Cooking on the stove requires a sufficient amount of liquid, in a pressure cooker 1-3 tbsp is enough. l. to build up pressure. In this case, the liquid practically does not boil away. on the contrary, juices are released from food.
I would either stew the caviar without water at all, or first roast the vegetables well on the "Fry" program, and then simmer them under pressure.

The zucchini themselves give a lot of water, I cooked it as before, cut it, salted it so that the yushka would be allowed in, drained the excess water, overcooked it, onions, carrots, peppers, tomatoes, mixed everything and put it on rice for 15 minutes. In a pressure cooker, I would simply fry a little longer - first without the lid, then under it.

You can also chop the vegetables coarsely ... add a little water, stew, drain the water and blend ... but the taste will not be the same (they tried to do this in a slow cooker ... meaning without frying).
I would not say that it is easier on gas ... you need to stir there, watch it again ... you can fry everything on gas separately. Good luck!
