Admin, Viki - Thank you!
There is also a small question - is it possible to cook less bread in a bread maker than a size M loaf? Or the kolobok will not be able to knead because of the small volume?

Two options:
1. Slightly adjust the recipe for pure wheat bread downward, and be ready to scrape off the impurities from the walls into a bun with a wooden or silicone spatula.
2. Take a recipe with additives that reduce the height of the bread. Low-gluten flour (buckwheat, pea, barley, oatmeal ...), flakes, grains, muffins, bran, etc. And then the loaf at the exit will be noticeably lower.

Why do you need this? I don't have a lot of a 400 gram loaf (size M), enough for one for 2-3 days.
Although there are stoves (no, PECHULECHKI) for a 200-gram loaf.

I also took care of this issue, because we even eat M-loaf for a very long time.
The last page says that the minimum amount of wheat flour is 300g.
That is, we take the recipe for M (where 400 g of flour), multiply all the ingredients by 0.75 and further in the text.
(I have not tried it myself yet, but next time I will do it).
Zubastik
Uncle Sam, I have a lot of loaves of M, we have a habit of eating everything only fresh, I always cook for one meal, for example, I cook the broth for several days for the first time, and for lunch I measure out the broth for the soup with a spoon, as much as I need to eat at once and cook of this amount. I used to buy bread fresh in the store every morning when they brought (the store right in the house) halves of a roll - enough for exactly one day + breakfast.
I'll try to bake on the advice Rustic stove today, I think to knead less than 300 grams. it makes no sense if the kolobok has to be done manually.
Uncle SamDo you think buckwheat, pea, barley flour can be made by yourself? What if you grind the cereal in a coffee grinder, it will be flour? There is nowhere to buy, I found, besides wheat, only chestnut for 235 rubles. per kg. And the bread of a lower hunt oh how
Zubastik
There are also 4 types of Japanese flour sold - but its composition is a mystery to me, the most understandable is black rice flour. And I can't even pronounce three more types and can't imagine what it is made of.
Zubastik
Oh, I found a whole topic about the fact that cereals can be ground into flour

Good night all !
I live in Ufa.
For a week I went and looked closely at the bread makers, never used them, did not know what kind of "such beast" it was, but really wanted to get it. I was in the Metro today, there was the only Clatronic, there were no instructions in Russian, I stopped at Eldorado. Took 4 instructions, leafed through, looked and stopped at Panasonic SD255. Priceaaa, of course (it's a shame to say at what price I bought it, I overpaid it a lot), but apparently either the New Year's excitement or appetites from our sellers are starting, oh-oh-oh.
I put in the simplest bread. I made a mistake, chose the fast bread mode, stopped the kneading, again the fast bread regime, again the kneading, finally found the normal bread regime. I was very worried, in vain. Everything worked out great! Even the spouse, who was against the bread maker, waited for the bread, and then went to bed satisfied.
While baking, I found this site, read this topic for a long time.Found answers to some questions. And most importantly, I liked the very atmosphere of goodwill.
In general, I am happy with everything and the bread maker and the forum.

With a purchase that will change your life.
This is only called "kitchen apparatus", in fact, it is another floor of freedom.

My husband was also dubious about my idea of buying a bread maker. Now he cannot get enough of our Panasonic, which works almost every day. They forgot about the purchased bread. Congratulations on your purchase. Don't forget to share your achievements.

Uncle Sam, Hope, thanks for the welcome.
I will definitely share my successes and failures, but while orally, my Nikon was supposed to be taken to Moscow for examination yesterday, it will not return soon. And how I wanted to boast!

Nibbler, yesterday I made a loaf of 300g of flour, it is kneaded perfectly in HP, you don't need to stir anything with your hands!
try it.
The loaf turned out to be small, we, little girls, were able to manage half of it for dinner and breakfast (I made bread with oatmeal from Dentist, it (bread) is not entirely white, so it went well for dinner).

