Crispy charlotte

Ingredients

Wheat flour, premium 1 glass (250ml)
Granulated sugar 1 glass (250ml)
Eggs large / medium 3 pieces / 4 pieces
Medium apples 3-4 pcs.

Cooking method

  • This charlotte was once taught me how to cook by my grandmother's friend Natalya Potemkina, for which she is a huge thank you from all my children to this day, because this apple pie is my children’s favorite apple pie! It is eaten with great pleasure by other family members and acquaintances. It is very simple to prepare and therefore, in the years of apple harvests, it becomes the number 1 breakfast dish!
  • I suggest you try it too!
  • wash apples and cut into large straw (straight with the peel). The Borner grater has helped me in this matter for many years. Fast, easy and only the seed boxes remain.

  • We put them on the bottom of the baking dish with a layer of 2 centimeters, do not be greedy! (If the dish is not non-stick, line it with baking paper and brush a little with butter).
  • Crispy charlotte
  • We put the apples aside and let's do the dough.
  • Beat the eggs with a mixer at high speed into a dense foam:
  • Crispy charlotte
  • Continuing to beat, gradually add granulated sugar and beat until it turns into a thick mass:
  • Crispy charlotte
  • Now gradually add flour, continuing to beat the mass. In the end, it turns out to be thick and viscous, like sour cream.
  • Crispy charlotte
  • Now we distribute this mass in a small trickle in a thin layer (so that it would only cover them) on our apples. And we send it to the preheated oven.
  • Crispy charlotte
  • Bake over medium to pinkish-golden heat for about 25 minutes. Remember that all ovens are different and it is better to focus not on time, but on external signs.
  • Crispy charlotte
  • After removing the pie, let it rest under a towel for 5-10 minutes and cut into portions. It is better to do this not with a knife, but with a spatula, holding it vertically, as in the photo. This time I cut the cake cold, because there was no one to rush me (the kids were in the theater, and my mother, that is, I did not calculate the time of their arrival home), so the pieces turned out to be not very neat.
  • Crispy charlotte
  • Well, now is the time to pour tea and help yourself!

Note

Charlotte refers to flour dishes that are served both as a main meal (for example, for breakfast, dinner, afternoon tea) and for dessert, for sweets.

Charlottes are made from rusks, stale bread, bread scraps, even bread crumbs. More often, however, for making charlottes, crackers or pieces of stale bread are used, which are broken or cut into pieces, soaked in warm milk, squeezed, melted (but not after frying) butter or margarine, sugar, eggs, a pinch of salt are added to the mass.

Charlotte is also prepared in this way: melted butter, sugar, eggs and other products are stirred in a small amount of milk, finely chopped crackers or slices of stale bread are added and left for a while so that the crackers absorb the liquid and soften.

Crackers or slices of stale bread soaked in milk - the charlotte is put in a dish (a gosper, an aluminum pan, a frying pan with a high side, a mold), oiled and sprinkled with bread crumbs. layered with various fruit or curd fillings, put the dishes in a hot oven and bake until a pinkish crust forms on top. The finished charlotte is left to cool in the dishes. Then the charlotte is cut into portions and sprinkled with powdered sugar before serving.

Can I have some crusts?
Merri
Ilona, and in our family they cook charlotte like that, only three apples on a coarse grater. You need to try it in cubes, probably, so it will taste more apple.

I agree it does not affect the taste, if only it is not small! Otherwise, it will turn into porridge, it’s not that ... And then it’s not important in slices or thick straws!

Exactly, exactly !!! So the pieces are mixed with dough and you get a crust on top and a pie with apple pieces under it! Try it!

Charlotte!!! Darling, with a SHORT!
Ilona, great recipe. And what a beauty!
Ilona
Aha Marine, with her! Mine are fighting for this crust! When I often bake a charlotte and mine are overwhelmed, you can get up in the morning, and there the charlotte is already without a crust! Night mice have gnawed everything! And most importantly, no one touched - everyone was asleep! And at breakfast begins "Uuuuu ... she's without a crust!"

There is such a distant similarity! For this they love her!

Ilona
Aha, as if a new crust had to grow overnight!
Husky
ilonnna, take a report on the work done.
I added a curd mixture from the recipe Chocolate curd-coconut cakes from Julifera to the apples. If I don’t fall asleep, I’ll report back to that Temka.

And here's the result. The crust came out very brown!

