Apple juice in a juicer

Apple juice in a juicer

Ingredients

Apples (prepared) 5 - 5.5 kg
Sugar (optional)

Cooking method

  • This year, the husband's parents have a large apple harvest at their dacha. Almost 90 kg of juicy and ripe fruits are waiting for processing on my balcony. Of course, a balcony is not the best place to store and apples inevitably deteriorate. I don’t know of a better way to process this amount of fruit than making juice. Yes, drying can be even better, but unfortunately no one eats dried fruits in my place, and everyone loves juice.
  • Therefore, I take out my wonderful juicer from the mezzanine and get to work.
  • 1Apple juice in a juicerLet's look at this device first. It consists of three containers. Below is a pot for boiling water. The next floor is a container for collecting juice. A tube leaves from it, through which the juice will drain into a substituted jar. Inside this container there is a steam outlet. And, finally, the upper part with holes in the bottom and on the sides is intended for laying fruit.
  • 2Apple juice in a juicerMy jar and put it to sterilize. Don't forget to throw a couple of can lids into the saucepan.
  • 3Apple juice in a juicerI pour water into the lower pan and turn on the heating. My pressure cooker contains about three liters of water. Do not pour "with a slide", the water will boil actively and we do not need it to splash out.
  • 4Apple juice in a juicerMy apples (for a start, three - three and a half kilograms) and start cutting them. Very quickly with this or similar thing. But wormy or rotten fruits are more convenient with a knife. I cut off all the bad things, leaving only healthy pulp. And the seeds should not get in - it seems to me that the juice can taste bitter from them.
  • 5Apple juice in a juicerI polish about a kilogram of apples, maybe a little more. My bowl weighs 600 grams. Just the water in the pan boiled. (
  • 6Apple juice in a juicerI collect all the bandura, fall asleep apples, close the lid. Attention! The set must include a special clothespin. I put it on the hose.
  • The water should boil vigorously throughout the entire process. I put it on 8 out of 9 on the most powerful burner.
  • 7Apple juice in a juicerI continue to peel the apples. So the second kilogram is ready. I fall asleep and him. But I definitely wait for the first portion to boil - the apples should look like they are "boiling" - especially well, it can be seen through the lid, and if you open it, they immediately settle, but you can still see that they are boiled.
  • 8Apple juice in a juicerI continue to peel the apples. By the time my third kilogram is ready, juice appears in the tube of the juicer above the clothespin. Slowly I clean the portion, wait for the previous tab to boil, load the prepared fruit.
  • 9Apple juice in a juicerI substitute my sterile jar, pour a couple of tablespoons of sugar directly into it, and remove the clothespin. Hooray, the process has begun!
  • 10Apple juice in a juicerI continue to peel the apples. I fall asleep every next kilogram after the previous one is boiled. Finally, the last, fifth kilogram of apples is poured into a juicer. We have already accumulated from 1/3 to half a can of ready-made juice. About 1 hour has passed since the can was washed.
  • 11Apple juice in a juicerNow I have the most unpleasant moment - I need to add water to the lower pan. The photo shows that about half of the water boiled away. I close the tube with a clothespin, carefully remove the two upper pans and add boiling water. I put the pans in place, take off the clothespin. Everything, you can exhale. In the next hour I am completely free. You can wash the dishes and finally drink some tea.
  • 12Apple juice in a juicerAn hour passed and I already had an almost full can of juice. Gently tilt the top two pans and top up the juice to the top of the can. I roll it up with a sterile lid, turn it over and cover it with a blanket.
  • 13Apple juice in a juicerI do not disassemble the entire structure at once, I leave it until it cools completely. For this I get a bonus - more than half a liter of juice for a drink. The remains are sweet - this juice is the darkest, thickest and tastiest

The dish is designed for

Three-liter can + bonus

Time for preparing:

2 - 3 hours

Note

What can I tell you about this juice? Definitely, it is different than from a juicer. It is without pulp, but opaque, it contains much more pectin, which is extracted by steam from the apple mass. Therefore, the juice turns out to be as if thick and slightly viscous, which is especially noticeable in the "bonus" or if you used unripe apples, volunteers. The taste is rather unusual, it is softer and more watery than from the juicer, but it seems to me that this is not because it is diluted, it is just that the pectin softens the acidity and harshness. My children, who grew up on packaged sweet water, did not like this juice very much at first, but now, having become adults, they have tasted it.
The process is lengthy, usually 2.5 - 3 hours. It's only this year that for some reason I fit into two hours. If, after two hours from the start of the process, the bank is only 2/3 full, then the water will have to be topped up again.
There is a lot of controversy about the apples left after juicing. In general, they can be taken and closed in jars, this is a ready-made filling for winter pies. But, just don't throw your slippers at me, for me personally, these boiled apples, devoid of juice and pectin, are simply tasteless. Well, they are not worth the labor and scarce space in the closet. If you already have so many apples that you are cooking juice, make such a blank from whole apples, it will be much tastier and healthier.
In general, take out your juicers from the bins and go!

