You are welcome!

I did yesterday buckwheat pancakes from this book.
I put everything according to the recipe:
100 gr buckwheat flour
100 g wheat flour
600 gr milk
3 eggs
1 tbsp. l. vegetable oil
1/2 tsp salt
sugar (how much is not written).
Stir everything for 20 seconds at fifth speed, allow at least 30 minutes to distance.

Sugar put 2 tbsp. l., but it turned out to be a lot, I added a little salt to balance.
The consistency of the dough is good. At first it is watery, then do not rush to add flour, it will thicken when it stands. In the end, I even had to thin it a little.
The pancakes are very brittle and cannot be turned over.
They strongly absorb oil, after almost every pancake they had to grease the pan.
Then I remembered that you can add starch, they began to tear less and the color became more pleasant. I don't remember how much starch is needed, you need to look in the recipe (I put 1 tsp. With a slide for half a portion of dough, but you can do more, I think, at least 1 tbsp. L. With a slide for a full portion).
It tastes like this, nothing special, not bad, but not great either. My husband ate with sour cream, I with raspberries. Can sometimes be cooked for a change.

Sfotala, then post pictures.

Today I made Ketchup and it’s good that I didn’t go far and prevented an attempt to escape from the Bowl, I had to lower the temperature to 100 degrees until it thickened a little. And the ketchup turned out wonderful, the flavors were Next in turn Moroccan soup "Harira"

Girls, hello! Recently I just bought Thermomix, I am very happy about it !!! But I live in Germany and, accordingly, all the books with German cuisine, but I still like Russian more! A big request, who has Russian books, please scan which ones you have, except for these two, which are already posted on the site (Classics and Cooking in my own way), I will be very grateful !!!! Especially interesting is the "Basic Book" and with Desserts-Drinks! Thank you in advance!!!

I did myself today cranberry jam... I add to my tea instead of sugar. In such weather, it is an excellent prevention for my throat, and it helps me a lot from edema (which is especially important at 7 months of pregnancy)

So, I had a bag of frozen cranberries. Until now, I always cooked jam in a bread maker. And then I thought, I have a miracle machine, and after buying a multicooker I use it in exceptional cases. I decided to improve.

300 grams of frozen cranberries
300 grams of sugar

100 * / 4 - 1 speed / 10 minutes

I put the berry with sugar in the bowl and set the speed to 4 at once so that it was grated. As soon as it was crushed for literally 6 seconds, I switched to 1 speed until it was completely cooked. If you want the berries to be whole, you must leave them at 1 speed.

Here's what happened in the end:

Thermomix - I cook my way!
Thermomix - I cook my way!
pulkeria
I decided to cook oatmeal and compare the result with a slow cooker.

Thermomix - I cook my way!

So,
80 grams of oatmeal
200 grams of milk
200 grams of boiling water

90 * / 10 minutes / 2 speed / reverse

I measured everything with my weights, as long ago the suspicion crept in that TM was lying in weight. The oatmeal hasn't boiled enough and is very thick. Therefore, for such an amount of cereal, it is necessary to increase the liquid and the time at least up to 15 minutes.
OlennaTM
pulkeria, and I have been cooking this porridge from a video recipe for a long time (see. 🔗 ):
Whole grain oatmeal

Ingredients

* 100g oatmeal (whole grain)
* 600g water
* salt, sugar, butter to taste

Preparation

* For quick cooking, grind the oatmeal either to grains 30 sec / sq. 8, or up to oatmeal 30 sec / sq. Turbo.
* Pour boiling water, you can half with milk.
* Cook: coarse grind - 20 min / 100 ° C / sc. 2; fine grinding - 15 min / 100 ° C / sc. 2.
* Salt, add butter to taste.

I boiled it in water, then added cream, and in water with milk, poured it with boiling water and cold water (even better, the bowl was washed later!) - everything turned out deliciously. Pour raspberries with sugar on a plate (chop freshly frozen raspberries, add sugar and heat at 50 degrees). Try it, suddenly you like it

The fact of the matter is that I met a lot of recipes from whole grains, but not from cereals. So I decided to try it. As soon as the oatmeal catches my eye, I'll try it. Thank you

Girls, very grateful to everyone for the links and recipes! I bought a thermomix a week ago, there is only a basic book and baby food (in my opinion, both are practically useless). Yesterday I was depressed that nothing worked and there are no normal recipes (((. Now, thanks to this forum, life is getting better, I hope you will help to master this device.
I have a huge request - tell me the recipe for yeast dough for pies or buns, but I only have dry yeast. My husband demands, and I was afraid even without TM yeast, but here (in the book) recipes only with live yeast ... help me out!

