But to the technology of fermentation of fruits, not leaves, I have a lot of questions. I can name the "friends" and "enemies" of fermentation. Tea is made into tea by the tannins found in the leaves, namely tannins and catechins, as well as phenolic compounds, alkaloids, proteins, essential oils, pectins, enzymes, minerals, etc. The presence of these substances is most similar to the tea leaf. fireweed leaf. The quality of tea depends on the quantitative ratio of these substances. For example, the more tannins, the better the tea. Traditional tea leaves contain 18% tannins. In fireweed - 20%.
What do the fruits of plants contain is a question ... Therefore, no matter how delicious in its essence the process of making tea from fruits, it is probably difficult to achieve the same result as from the leaves. I may be wrong, since I have not studied the topic of fruits. Surely, there are similar substances in fruits. But is that all?
One of the "enemies" of good tea is excess moisture. It simply interferes with the enzymatic processes. For this, the leaves are wilted before rolling. Experiments in India have found that the best tea is obtained with a dry matter to water ratio of 1: 2, that is, the remaining moisture in the leaf should be 60–62%. The fruits contain a lot of moisture - much more than the leaves. And the fruits are dried for a long time. Therefore, I already wrote to you that if the fruits are properly dried, then perhaps you can get something "tea" from them.
Let me summarize. For tea, it is necessary to choose those fruits that contain tannins and dry them by 50 - 60% before fermentation.
