classic" (orange), I got it for holding a presentation at my home. Judging by the format, it should cost the same as red and green. But I don’t know whether it is already on free sale.
The books were published by OOO "Center TM", contacts can be found on the Internet.

Girls, and this is in the photo, such a beautiful Olivier, did you cut the Thermomix yourself?

TM with one knife and can chop cabbage and cut into cubes?
And what is his covering in the bowl?
I must say right away that I have never seen TM. And, I have much more questions than I asked.
sve
Qween, Thermomix cannot cut so smoothly and beautifully. There are very sharp knives in the bowl that cut as they please. If you miss the time, you can get mashed vegetables instead of salad. Cabbage is the same, cubes will not work, chops, but as necessary. )) On the whole, Thermomix is a cool thing. For me it has become indispensable for the preparation of a number of dishes.
Qween
sve, thanks, about cutting it is clear.
And in what dishes is TM indispensable for you?

sve
Milk porridge, boiled rice, liver pate (mainly chicken), meat dishes (fricasse, for example), boiled pork. I love pilaf from a cauldron))). All kinds of puree soups. Baileys. Somewhere there is a recipe here laid out by me. I consider it the most successful. Jam. Mayonnaise, ketchup, all sorts of sauces, for example, for pasta. Dough for dumplings, samsa, muffins, sometimes (rarely) yeast. Fruit drinks. All that beat, chop. I haven't tried ice cream yet.
Honestly, I cook a lot.
Qween
Clear . I periodically read this topic. Sometimes thoughts about the thermomix will flood. I even thought, today, to order a presentation when I saw Olivier. But now I have cooled down, while I read more ...
sve
I cut Olivier by Nyser, although I am Cubix. I don't like the fact that Kubiks Boshevsky has big cubes for Olivier))) I cut apples on it only for a pie - they turn out beautiful.
Think, of course. I do not regret. I got it as a gift. More expensive now, I know. There are many controversies. They say you can do it. I like.
Qween
Now I looked that it was being sold for 11,000 hryvnia (dollar rate of 7.93) - is this a normal price? And how much did TM rise in price?
sve
2 years ago it cost 37 thousand rubles. together with a set of books and a special bag for carrying. It's not required, but I do use it sometimes. And the book comes with one main one. They bought me 3 more. Books for it, by the way, are not cheap. But I'll tell you, the most tested is the main one that comes with the kit. She is very good. The rest, as needed (or greed, as I have shob bulo) can be purchased.
sve
The hryvnia exchange rate is about 4 to the ruble, that is, it turns out somewhere around 44 thousand?
Qween
Now there is an action and all the books are free.
And in the courses I, frankly, "swim".
sve
In June, we rested in Odessa, the course was for 1000 rubles = 245 hryvnias. Approximately 1: 4. That is, 11,000 hryvnia * 1000/245 = 44898 rubles. That is, in 2 years, the price has risen by about 8 thousand rubles or by 2 thousand hryvnias. ))) Not confused?
Qween
Seems to be correct. Yeah, TM has risen in price noticeably, but they say the crisis ...
bluekitten
Qween, yes, the Olivier in the photo is something they messed up! There, of course, it is not cut into TM.
How TM cuts can be seen in this thread in the recipe for vinaigrette, I took a bigger picture on purpose. In principle, it suits me. And when everything is chopped up, and not chopped, then the taste is different. Vinaigrette and herring under a fur coat are tastier

In Russia, the price for TM is now 46 thousand, taking into account the discount (some action is underway). Full, if I'm not mistaken, 52 rubles. After the crisis, they kept the price for some time, but this year they raised it.

And for me he is indispensable to cook jelly! I had never cooked jelly before him.

I tried "fried meat". I did everything strictly according to the recipe. The meat is still gutted by about a quarter and the bolo is shrouded in fibers. Dry. They didn't eat mine. I had to prepare the sauce and then pour everything in and stew.

Was the meat as recommended in the recipe?
Because in our center, women cooked, they did it.
Apparently, it also depends on meat.

Thank you! The recipe is just right for me. I read here about the noodle cutter, bought it and now we are having fun with the whole family: I make the dough in Thermomix, and mine are rolled out and cut. But about the Bechamel sauce, I can say, having tried them already according to different recipes, what is best done with Butterfly and 6 minutes / 80 g / Sc.2 (this is for 500 g of milk), I add the cheese to the ready-made sauce. Then it remains only to simply rinse the Cup with water

Did it. I know the buttermilk separates when whipping. Here I did not notice her, there were a couple of drops and that's it. The whipped cream was even and lump free. After all, I washed them as per the recipe and put them in the refrigerator.
In general, I understood that it turned out to be whipped chilled cream. What to do with them now? Eat like cream ... but wanted butter

Who made homemade butter - please respond !!! How much buttermilk should be made from 500 grams of cream?

Here I am about the same, it turned out whipped cream, not butter. How do you make butter?

