Congratulations on a wonderful purchase!
And with your bread, something is not the same ... Bread from a bread maker, on the contrary, is very airy, which differs from the store one. Yeast odor should not be present
If you wish, you can do a "debriefing"
And the dough, you are right, is excellent from HP! You can't knead it with your hands ...

I repeat ... I did it for YOU ... but I did everything according to the instructions and clearly nothing less ... like in a pharmacy ... I bought fast-acting yeast ... when the bread cooled down I cut a bun, when squeezing the bread he straightened up, that is, I want to say that he was not weak ... but the smell of yeast, in my opinion, should not be present ... I will continue to try ... as any technique requires skill ... but I also wanted ask with accelerated baking whether it is necessary to increase the amount of yeast ... I haven't caught this nuance in the instructions yet ...

With Quick Baking, you put the yeast from the line Yeast-R, if you have Panasonic, otherwise, Yeast -B. In other words, faster baking requires more yeast.

Yeast Saf-Moment, Minutka-Levure, pakmaya, Dr. Oetker is a fast-acting yeast that is added directly to the flour, it does not need activation, as you say. There is no yeast smell from them at all in baked goods, they correspond to the standards that are laid down in the recipes for our HP Panasonic ...
I did not use any others, since it is problematic to buy fresh yeast, but I am 100% satisfied with these.

Lendra, if there is fresh yeast, then "go ahead and with a song" bake with them! 1.5 g of yeast per 100 g of flour (crumble the yeast to the bottom of the bucket, flour, salt, sugar, water on top). We have a section INGREDIENTS FOR BREAD, there are several topics about yeast.

ps. I bake exclusively with live yeast. Dry only at the very beginning of the baking era and once or twice when conditions did not allow keeping fresh yeast.

Maybe not in the subject ... but I want to congratulate everyone with a NEW YEAR and wish everyone with the words from the parable ... "Watch your big stones - only they have a price, everything else is just sand."

Once a sage, standing in front of his disciples, did the following. He took a large glass vessel and filled it to the brim with large stones. Having done this, he asked the disciples if the vessel was full. All confirmed that it was full.
Then the sage took a box with small stones, poured it into the vessel and gently shook it several times. Pebbles rolled into the gaps between the large stones and filled them. After that, he again asked the disciples if the vessel was now full. They again confirmed - the fact is complete.
Finally, the sage took a box of sand from the table and poured it into the vessel. The sand of course filled the last gaps in the vessel.
“Now,” the sage turned to his disciples, “I would like you to be able to recognize your life in this vessel!
Large stones represent important things in life: your family, your loved one, your health, your children - those things that, even without everything else, can still fill your life.
Small stones represent less important things, such as your job, your apartment, your house, or your car.
The sand symbolizes the little things of life, the daily bustle.
If you fill your vessel with sand first, then there will be no room for larger stones.
Likewise in life: if you spend all your energy on small things, then there will be nothing left for big things.
Therefore, pay attention first of all to important things, find time for your children and loved ones, watch your health.
You still have plenty of time for work, for home, for celebrations, and everything else.
Watch out for your big stones - only they have a price, everything else is just sand. "

HAPPY NEW YEAR!

Rina
There is a student version of this parable.

At a philosophy lecture, the professor takes out an empty three-liter glass jar, fills it with stones 5 centimeters in diameter and asks the students:
- Is the can full?
They nod their heads. Then the professor takes out a bag with smaller pebbles, pours them into the jar and asks again:
- And now?
- Yes, now complete.
Then the professor takes out a bag of sand and pours this sand into the jar, after which he says:
- This jar reflects your life. Big stones are the most important: health, work, family, children. With all of this, your life can be called complete, even if you have nothing else. Little stones? these are smaller things, such as an apartment, a summer residence, a car, etc. And sand is just a trifle, nothing. If you fill the jar with sand first, then there will be no room for large and small stones. So is your life - if you waste it on trifles, there will be no room in it for the really important things. So decide on your values in life and remember that everything else is just sand.
Then one student takes a bottle of beer from his bag, opens it, pours it into a can, and the beer is absorbed into the contents of the can without a trace.
- No matter how full your life is, there will always be a place for beer.
For me:
no matter what your life is filled with, there will always be and should be a place for a hobby.

Good day!
The day before yesterday I became a happy owner of HP Panasonik SD-257, but I don’t feel happiness yet !!!
Problems...(((
At the bottom of the bucket in the corners, flour remains unmixed, the dough has not risen ...
in general nothing works
I began to consult with my friends, they say that you need to knead all the liquid ingredients first, and then the dry ones, although the instructions for my HP say that yeast + flour + salt + sugar are at the bottom.
I won't survive the third unsuccessful bookmark
Help
1. find the right ratio of ingredients ...
2.sequence of bookmarks in HP Panasonik SD-257
Rina
So ... girlfriends advise based on the instructions for other stoves. Panasonic is different.
Yeast at the bottom, then flour, salt, sugar, liquid on top.

Unmixed flour is due to a flour / liquid imbalance. For the third attempt to be successful, I strongly advise you to read UNDERSTANDING BREAD IN HOMEMADE BREADespecially pay attention to Kolobok's rule , which is necessary to know, strictly follow!

Start working with the stove with plain wheat bread (yeast, wheat flour, salt, sugar, butter, water) on the main program! Until it is worked out, it makes no sense to move on.
I hope there were no problems with the temperature equalization mode?
Anchen
no, no ...
and I just learned about the "kolobok" rule
fell asleep ingredients + timer for 6 hours
and
and in the morning, instead of delicious bread, an inedible flatbread
Rina
Start working with the timer when the main recipe with tracking the kolobok is verified. Flour can be different, and you measure it with plus / minus accuracy ... For me, for 500 g of wheat flour under different conditions, from different manufacturers, it can go from 290 to 350 g of liquid. And in the dough, every 10 g of water "plays a piano".