And this is the idea. And then we, too, even a loaf of M is too much. How did you do it? Did you just split all the ingredients in half? Is the bread a little dry? After all, the baking time is designed for more weight?
Ilona
Hello everybody!
Take me to your company too. A week ago, the family gave the Panasonic 255. The first bread - according to the very first recipe. Class!
Then I tried recipes from your site. Everything turned out, but sometimes the view did not suit (in one case the roof "settled", in the other it rose very well, but inside the hole was small, but otherwise it was lovely).
I go to the site, read, study. Thanks to "aces" for sharing "best practices".
Everyone woke up this morning from the smell of bread.
Baked "Darnitskiy bread" from Fugashki. Indeed, it is very tasty. I added cheese and dry garlic.
Pets begin to understand that after all, this is not a "toy" ...
I think that there will be no bread left until the evening.
Thanks for the recipe!

Stove, super !!! And I didn’t have time to try it yet - I mixed bread with buckwheat - such a horror turned out. I have to finish eating for a long time. I'll put oatmeal in the morning !!! Now I will count all the recipes!
Alina, in any recipe, all components can be reduced proportionally. Example:
Flour 400gr.
Yeast 1h. l.
Water 260ml.
We need flour 300 gr. - we make up the proportion 300/400 = 0.75
The amount of each component just needs to be multiplied by this factor:
Yeast 0.75 h. l.
Water 195 ml.
etc.
Alina
Oh, for sure, brilliant ideas are always simple, you just need someone to suggest.
Rustic stove Thank you very much, I'll try it on some today. And then you so want more often fresh bread, and we eat a loaf of size "M" for 3-4 days.

I first had a Panas 253 stove, I bought it a few years ago, when it just appeared and the recipe for it was all wrong, and since we bought it in the salon and not on the Internet, we were given recipes for this stove printed on leaflets right in the salon ... And in August of this year we bought 255th. It works well. But unfortunately in Russia the quality of products is extremely unstable. Yesterday, such a bookmark of ingredients was optimal, but today it may turn out to be generally unacceptable - by the way, this is where the reasoning about, ostensibly, the mystical nature of baking, is actually garbage,there would always be a stable quality of products - the result would be absolutely and stable (any bakery technologist knows this - this is exactly what I was advised at the beginning of my ownership of the Panasonic 253). I have a very unpleasant experience of the last two months working with SAF-moment yeast and am looking for which ones to switch to, because I am already tired of their unpredictability.
Zubastik
And I have a tendency to cook everything from dough - bread, dumplings, noodles The menu of the day consists of the capabilities of a bread machine. Today, at least I diluted it with jam, but now I eat a solid dough and more dough. Tell me, is it curable?
fugaska

Hello everyone! Thank you ... now I am a happy owner of Panasonic SD 255. On Sunday evening, by chance, my husband wandered into your forum. And he began to read to me about this wonderful unit. After 2 hours, we packed up and went to the nearest household appliances s / m (20 minutes from home) and bought this miracle of hostile technology. We have been eating homemade bread for 2 days now. Just beautiful. We gave it to friends and colleagues to try ... I feel that soon our ranks will be replenished.

At first I had a Panas 253 stove, I bought it a few years ago, when it was t (any bakery technologist knows this - this is what I was advised at the beginning of my ownership of the Panasonic 253). I have a very unpleasant experience of the last two months working with SAF-moment yeast and am looking for which ones to switch to, because I am already tired of their unpredictability.
At home, bread at VVC recommends yeast
"Fermipan SUPER 2 in 1" and "Fermipan SOFT 2 in 1" yeast that meets modern requirements.

The modern drying technology allows keeping the high activity of the yeast culture.
Vacuum packing reliably protects yeast from negative environmental influences.
Low humidity (about 5%) makes the yeast stable during long-term storage.
Fermipan should be put into the dough 5-6 times less than compressed yeast.

Fermipan Red is a basic yeast for baking. Designed for products with a sugar content of 0-10%. It can be used for any flour of any quality, both for sponge and non-steam dough preparation.
ASSORTMENT: wheat and rye-wheat bread, loaves, muffins, etc.

Fermipan Soft 2 in 1 and Super 2 in 1 are optimal when using unpaired technology for the production of bread, loaves, rolls, etc. Improve product quality. Save expensive improver. Designed for products with 0-10% sugar content in the recipe. This yeast has limited use in the sponge production method.