In fact, there is nothing complicated7 For the dough in the thermomix, it is enough to remember - the liquid must be warm and after kneading it must be heated for 5 minutes with vegetable oil. And then use absolutely any recipe. With yeast, everything is also very simple - for every 500 grams of flour, 1 bag of yeast. And the basic dough recipes also include 1 sachet or 11 grams of dry yeast. For a fried pie, just a wonderful dough
500 grams of flour
400 ml warm water
30 butter
1 bag of dry yeast
1 teaspoon salt
1 teaspoon sugar

3 minutes / spikelet

add 20 grams of vegetable oil and 5 minutes 37 * / 1 sc.

And as soon as the program ends, leave the dough in a closed bowl before it rises to the lid.
Vei
Thank you very much for the quick response! Tomorrow I will try and give a report :))
Omela

I knead each dough for a different amount of time, but in any case, it's not less than 7 minutes.

Quote: pulkeria

after kneading, be sure to warm for 5 minutes with vegetable oil.
I do not agree!!! I never warmed it up with butter !!! During the time while the dough "beats off", it warms up by itself. Moreover, not all recipes require oil. And 20g. is enough to change the consistency of the dough.

Quote: pulkeria

And as soon as the program ends, leave the dough in a closed bowl before it rises to the lid.
Could be so. But it is better to get the dough, form a ball, and put it in a larger container for proofing.

Vei , Good luck!
Omela
Vei , I knead 90% of the dough in Thermomix, and in the summer everything is 100%, since there is no HP at the dacha. You can look at my profile for different baking options. Try a simple bread first, like this one: https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=128925.0.
Vei
Oh Omelochka, I am so impressed by what I saw in your profile! I was especially inspired by the Morning pies, I will definitely try this week. I am puzzled by only one thing - my husband really asked for pies with apples, he even bought them himself (which is not typical for him). Can you advise a variant of apple filling? I have a sort of Semirenko, I thought to stew them with sugar, but what if you have something more interesting, or just some recommendation? Yesterday, for the first time in my life, I started a yeast dough, naturally in TM, I do not have HB and does not shine yet (((, but the result was wonderful! Thanks again and respect!
Omela
Vei , Thank you! "Morning" really deserves attention !!! They can be made with apples. we have fillings here: https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=1053.0
And about the recommendation - it's all very subjective ... I typed in a search engine - a pie with apples, and got here, choose:

Hello everyone! I am spreading the bread recipe from the book "I cook it my own way". I baked it twice - once with dry yeast, another time with live yeast, I didn't notice the difference. The bread is delicious, so be careful, girls, you may suddenly find that things have "sat down".
So,
Italian flat bread with onions.
Ingredients

Dough
600g flour
380g water
20g olive oil + 2 tbsp. l.
25g fresh yeast
1 pinch sugar
0.5 tsp salt

Filling
400g onions (don't be alarmed, put it safely)
40g olive oil
40g water
2 tsp salt

Preparation

Dough
1. Put flour, 320g water, 20g ol. butter, yeast and sugar in a bowl - 2 min. / spikelet.
2. Add salt and 60g water -2 min. / Spikelet. Pour 2 tbsp. l. butter on a baking sheet, put the dough on it, form a circle with greased hands and cover with a thin layer of butter. Cover the dough with a bowl and let it rise for 20-30 minutes (it took me an hour to nurture)
3. Without kneading the dough, spread it over the baking sheet with your fingers oiled with vegetable oil.

Filling
4. Chop the onion for 6 sec. / Sk. 4, spread it evenly on the dough (I liked to cut it with half rings with handles)
5. Pour ol. oil, water and put salt in a bowl - 10 sec. / sk. 10, sprinkle the mixture over the onion.

Bake for 30 minutes. at T 200 * C. Allow to cool before slicing into squares. (Preheat oven beforehand)
Bon Appetit!

bluekitten, thanks for the books.

Tell me, is there a difference in whether to put liquid or flour first in the bowl? I always pour liquid and mix, then pour flour. But if the dough is very tight (on dumplings, for example), then it may not knead normally.
Omela
sve , experts advise flour first, then liquid. I didn’t think about it: I did it this way, and so, everything was mixed normally. How long do you knead? Maybe the weight of the dough is more than it is recommended to lay?
sve
Yes, the weight is heavy. For 1 kg of flour, I usually make dough for dumplings. I'll try flour first, then liquid.
Omela

What do you mean ??? If you don't want to ditch the engine, don't do that ever !!!! The maximum weight for hard dough is 500g. If you need 1kg, it is better to knead in 2 passes.
Manijka
Hello girls! Today is the first day I registered here, but I read this blog all the time! TM I have 5 months :)

I want to share the bread recipe that I always make (prenarovilas already), it is delicious and even healthy.

