Victoria, this could happen if you hesitated a little. The selected program starts working very quickly, often you don't even have time to set the parameters that you intended. Perhaps it happened with you: the device began to cook and no longer responded to pressing other buttons. Try to test different programs and parameters without food (change pressure, time, etc.).

Tasima65, As far as I know, there are no touch modes in pressure cookers, since all programs under pressure work LINEAR. (That is, pressure is built up and no further parameter changes are made until the end of the program.)
If you choose a device with touch modes for yourself, then look for a multicooker. Perhaps in some multicooker-pressure cooker there are also such modes.
