I do this (I have already written in this thread more than once): I ferment 1 liter of cream with Vivo sourdough, I get sour cream, I ferment milk with this sour cream (I get yogurt or kefir, depending on the fat content of the milk and the amount of added sour cream), and with the same sour cream I ferment a new portion cream. In short, one jar of Vivo is enough for me for a couple of weeks, yogurt we take at least 1 liter in two days, or even a day. That is, the first sour cream for three days, I sour milk for yogurt (provided that the sour cream is not actively used for its intended purpose).

And yes, I always sterilize jars, lids in the microwave, spoons and a whisk with which I stir sour cream when added to milk, I must pour boiling water over it, and I wash my hands thoroughly before starting to knead.

There were a lot of cases when the jar cracked when removing the tightly seated lid. For me, these lids are very cumbersome, beautiful, but stupid, for me stupid, since I do not make wine and kvass. But in the production of yogurt and sour cream, I wrap it on top with ordinary cling film. And then the height in the refrigerator cans take up less space. And, mmm, while safe.