Do not be afraid to leave the baked bread in the bread maker for several hours, nothing terrible will happen to the right bread. If you want to get good bread in the morning, then put it closer to the night in order to have time to control the bun, and in the morning it will be still warm and "ripe" (a common mistake of beginners is to want to get hot bread for breakfast, but the fact that bread should still stand and cool down at least to a warm state, many simply do not know / suspect / think).
Anchen
Thank you!!!
I'm going to stir up the third bookmark
Rina
Good luck! And let the kolobok be beautiful !!!
Just carefully adjust (if necessary) the dough, liquid and flour need to be added almost a teaspoon at a time, otherwise it will be very dusty or spray.

here, there is a section Help, I want to askwhere you can get all the necessary advice.
Anchen
Hurrah!!!
It works !!!
She conjured with a kolobok until 3 am ... I had to fill up the flour
In general, everything worked out ...
I will try the recipes further !!!
I wanted to upload a photo, I did not understand where to attach it
But I still want to bake healthy and wholesome bread with bran, additives ... from different types of flour
Tell me where to get the ingredients and recipes ???
Rina
Congratulations, Anchen .
There are recipes on the forum van, carriage, and even a small cart.
And about where to get the ingredient, take an interest in the geography-related topic in the section COMMUNICATION WITH THE EARTH

London
For 2 weeks now, our family has been the owners of the miracle sd-257. During this time I:
1. I managed to bake various breads, mostly white.
2. Knead the perfect dough for all sorts of pies / buns
3. Knead the dough for Darnitskiy sourdough bread.
4. Get to know the leaven directly.
5. Knead a towel in a bucket, with which I cover the bucket from flour spraying. Fortunately, without consequences.

Impressions, as usual, the mass! For myself, I made several conclusions:
1. I DO NOT need a dispenser. It is simply reluctant to wash it, but you can fall asleep in different ways on a signal or simply on a whim when kneading a bun.
2. I do NOT need the Rye Bread option. Baked rye in sourdough, after reading the forum. For rye flour, an hour of proofing is still not enough. Necessarily need 2-2.5 hours. It turns out perfect. As a store, only better. But it is more correct to do it in the oven. I think this is a feature of rye flour.
These are, perhaps, all the disadvantages.

I have revealed a lot of advantages for myself!
1. HP kneads an amazing dough, which is usually very lazy to tinker with. I just can't knead it with my hands.
2. Saving time. While HP kneads the dough, I knead the filling and then sit back). And to blind pies - 15 minutes. "Pleasure" doesn't last half a day.
3. We have completely stopped throwing away bread. Previously, moldy halves of the day before yesterday's loaves flew to feed the birds / animals. The bread spoiled very quickly. I don’t know what is poured into it at bakeries, but loaf mold loves. And he grows stale the next day. With the advent of our own bread, we immediately forgot about this problem. Completely!
4. The bucket is very easy to clean. You can even just wipe it off with a paper towel. Very comfortably!
5. A lot of discoveries for myself in the field of the test, I really liked to tinker with it. And the result is excellent!

Conclusion: it turned out to be a very necessary thing for us!

Irochka thank you very much for the reference. I read it a hundred times, but since I chose three things ... the scales, HP and Cartoon, the roof slightly moved down and everything got confused in my head ... Finally, everything is over and I will have to look for only good recipes!
EAL13
I ask you not to send it straight to the bathhouse. I have been studying the forum for several days - there is already a mess in my head. I decided to register today. Nick "brake" is already taken and it's a pity ...
Girls don't know ANYTHING. I never had HP and made dough only for pancakes by hand (not very well).
Seen enough about bread I want a bread maker. I read "about everything" here - chose the Panasonic 257 already ordered in IM
So we'll get bored soon.
As it was advised somewhere here, I'll start with the first recipe for white bread (I found the instruction here to 255).
And the question is - are there any recipes for LEAN bread? What would be without oil at all?
Did not find
Although I found a lot. And Easter cake from Elena Bo and Darnitsky from fugaska
She took everything into service.
And more-proven recipes ... I understand that not all are "proven". Or all?
Send me to "hits" for Panasonic, huh ???
Only without the addition of malt, kvass and other express and gluten for now.
And then everything is already mixed up with me.
But about lean bread - please ...
Thank you!
Rina
EAL13, lean is without animal products, and there are a lot of them. Or do you need no added fat of any kind at all?

The simplest recipe can be completely lean:
500 g flour
1.5 tsp yeast
1.5 tsp salt
1.5. Art. l. Sahara
2 tbsp. l. vegetable oil
330 ml of water (about 1-2 tbsp. L. Can be replaced with apple cider (natural!) Vinegar.

In the end, you can not even add butter, however, then the bread stale faster.

And further. Why malt scares you so much?
EAL13
thanks for the answer
Yes, I need no oil at all.
If oil is removed in this recipe, is it necessary to increase the water? Or just as simple without oil?
And malt frightens that while I do not have it and is not expected (((I almost never leave the house, I have no one to leave my child with. For me, VDNKh is an unattainable distance. in Platypus (and other stores with delivery - no)
Rina
then it is understandable (she herself spent four years within her district).

Yes, you can cook without oil, even eat wheat-rye bread (although oil helps to form a bun there).
There is no need to increase the water. Just read UNDERSTANDING BREAD IN HOMEMADE BREAD and learn the golden rule BOX.

In any case, having started communicating with the bread maker, you yourself will begin to try something, to refuse something. For example, I definitely use vinegar and bake only with live ("wet") yeast. You can try to get malt through the same Internet (or maybe some forum member will turn out to be a neighbor and help in acquiring all sorts of interesting things for baking).
