You put a container with leaves there, cover it with something warm. On top of the box - a pair of blankets. If there is a good layer of leaves - about 10 cm, then in the tea mass during fermentation there is self-heating. this heat is sufficient during fermentation. I also have 17 * in the house. But such a box saves. Here is a photo of my box, but with yogurt. The warmth remains until the day. and yogurt always turns out. Before sending the container with tea to the box, you can hold it in warm water (30 degrees) to start the process.

And different herbs. usually, do not contain tannins - the main ones in order to make a delicious drink from them. And herbs are best collected not for tea, but for treatment. But they need to be dried, not fermented. And use it as intended, not for delicious tea.
