Try a rye bake on low-fat kefir. I gave the recipe.

Yeast - 2 hours l.
Wheat flour - 225g
Rye flour - 325g

Vegetable oil - 2 tbsp. l.
Rye malt - 3 tbsp l
Boiling water for malt - 80ml
Honey - 1 tbsp. l I took molasses
Agram - 1 tsp
panifarin - 2 tsp.

fat-free kefir - 350 ml.
Pour boiling water over the malt, stir and cool.
Sprinkle yeast at the bottom of the bread maker's bucket,
sift flour on top, add other ingredients, last but not least boiled malt and kefir.
1. Program basic fast 20 min. Kneading and lifting 50 min. Then we forcibly turn it off and let it rise with the lid closed for another 1 hour 30 minutes.

2. Turn on the baking program and bake for 1 hour 05 minutes.

Today I tried this bread, I made it with whole grain flour. I liked the bread, it rose well and in my version it reminded me of a Doktorskiy-type bread, with a slight sourness. I just wanted to make it sweeter, apparently all the sugar is "wasted" on yeast, there is absolutely no sweetness in the bread. And my bread dome looks like a volcano, why is that?

I put on program 12, medium crust, 750. The dough seemed to be good kneaded in consistency (I used to bake a lot of bread in the oven, so I can roughly imagine what it should be). But for some reason the yeast "didn't work" ... I added sugar according to the recipe, but the bread tasted sweet, so the yeast didn't ferment properly, if I understand correctly? Maybe because the kefir did not have time to warm up ... Or something is wrong with the yeast. Salt, sugar and yeast were poured into different places of the flour so that they did not come into contact with each other ahead of time. As a result: the crust is thick, tough (though I just love it), and the crumb is heavy, dense and sweet.

But I checked it - the bread maker works. This is already a plus

Tramp, what is your mode 12? I didn't get it a bit. 2502 BXE is a gluten-free regimen. 2502 BTS is baked goods. Maybe something messed up in the modes.
