Hello everyone! so many good and simple recipes here! I have a German "basic" book, from which I tried to cook something. Maybe not all books have this recipe? therefore I will write. It is not quite simple, and the time is about an hour, but the result is worth it and it is not a shame to serve it on the festive table. Perhaps I will write the name of the seasonings incorrectly, because during my life in Ukraine I did not use anything except black pepper and coriander

Chicken fricasse
for 4 servings

1000 gr of water
1 tsp salt
150 g of small mushrooms, if large, then cut into 4 parts
1 chicken breast (about 500 g) with skin and bones (I took fillets)
1 carrot, in pieces
1 celery stick, in pieces
3 sprigs of parsley
60 g butter
60 gr flour
700 g broth left over from cooking
1 cube of chicken stock
1 tsp woodchery sauce
1 tsp lemon juice
1 pinch Curry
1/4 tsp white pepper (yes what it is)
100 g cream
[/ left]
Water and salt in a bowl - 8 minutes / 100 deg / sk. 1

Put the champignons in Varoma

Add chicken breast, carrots, celery and parsley to the water, put Varoma with mushrooms on top and 10min / Varoma / reverse / sk. with stirring

Take off Varoma, set aside. Continue cooking the chicken, closing the bowl with a lid 35 min / 100 deg / reverse / sk. with stirring

Take out the meat, strain the broth through a sieve.
Peel meat from skin and bones, cut into cubes

Put the oil in the bowl -2.5 min / 100 deg / off. reverse / sk. 1

Add flour and more 2,5min / 100grad / sk. 2

Add broth and cube - 5min / 100grad / sk. 2

Add meat, champignons and whatever is left of the recipe - 3min / 100grad / reverse / sk. stirring

it is recommended to serve with rice and salad, you can use it to fill puff baskets (I haven't tried the second one, it seems a little thin for this)
I ate and did not believe that I had cooked it. Or is it Thermomix?

This sauce - what is it? What's in the composition, or at least what taste does it have?

This sauce - what is it? What's in the composition, or at least what taste does it have?

Everyone pronounces the name of this sauce differently, it is very complex, as well as its composition itself. Right here
🔗 you can see what it contains. In Moscow, I bought a faint likeness of this sauce in Indian spices. Unfortunately, we could not find a natural one.

And I Chicken fricassee cooked. Thank you, Bibathat they recalled this recipe. I also have it in the book "Meat and Poultry".
Since some components were not there, the recipe turned out like this:
1 liter of water + 1 tsp. sea salt - 8 min. / 100 degrees / sq. one
700 g chicken fillet (4 pcs.) + Small carrots in cubes + celery in slices + 3 sprigs of parsley - 10 min / Varoma / reverse / stirring
Top in Varoma with 250 g of champignons. Then 35 min / 100 degrees / reverse / stirring.
I have mushrooms straight from the freezer, so I held them for another 20 minutes in Varoma, then took them off.
She took out the meat and cut into cubes, strained the broth. By the way, nothing is said about broth vegetables.
The broth turned out to be very tasty, the "extra" husband drank it right there
And now the fun begins
In a bowl 50 g sl. butter + 10 g walnut oil - 2.5 min / 100 deg / sc 1
Add 60 g flour - 2.5 min / 100 deg / sq. 2
Add 700 g of broth and chicken cube - 5 min / 100 deg / sq. 2
Then (not knowing what to do with the vegetables) I added the carrots and celery to the sauce and chopped them for 20 sec / sq. 5. From this, the sauce acquired a delicately creamy pinkish color
Next, in a bowl, meat + champignons + 1 piece of finely chopped walnut + a little thinly chopped ginger root + a pinch of nutmeg + lemon-pepper seasoning + 0.25 tsp. adjika + 0.25 tsp horseradish + 2 tbsp. l. wine + freshly ground pepper + 150 ml 33% cream
All this - 3 min / 100 deg / reverse / stirring
It seemed that it was not enough and added another 2 min / 100 deg / reverse / stirring