Illona, thanks for the recipe. The crust is very impressive. My daughter encroaches on her everything.
Ilona
Luda, the crust is really SUPER !!! Well, how not to encroach on this! Mine would have been ripped off without asking while I pour tea into cups!
Now it became interesting to me to try to add cottage cheese, just in the refrigerator.
Svettika
ilonnna, thank you very much for the amazing charlotte! Today I cooked it. Such a delicious, and the crust is super! Please accept the gratitude from the whole family for such a delicious and quick recipe!
Ilona
Svettika, glad you liked it! I am glad to try for the benefit of our beloved bread makers !!!

girls, but for some reason my crust turned out to be soft ... probably set the wrong temperature. What temperature do you bake at?
Veronica
Here I also have a soft crust! And so, everything is very good. delicious! Why is the crust soft ???

Girls, most likely, the wrong baking temperature is to blame for the soft crust (IMHO) ...

although if we draw an analogy with baking meringue, then probably it was necessary to put it at 110 degrees for 20 minutes, and then bake it at 180 degrees. it is a pity that the author did not indicate the temperature regime
Robin bobin
Put it in the oven - wait, sir. The crust is what matters to me. Once I baked just such a charlotte and with such a crust. For years it baked and crunched)). And then suddenly the crust stopped working. In general, I abandoned the recipe for many years because of this. Now let's see.

Can you bake this charlotte in a cartoon?

Can you bake this charlotte in a cartoon?

I think no. We need to bake like a meringue. That is, almost dry. And in a cartoon of a dry crust ... alas ... it will not work.
If the crust is not fundamentally dry, then it is possible in the cartoon.

Can you bake this charlotte in a cartoon?

Albinochka, I baked charlottes in a cartoon, it's scary to remember ...

Charlottes in the cartoon are very good!

They especially love mine with whole stuffed apples ...

Tanyusha I answered you correctly:

Albina
Krosh, thanks For me, the crust is not important. Just for the time being, I like apple pie on yeast dough to taste, so that there is a lot of filling
Ilona
The girls answered correctly, if the crust is not important, then you will get a great apple pie! And just a lot of apple filling!
MariS
How long have I not eaten this charlotte! Thank you, Ilona, for her recipe!
This is exactly what I remember from my childhood and youth ...
With friends, they once cooked it without a mixer, whipping it by hand.
Now it's a pleasure to cook - so much technology will help us!

Crispy charlotte

I cut it with a hot knife and the crust did not break (thanks to the girls - they taught!)
Ilona
Class !!! And I always cut it straight with a spatula, not with a knife (so that the non-stick baking sheet would not be damaged) and cut it hot, well, I will pull it out, stand quite a bit and cut it hot, while the crust is not so fragile!

Charlotte is the simplest and most favorite pie in our family, especially when the apple season begins.
But I do the opposite - I put the apples on a biscuit and add cottage cheese, just sprinkle it with homemade cottage cheese on top (by the way, my husband generated this idea). Cottage cheese gives a tremendous effect - I did not even expect (I decided to listen to my husband, what you can't do for love) and had to admit that he was right. Do not just think that my husband is related to cooking - he only eats.
As for the filling on top (also her husband's idea, well, he loves charlotte), after laying out the apples, they (apples) "sink" a little and the crust is present.
Ilona
With cottage cheese, it's probably also great, it's your pie that turns out to be different, probably not a charlotte. But apparently delicious! And I do not get apples from the very bottom, the dough flows down, and the apples rise up, everything is even, and the top is crust!

Girls, how many degrees should I put in the oven? Is below average 150-160? I want to cook tomorrow.
Mams
I always bake 180. And the crust turns out to be normal, crunchy. The main thing is not to soak it after the oven. Immediately do not take out into the cold, let it cool down at room temperature.

I think yes. The fact is that at that time I did not have an oven with a thermometer. I had an old gas one, without a thermometer (80th year), and the reference point there was by the flame, so to speak by touch, and I was guided by the flour, but in degrees, by no means. Here I will bake this again, see what the temperature is in the electric oven.

Erhan, I bake with convection at 160 gr. , respectively, without convection - 180 gr. ...

Ilona
Does convection produce a crust? Otherwise, I haven't baked anything with a crust in a new oven yet.And in this charlotte, the whole topic is in a crust) It is for me that they fight for it))
Svettika
Ilona, I baked on convection - it turns out. Thanks for the charlotte recipe!
Ilona
You're welcome!!! Oh, what a beautiful cupcake you have on the avka !!!! Vkuuusny !!!
Erhan
Happened! I didn't let her out of the oven until she made me a crust. Charlotte lasted about an hour at 160 and convection, but then gave up.
It turned out very tasty. Thank you all, without the help of the audience I could not have done it.

Ilona
Congratulations!!! But something for a long time ... I sat in the gas oven for 25 minutes. Probably she needs everything de 180. And here I am torturing meringues in a new oven. It does not work. It's so strange that you have to learn to bake anew and it's so sad (((