I have had such a juicer for thirty years. Perfectly prepares juice from any berries.
Elya_lug
SvetaI, I have been using a juicer for 11 years, I read it with interest. But I always load a full container, a bucket of apples, apricots or grapes. And what does sequential bookmarking in small quantities give?
DonnaRosa
I also load a lot at once and sprinkle it with a little sugar. And I throw away the cake.
Elya_lug
DonnaRosa, if I need more jam, then I grind the cake (it is still wet) in a colander, add sugar and boil it.
Olekma
Svetlana, great recipe! Thank you for reminding me about the juicer. You need to get yours from the mezzanine, boil apple juice.
SvetaI
DonnaRosa, Elya_lug, OlekmaThank you girls for responding!

Perfectly juices any berries
Unfortunately, I never have enough berries and fruits to brew juice. Here are just apples. In general, the dream is to make such a juice from cherries. But here is a toad strangling to give 1000 rubles for a can of juice. DonnaRosa, and you did cherry?
Quote: Elya_lug
And what does sequential bookmarking in small quantities give?
Elya, this gives a significant gain in time.
Look here. 3 kg of raw prepared apples fit into my juicer. I spend about 10 minutes preparing each kilogram. Of course, you can cut good large apples with an apple cutter much faster, but after all, any substandard is usually used for juice. It turns out that to fill the container, I need half an hour. All this time the device is idle. If I throw each kilogram separately, the juice separation begins in half an hour.
And the most important thing. If we put in small portions, each portion has time to steame and the juice is separated faster and more evenly. When I loaded the juicer immediately to the maximum, the lower portions of the apples boiled down into porridge (and filled the holes), and the upper portions remained intact, and accordingly gave the juice worse. At first, the juice separated vigorously, and then more and more slowly, towards the end it hardly dripped at all. It happened that the last third of the can took a whole hour, and this is not only time, but also money (gas, electricity). But now the juice flows in a brisk trickle until the very end of the process and I fit in two hours.
Try it, even wondering if this technique works for other fruits. I think you will like it

Tumanchik
Svetochka oooo juice from a juicer is just something! Absolutely unique taste and aroma! Once cooked this and drank the winter. The apples were pink and the juice was almost red. Stringy, fragrant ... Lucky women who have such a device and of course their apples.
SvetaI
Tumanchik, Irishka, thanks for stopping by!

Lucky women who have such a device and their apples, of course.
It's a shame that many of these lucky women pushed their juicer into the far corner, because the first time it didn't work out and they were reluctant to waste time and transfer products for the sake of unsuccessful experiments. I really hope to help such housewives in mastering this wonderful device!

DonnaRosa, did you do cherry?
No, I didn’t make a cherry, because our cherry is sooooo expensive.
But I made strawberry from a whole bucket of strawberries and I didn't like it, because the juice was very thick and not what I expected. Juice from different currants turned out well, from red juice - excellent jelly (sugar was added directly to the jar). It turned out great from sea buckthorn, I even collected oil.
SvetaI
They say that still very good juice is obtained from grapes. That friend of mine, who taught me how to use a juicer, always made grape juice (she lives in the Ryazan region and manages to grow grapes and it ripens with her - a witch, not otherwise!). She said that the juice is so sweet that when stored, grape sugar crystals precipitate.
DonnaRosa
SvetaI, In our area, craftsmen grow some sour grape variety in collective gardens. But I don't like him in any way. And our southern grapes are very expensive, they are supplied from somewhere in Europe, in winter the grapes are sold so hard that it is difficult to bite through, but the price still goes off scale. This juice can only be prepared by those who live in the south, near the vineyards.
SvetaI
Well, okay! Anyway, apple is the most delicious
Elya_lug
SvetaI, I'll try to load a little, the grapes are next. I make 30 liters, the sweetness of the juice depends on the degree of ripeness of the grapes, every year it is different in sweetness. The process suits me in time. I just cook the fruit first (I cut the apples, free the apricots from the seeds, the grapes from the twigs), cut and toss half of them, then the other half. It costs 2-3 hours on fire, 6-8 liters of juice. I didn't make it from cherry, I tried it from cherry plum, but I only have my own fruit.

And for me, time is just the decisive factor. I do this after work, I still want to go to bed at 11 pm, I get up early. So I'm saving a minute.
Elya_lug
SvetaI, of course, everything has its time!
SchuMakher
Elya_lug, and I do so, and I also put and seal them in jars while hot ... Excellent filling for pies and ducks with geese

Mash, and one bookmark is how much you have? I get 3 kg of raw apples at a time, but since I report gradually and the apples settle, I put 5-5.5 kg of prepared apples - just roll up on a three-liter jar and then another 600-700 ml when cooling.

