Wash a kilogram of eggplant, cut the skin and bake in the oven for 40-60 minutes from cold at 180 degrees. I put two large sweet peppers in the oven there. Cut a large onion and fry in vegetable oil.
We clean the finished eggplants and peppers from a thin skin, the peppers also from the seeds and, together with the onions, twist in a meat grinder or in a blender. Fry the finished mass in a frying pan with the addition of vegetable oil, at this moment salt and generally bring it to taste. The mass should boil. Cool down and enjoy.
Previously, the peppers were cut into strips and fried with onions. I don't put tomatoes, eggplants are already quite sour. Sometimes even sugar can be added. I tried to add carrots - I didn't feel much difference.
