I have long wanted to try to make marshmallow only from apricots.
Our apricots, the harvest this year was decent.
So.
I did not bake the apricots, removed the seeds, chopped them with a blender and put them on the fire to boil. Added pectin and some sugar. Weights were about 1800gr. Pectin 20g, sugar 80 grams, no more. I boiled everything. Rubbed through a sieve. After wiping, the mass was 1690gr. Cool down to room temperature and beat as usual. Sugar added 150g per serving. Apricots are sour all the same. Since I did not know how the mass with sugar would behave during whipping, I decided to give it 9 minutes. I added protein and further nuance. Apricots with protein whisk very readily and quickly. Therefore, you do not need to beat them for 6-7 minutes. I beat the first batch at 4 speeds, as usual for 5 minutes with protein. the mass turned out, as it should be, sluggishly-lazily flowing down, in my opinion such a mass should be done. The next one was whipped at the highest speed and in time it was ready in exactly 3 minutes. The mass turned out, like on a meringue, very steep. But it was an experiment and I wanted to see what would happen in the end.
Next: pallet, paper and one more nuance. The apricot mass, no matter how whipped, strong or not, is very reluctant to level, and it turned out to be very difficult to equalize it with a ruler, it does not lie flat, like from apples. More cool. I somehow made the first pallet, then I just leveled it with a spatula. Set to dry for 16 hours. With a margin just in case. After 14.5 hours, the cakes were dried in "rusk". The paper came off very well. Well, then, as usual, I missed, glued and put it back in the dryer for 3 hours at 53 degrees. Pallets stood for 2.5 hours. Everything softened. But there is more softness in the middle than around the edges.
But the bottom cake still remained dry, did not soften. At least not yet softened. The pastille is lying down, it may become softer in the air.
What can I say? In general, the experiment was a success. The pastille turned out to be sweet and sour and with a pronounced taste of dried apricots. I tried it while still warm, could not resist, cut it off. Delicious.
