I liked bread with cheese and sausage .. but since the sausage I don't eat, I just want to put cheese and, for example, dill ... in this regard, the following questions:

2) if right away, will the dough spoil because of the cheese, since we will put on the timer so that the bread is ready by the morning ...

I would advise:
1.the first bread to bake is the simplest - wheat flour, yeast, water, salt, sugar, butter.
2. do not put on the timer. Leave the timer for recipes tested and worked out by YOU. At first, you will need to control the kneading stage without fail.
3. if you really want bread and cheese, especially, do not use the timer, but add the cheese manually when you hear the dispenser open. Cheese has a bad habit of sticking in the dispenser and then melting when baking bread.

In the meantime, read this. UNDERSTANDING BREAD IN HOMEMADE BREAD, paying special attention to point 7 - the formation of Kolobok. You need to know the kolobok rule in order to avoid problems in the form of low-quality bread.

today baked the first bread .. honey agarics turned out to be unsuccessful .. they put everything strictly according to the recipe from a bread machine, baked ordinary French, the bread did not rise (flat as a brick), the crust is pale all in cracks, the crumb is sticky and in my opinion not baked ... but the main thing is that the bread itself is not tasty with everything ...

We used their measuring spoons and cups ..

Elenka_26, I think the whole point is that you filled in hot oil.My experience with yeast dough is not small and I can say that hot liquids, including butter, kill yeast and they stop working - hence the flat, stubborn bread. In any yeast dough, regardless of the method of baking, liquids are put warm, so as not to be mistaken, better than room temperature. Heed Rina72's advice and bake the basic recipe from the instructions. I also baked it first and even on the timer and thank God everything worked out! And you will succeed: yes: I wish you a successful bread!

I bake quite a lot from yeast dough, although I use raw yeast and I never had a problem with it ... if I added hot oil.
but I didn’t bake the main one because I don’t understand the differences between fast-acting yeast and no .. saf only has the usual ones for baking and for pizza ..

bake with raw - at the rate of 2 grams of yeast per 100 grams of flour, or with saf. unclear yeast B and R? these are the same yeast, but in different quantities - less for the main mode 4 hours, more for the fast mode 2 hours.

Elenka_26, have you controlled the bun? From your description, it is flour / liquid imbalance. Back to my recommendations. Read the Manual and here's to you separately Wheat bun master class.

Live yeast works just fine. I use at the rate of 1.5 g per 100 flour, that is, for 500 g flour 7-8 g.

"Wet" yeast, and even more so from Kryvyi Rih, goes well into work. Start with 1.5 grams per 100 grams of wheat flour. Simply chop 6-8 g of yeast per 500 g of flour at the bottom of the bucket, bookmark according to the instructions. Be sure to track the kolobok.