Whole Wheat Bread

200g wheat
300g millet flour can be napopal with rye
350g water
10 grams of dry yeast
1 tsp salt
1 third teaspoon Sahara
Caraway
25 g sunflower oil
Coriander to taste.
Optionally 50-100g of seeds.

I often add seeds, they give the bread a delicate aroma and airiness)

Grind the wheat into a sk. 10 / 40-50 sec.
Add premium flour, yeast, salt, sugar, cumin, (seeds) warm water and stir on a sk. 5-6 / 40 sec.
Add vegetable oil and knead the dough: 3 min / sq. Spikelet.
Leave the dough in the bowl and let rise for 20 minutes. But I leave it for an hour, then it rises to the lid and bakes faster
Place the dough in a greased baking dish.
Prove the bread in the oven: 15-20 min / 50 ° C, depending on the oven, maybe a little less
Bake bread: 25 minutes again depending on the oven

I like to sprinkle the top with coriander, oatmeal.
Bon Appetit
Omela
Manijka , welcome to the forum! You have wonderful bread !! Is there any photos???

The only thing, if you don't mind, is a couple of clarifications in the text.

10g. dry yeast per 500g. flour is a lot. Maybe you meant 10g. fresh ?? Dry enough 3-3.5 g.

After grinding whole wheat, it is better to leave it to oxygenate for 12-36 hours, and only then use it for baking.

Proofing the dough at 50C is impossible. Maximum 37C. And the time of 15-20 minutes is very little.

Finally, I became the happy owner of the Thermomix !!!!! Are there any more scanned recipe books? Thank you in advance.

Dear Mistletoe! I would like to buy Thermomix and need your advice: do you often use it if you have a Kuku 54 and a Bread Maker as well as a combine? I want to attend the demonstration, since it's not far from me. Thank you.
Omela
Beetle extractor , of course, go to the demo and proceed from your needs and requests. But since you ask me, I will say that

Quote: Beet extractor

with Kuku 54 and Bread Maker
,
as well as 2 multicooker, 2 slow cooker, I carry Thermomix everywhere with me. Right now I brought home from the dacha, albeit for a couple of days. The only thing is that I use it 95% as a kneader, and only 5% for cooking.

Of course, you can knead in the HP, but in the combine, the kneading of extraordinary bread is of higher quality.

I cook porridge for the child from food, then beat it with a banana. Liver pate. And I can't even remember what else.

I cooked these cakes completely in TM, without dirtying other dishes: https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=173415.0

You better ask me something more specific. So the gathering will not cover everything.
Beetle extractor
Mistletoe, thanks! I would gladly use your kindness and ask something, but I don’t know anything concrete yet. I imagine that I would probably cook custard cream, lemon curd, blissful caviar, or squash ... And what else? If I buy, I will be grateful for any advice.
Omela
Custard and Lemon Kurd - Yes! Kissel is possible, fruit drinks all sorts, manna porridge without lumps will turn out, but in time it is long enough. Hit - liver pate. But caviar is more convenient for me in a slow cooker.

On the first, I cooked more. I remember a vegetable stew, meat with pepper. I don’t remember now.
Beetle extractor
Liver pâté is always good, urgently needed for a demonstration - maybe unexpected ideas will be thrown up If there is something interesting, I will tell you
Omela
Aha, good luck !!!

Take the girls into your ranks I am the happy owner of Thermomix for a year and a half Mom gave it for housewarming, at first she was skeptical, then tasted it and got a taste))) I especially began to make life easier with the advent of my son. I don’t cook everything in it, but I use it every day.
Omela
fewnis , welcome to the forum !!! And with your assistant !!!
fewnis
Omela, thanks a little later I will also lay out recipes from my stocks)))
Manijka
Omela, thanks for so much valuable advice at once! I didn't even know that wheat should be left for oxygenation, I always grind and bake right away! And the recipe says 10 grams of dry yeast ... strange. I'll take your advice, thanks! I'm just a beginner hostess, so valuable advice is worth its weight in gold for me !!!

I have a photo, but I do not know how to add it here, if you teach I will be grateful!
Omela
Manijka how to insert a photo: https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=73109.0
