But this is not often. And now I want to share how I made rhubarb jam in our slow cooker. Maybe someone will come in handy. I had this original recipe for this jam: Ingredients:
1. Fresh rhubarb 450 grams
2. Vanilla sugar 3/4 cup
3. Lemon 1 piece
4. Ginger root 1 small piece (2-3 centimeters
Preparation:
Step 1: chop the rhubarb.
Wash the rhubarb stalks thoroughly and be sure to cut off the leaves from them. Peeling rhubarb is optional
Cut the prepared stems into small pieces (about 1 centimeter).
Step 2: sugar the rhubarb.
Place the chopped rhubarb onto a baking sheet. It is best to use vanilla sugar to make this jam, but if you don't have one on hand, you can use regular sugar. Cover the rhubarb with sugar.
Mix well and leave to stand at room temperature / No need to insist for a long time, just let the rhubarb give some juice. This will take about 10-15 minutes.
Step 3: add lemon juice.
Cut the lemon in half and squeeze the juice from each into candied rhubarb. We only need pitted juice!
Stir everything.
Step 4: bake the rhubarb.
Preheat the oven to 170-180 degrees and send a baking sheet with rhubarb in sugar into it. Bake for 25-30 minutes.
Step 5: squeeze out the ginger.
While the rhubarb is baking, prepare the ginger. Peel it and place it in a garlic press (if the piece is too large, cut it in two) and gently squeeze out the juice.
Collect the juice immediately in a bowl. Small pieces of ginger will remain in the juice, you must not let them get into the jam.
Step 6: add ginger juice to rhubarb jam.
Pour the ginger juice over the rhubarb jam through a sieve or cheesecloth to catch the hard pieces. Stir.
Step 7: grind the rhubarb jam.
After you have added the ginger juice, the jam is basically ready, you can already serve it to the table and put it in a couple of small glass jars. Can be chopped with a hand blender for a smooth, thick mass
In short, the recipe seemed delicious to me, but there was no way to bake it in the oven. I decided to try it in the cartoon.
Well, let's go nuances. Cutting rhubarb into pieces was difficult. I had to clean it up. I had rhubarb after cleaning and pruning with a net weight of 300g. Dumped everything into the bowl. I fell asleep with sugar. gave half a glass (later I had to add). So 3/4 cup had to be added right away. I took regular sugar and added 1 packet of vanilla. Postwill for heating. The cover is open. I added a little water - in a faceted 200 ml. glass height of water ball approximately 0.7 mm. When the sugar melted, the liquid increased. Perhaps it was necessary not to add water at all, but I was afraid that it would not burn. Then I put on the baking mode, pressure 1. The lid was closed, the valve was open. But since there was water, the pressure even with the valve open rose and blocked the lid. Therefore, in this mode, my cooking turned out for about 5 minutes. Disconnected. I looked into a bowl full of water and everything boils like compote. I closed the lid, closed the valve and turned on the "meat on bone" mode, pressure 1, the minimum time in this mode is 25 minutes. Turned off after 20. the pressure blew off forcibly. Opened the lid, there was no need to blend. Everything boiled over by itself. I added lemon juice (I forgot to pour it right away, as per the recipe) but not from the whole, but from a jar of ready-made, a tablespoon. Added ginger juice. From a small piece of 3 cm, I got less than 1/2 teaspoon. There was water. I switched on the frying mode, pressure 1. I added sugar (although I love sour, but even for me it was sour) With the lid open, I stirred for 10 minutes until the water evaporated. Surprisingly, it turned out thick and tasty.
But if I cooked it again, I wouldn't have put the vanilla sugar in. And the ginger juice did not affect the taste (there is no bitterness) but gave a slight aftertaste. So for an amateur. I prepared this jam "for now". It turned out to be almost a half liter jar of this amount.