Fermipan Super (Super) 2 in 1 - has improved performance compared to Fermipan Soft 2 in 1. Thanks to the new enzyme complex S y m b i a s e TM in the composition of Fermipan Super 2 in 1, they completely eliminate the use of an improver with emulsifiers.
Fermipan SUPER Fermipan SUPER 2 in 1:

* The increase in volume is significantly greater than that of Fermipan SOFT 2 in 1;
* Soft and ruddy crust;
* Elastic crumb with uniform porosity;
* Increases the softness of products.

Fermipan SOFT Fermipan SOFT 2 in 1:

* Increase in the volume of bread;
* Crispy and golden brown;
* Delicate, elastic crumb.

Fermipan SUPER 2 in 1 and Fermipan SOFT 2 in 1 allow:

* Save improver;
* To stabilize the quality of flour and production process;
* Effectively slow down hardening.

But a month ago, Dom-Khleb at the All-Russian Exhibition Center said that they would not have supplies of Fermipan and I bought a Saf-Instan made in France, I am very pleased with this yeast.
Andreevna
zabu, everything that you wrote is wonderful, only they no longer have these yeast and is not expected yet. It's just that, as the seller of this store explained to me, their supplier stopped buying this yeast, and switched to some one from China. Well at least there are still French Saf-Instants. And Fermipan is a very good yeast, I used it for 2 years.
Petrof
Appreciate for the reaction to my post.
Can't you tell me how much the French SAF costs and the volume of the package? Once they were sold in ordinary stores, but now only Soviet ones.
Somehow, 3-4 years ago, I took Polish ones (there were no others in the store near the house) that looked like SAF-Levure, in granules, they worked flawlessly.

that they will not have supplies of Fermipan

This Saturday at the Exhibition of Economic Achievements in the House of Bread I bought Fermipan in bags (11 grams) made in Holland.
Tanyusha
Leska thanks for the information, but I have 0.5 kg (already less) saf-instance, so while I don't use them I won't buy others. In general, they completely suit me.

Petrof the volume of a Saf-Instan 0.5 kg cost exactly I don't remember 100 rubles, you can see it on their website for sure.

The only alternative to Panasonic is Delongy 125, and it is just collected not in China, but in Italy. It is a purely Italian thing and it is also praised on the site, but the owners of this miracle are much less than the Panasokovites, but this is understandable, the Italians have a lower working capacity than the Chinese, so the productivity (but not the quality) is inferior.

We bought a bread maker! Panasonic, but not 255, but 254. I thought that for $ 30 I would add raisins myself (this is a difference in price, as you know), but there is no rye flour in our stores. And now I came home and doubts overcame me. Maybe tomorrow to drive to 255 change, eh? : - \ Well, support me, tell me that I will live without a dispenser, eh? ... That's for sure, the less you know - you sleep better. Instead of baking bread, I start with doubts!

I specifically bought it without a dispenser, by the way, there was a problem finding exactly SD-254 - all around SD-255. Too lazy to wash, and you can't put sticky products in it. In general, I live fine without a dispenser
Ksyunya
I also have 254 without a dispenser. I specially took this one. I rarely bake with raisins-nuts, I can even throw it myself. Why pay extra for what you don't need? The husband believes that the most delicious (and healthy) bread is made from first grade flour, without butter, milk, etc. (just flour-water-yeast-salt-sugar). This is what I do.

If you do not have rye flour, then you can really live without a dispenser very easily. Even if rye suddenly appears, then this is not a problem - you can bake on the Diet program and bake on the main one without problems. So it’s not a problem at all. Relax and enjoy your shopping.

We do that too. But sometimes, for example, on Saturday night, we add 5 more tablespoons of sugar to the standard classic bread recipe, and instead of water we take pasteurized milk. And we also take 1.5 norms of yeast. And in the dispenser we throw a chocolate bar, broken into squares and raisins, from half a glass. Then we program the stove for our own program - an enhanced 2nd batch (increase by 5 minutes), and an increased time of the last rise (increase by 15 minutes). And then we set the timer for 9 am. And that's it, 2 minutes of programming - and then the stove does everything by itself. And in the morning we are awakened by the smell of an airy, simply awesome chocolate-raisin cake for morning tea! And the programs in the Delongy 125S stove are not 12, and not even 14. There are as many as you need. Like a computer. And it costs one and a half times less than Panasonic.
