Since last year, my attitude towards tea has not changed. Among the favorites - ivan tea, cherry, blackberry, apple tree, pear, strawberry... This year added almost any "Rustic", especially where there are cherries and blacks. I really like raspberries in Derevensky. I took it as a basis in September, when the fireweed ended.
Discovery become pine shoots unfermented (awesome subtle flavor), snakehead unfermented, bird cherry (after 3 months of exposure it smells magical, but at first it was not impressed). When I made a plum, I was disappointed in it. I even wanted to throw out 2 batches. But the hand did not rise. Now it smells very decent ... St. John's wort has become very good. And at first I completely disappointed. Lipa has improved, but not enough to admire her.
Now by fermentation time... The best Ivan tea in terms of aroma - no more than 12 hours of fermentation. The 24 hour smells less, but is stronger and more tart. All garden and wild plants were not fermented for more than 12 hours. Mostly 4-6 hours.
The new sweating method did not impress... I like the usual way more. The tea is much more aromatic.
Monarda surprised, but with a minus sign. The tea smelled great with her at all stages. And now this smell disturbs me. Moreover, the leaves of the monarda added very little. With her I have 2 batches of "Village" - fireweed + cherry + monarda.
Maybe I forgot something. I will remember, I will write.
Girls, I highly recommend that in May remember about pine and bird cherry, and now stock up on snakehead seeds... Tea with them will be good.
I remind you that this is still an aromatic experience... I will write about taste as it is consumed. I still can't get drunk on 6-hour Ivan tea. And, oddly enough, the burnt, frankly spoiled "Village" - raspberry-cherry-apple tree 1: 1: 1. I already wrote about this tea. I forgot to turn on the top teng of the oven after the cake and the bottom baking sheet with tea was burnt. The paper even turned black. I threw away the completely black tea leaves, and decided to throw out the rest later. It didn't work right away. I brewed this tea for lunch just like that - it turned out to be closest to hand. Her husband tried it first. He said that today some tea is not ordinary and tasty. I thought I was kidding. I tried it - and, really, interesting. I poured it into a container. And now I really like him.
Conclusion: we do not throw away any tea, even if it seemed to us that we spoiled it. Let it stand, he will still work up the aroma and taste.

Light, greenish tea is a light fermentation willow tea. When dry, it is light, and when brewed, it is like black. But very aromatic. I love him very much. And it so happened that all sorts of St. John's wort, pine, apple tree, snakehead came to the fore. They are light. In the rightmost stack, the light color (4th from the bottom) is unfermented pine, and the top one is "Rustic" leaf.In the "Village" leaf, each scent retains its color, does not mix, unlike a meat grinder, in which the darkest color gives the tea, for example, a pear and a cherry ... In the foreground is a lonely box - St. John's wort. And that red color in the container on the left, the second from the bottom box, is a mono apple tree.