I made butter from homemade sour cream. From 500g. it turns out about 200-250g. (definitely did not weigh). I also beat the cream once, separated the buttermilk, put it in the refrigerator, and it turned out to be a very delicate butter !!!

Lentil soup (from green lentils, from the red book, p. 42)
250 g lentils ................ ........... Soak lentils in 0.75 liters of water overnight.
200 g brisket ................ ............ Put the brisket in a bowl and grind 3 - 5 sec / ck. 8.
1/2 leek stalk, sliced
100 g carrots, pieces ........... Doba whip leeks and carrots, chop 5 sec / ck. 5.
200 g potatoes, in pieces
400 g water .................... ............... Lentils with water in which they were soaked (carefully drain the water into a bowl, and rinse the lentils again in the Steam basket), add potatoes, water to the bowl and cook for 20 minutes / 100 * C / reverse / sk. one.
30 g vinegar
2 small sausages, circles .............. ...... Add vinegar and sausages and cook until tender 4 min / 100 * C / reverse / sk. one.
OPTIONS:
- Can be sprinkled with fried onions.
- You can use red or yellow lentils, which do not need to be soaked, then add 750 g of water, as there is no water from soaking.
The brisket took half of the recipe (slightly fried), instead of sausages - sausages, did not add salt. Very satisfying and inexpensive winter recipe.

Girls who cooked condensed milk in TM? help - I get a liquid one.
elen61
Hello, lovers of Thermomix. It's nice to read your correspondence and advice. I can answer many of your questions. ...
Beat the butter not for 3 minutes, but until the buttermilk appears. Sometimes it is 5 minutes. Depends on the amount of cream and fat content.Little buttermilk comes from homemade cream. Sour cream for sour milk butter should be used only with rustic, powder from the store is not whipped. Do not pour the buttermilk, use it for bread or drink it - very healthy. Cream not less than 35% fat.

Mayonnaise does not work if the products were at different temperatures, low-quality oil and if you are in a hurry, mix all the ingredients first and then slowly pour the oil onto the lid, as soon as an emulsion starts to form, pour it faster. The French make mayonnaise only from the yolk, and I take the whole egg, it turns out more tender. And yet, do not pour out the failed mayonnaise, put it out of the bowl, put the yolk in the bowl, set the butterfly and mix a little, pour in your "failure" in a thin stream. Everything should work out.
I have been doing TM for 10 years.
It is best to put meatballs for soup in the Varoma console and cook simultaneously with the soup for about 18 minutes, Varoma, spoon, reverse. The result is tender and tasty.

sve

I have never cooked condensed milk myself. But I have a Belarusian book for TM 21 and there was a recipe there, as soon as I find it, I'll post it. There are a lot of recipes and tips for Thermomix on "odnokldassniki". There are about 5-6 groups that communicate only on the Thermomix topic. It seems to me that there is condensed milk. One of our family's favorite soups:

Shrimp and green pea soup

100 g onions (pieces)
30 g parsnip root ..... chop b 5 sec / Sk 5
30 g butter ..... add 7 mins / Varoma / Sc. 1

300 g potatoes (small cube)
1 liter of water (boiling water) ........................ .............. cook 8 min / 100g / Reverse / Sk1
200 g green peas (frozen) ..... 5 min / 100 g / Reverse / Sk. 1
200 g shrimp (frozen, boiled) ........................ ........ warm up 3 min / 90 g / Reverse / Speed 1
salt, pepper, fish spices, bay leaf
dill, green onion rings (to taste)

I still never cease to wonder how delicious the first courses at Thermomix are, and this is what I recently came across on the Internet:

"The Germans call Thermomix - the King of soups

The usefulness of making soup in TM
1) by frying (sautéing onions + carrots + vegetable oil), we do not overheat the products, thereby preserving the maximum of useful substances. essential oils from onions, carotene from carrots (vit. A) combine, absorb uncooked oil, which serves for good assimilation by the body of vit A. Roasting turns out to be beautiful, transparent in color.
2) there is no violent boiling, the broth does not become cloudy, the taste is rich, because you DO NOT need to come up often to open the lid and stir the soup, releasing aromas with useful substances when you open it and crawling into the bowl with another object (spoon).
3) the products do not oxidize, because we DO NOT transfer them from one dish to another (in the usual preparation, we cut the products in one place, grate in another, fry in the third, then combine, so the products lose their value, often in contact with oxygen and cool)

Advantages of making TM soup
1) the soup is constantly stirring with the bowl closed.
2) no need to remove the foam.
3) a rich broth requires much less meat.
4) much less oil is required for sautéing.
5) all stages of cooking take place in one bowl.
6) cooking does not require the constant presence of a person, there is free time.
7) the whole process of cooking the soup takes much less time than making the soup in the usual way.
cleanliness of the workplace and savings on water and detergent, since we do not use unnecessary dishes. "
