Peel the apples, remove the core, cut into wedges and bake in the oven for 20 minutes or in the microwave for 5 minutes. Wipe through a sieve or mix with a blender into a smooth smooth puree.

Mix 250.0 of this puree with sugar and vanilla. Let it cool. When sugar is added, the puree will become liquid, but will gel when it cools.

We heat the agar until it dissolves, we get the gel in a saucepan. Add sugar to it. There is a lot of sugar, with stirring the mixture will become liquid.

Over medium heat, stirring constantly, bring to a boil. Boil for about a minute, then remove from heat and let cool slightly. While the syrup is cooling, add the protein in the puree and beat at room temperature at maximum speed until lightening and expanding. We get a thick, almost white mass. Pour the slightly cooled, but still hot syrup in a thin stream, stirring with a mixer at the lowest speed. Since the aga hardens at 40 degrees, the resulting mixture is immediately poured into prepared containers, previously lined with parchment. The thickness should be no more than 2 cm. We leave the pastille at room temperature for 5-6 hours (I left it for a day). Sprinkle with powder, turn over, remove the parchment and dust again. I cut into pieces, roll in powder and on a wire rack. we dry for 6-8 hours (I dry for 5-6 days). And voila .... the marshmallow is ready.

Marmalade

0.5 - juice

2 tbsp. l - agar

2 tbsp - sugar

We take the juice and pour it into a cup (it will still come in handy for the syrup). Pour the rest of the juice into a saucepan and put it on fire to heat it. Pour agar into heated juice and leave for about half an hour. Pour the juice from the cup into another saucepan and prepare the syrup, stirring constantly over low heat. After the sugar is completely dissolved, boil for another 5 minutes. Then pour the juice with agar into the syrup and, stirring, over low heat, wait until it boils. After boiling, remove everything from the heat and let it cool slightly, but not completely, otherwise the marmalade will form right in the saucepan. We line the mold or molds with cling film and pour out the marmalade. After complete hardening, you can put it in the refrigerator and sprinkle with sugar. (I left it on the balcony for a day, then cut it and rolled it in sugar)