Cherry juice can be obtained only with such a juicer. I cooked it a lot before, my 3 huge trees and a large and sweet cherry (Podbelskaya). Juice from grapes is also on a juicer, not all juicers take fruit with seeds.I used to make apples in a juicer too, but then I switched to a juicer - both faster and more efficiently, but I still throw away the cake.
And what a wonderful juice from apricot! MMMMMMMMMM !!!!! About 4 years ago, my branches broke from apricots in the country, so I brought a juicer and cooked juice right there. Dad collected and washed apricots, my husband chopped bones, I cooked and even didn't squeeze the cake very much and threw it away. Then they caught up with 50 liters of juice, in winter they drank ...

After all, I am sick of cherry juice. I just envy white envy :) Do you have to remove the bones before boiling the juice?

In, and now I'm weighing everything, they taught me here!
Svetta
Svetlana, no, I cook right with the seeds. This is not a juicer, where the bones cannot be, they do not interfere in the juicer at all. I pour the cherries and a little sugar on it, it is steamed, it becomes softer. Then I crush her a little with a potato crush, and then it went like clockwork. In my opinion, cherry juice is best brewed, it produces little sediment.

If the cake is ejected, then remove the seeds. And if there is something else to do with it .. although nothing can be done with it in my opinion, the cherries at least turn out to be all boiled and the cake is tasteless, only in compost ..
SvetaI
Quote: gawala
then why remove the bones
Well, I thought, suddenly it tastes bitter from them or is considered harmful ...
And as for the cake, especially apple cake - where I first met a juicer in the village, a goat lived with my neighbors. So she just adored this cake, there was no problem at all - the goat ate everything and said thank you
I wish I could find some goat here in Moscow ...
Svetta
gawala, and I do not like these cakes from juicers and juicers at all. They are kind of empty to taste, or something. I somehow rolled up a couple of jars of apple cake for pies, they stood for 3 years and threw them away. It is not a problem to buy fresh apples in winter, but it turns out tastier at times. Therefore, I throw out everything, absolutely all the cake and my hand will not flinch!

It's tasteless from a juicer, I agree. everything boiled because steam stretched. And from the juicer, the cake is not bad from black-red currants, it turns out on jelly .. my mother did it in her time .. it went very well in winter ..

Different varieties of apples .. What varieties do you have? Here we have apples and apples crammed exclusively for wine. They are sweet, juicy, but completely tasteless. And the juice from them under the press (when there are a lot of apples) or just through an ordinary juicer turns out delicious ... But the cake .. tasteless .. I already tried this and that ... as a result, everything flew in compost ..
SvetaI
My apples are delicious, but this cake is still not good.
Mash, you have a lot of apples this year, try to make mashed potatoes from whole - this will be delicious, and this waste - so, a surrogate.
As they say, feel the difference.
SchuMakher
SvetaI, we can dare ...
Mams
I made juice from cherries in such a juicer. A long time ago. Very tasty. And very concentrated. The bones were not removed. Only time to waste, and a lot of juice goes.

They also made apples. Friends once brought us several sacks. So they cooked it. True, I closed liter cans. So it is more convenient to store and drink. And no messing around with banks. I rolled up the hot juice, turned it over, and everyone stood in the closet in an ordinary apartment in the winter.

We treated friends and family. The juice is so concentrated that some even diluted it with some water, they say it turns out too strong. About sugar for apples. If Antonovka - definitely needed. Poured directly into the pan, between the layers of apples. Summer apples are sweet, they don't need sugar, maybe just a little for preservation. She also set a kilogram to cook immediately, gradually throwing the saucepan up to the top. Bones, by the way, do not give bitterness. On the contrary, in this capsule, where the seeds are - there is the most pectin and the taste is better from a whole apple. Therefore, they threw it entirely. If the apples are small, then they were simply cut in half.

Oilcake. I rubbed it through a sieve, cooked it, added sugar. They tried to make some pies with this ... did not like it. Only space is in the closet. They haven't made a marshmallow before, maybe you can really go there. And if you don't bother, then juice is all the most valuable. And delicious!

Olekma
I taught my aunt how to cook grape juice on a juicer. She put the washed bunches whole in a juicer. In winter, I then tried it, without a single gram of sugar from sweet grape varieties, she boiled juice. Sweet, so grape and grape. Delicious!
SchuMakher
Elya_lug, I like it so that I have 6 liters .... Our, aluminum one ... And what does the volume of a juicer mean? Bottom volume?
Elya_lug
SchuMakher, Masha, , so I don't know exactly what this volume is, it seems to me that it is the very container for the berries.
SchuMakher
AleShould the fire be strong or medium?
Elya_lug
Masha, , I bring to a boil and reduce to medium so that the steam rises well. And before it was reduced by almost a minimum and the cooking time was much longer.
SchuMakher
Yeah, I do the same ...
SvetaI
And I do it on high heat, so that the water does not splash out during boiling. This does not affect the quantity or quality of the juice, only the time. The more steam, the faster the process.
SvetaI
Mams, thank you for the idea of leaving the bones when cooking apple juice! I tried it, the taste is good, maybe a very light bitterness is present (if you really, really try to feel it). The time and product savings are very noticeable. I will always do this now if the apples are good and cut with an apple cutter.
