I realized too late, when it was already problematic to prepare "Fluffy" Ivan tea - the seed pods began to actively ripen and release fluff. But once I still managed to make "White-pink". And I regretted that I had not thought about it earlier, when there was enough material for him.
  • What is this tea made of? Judging by the name and a tiny photo in the price list on Grachev's website, it is prepared from the upper parts of the fireweed flower brushes with unopened whitish-pink buds - 🔗.

  • You can make this tea for about 20 days - from the beginning to the end of June, when flower stalks with buds are just beginning to appear on the stem. At this time, the peduncles are soft, juicy, tender, sweet in taste. And the buds begin to acquire the taste of flowers, but it is not yet as bitter as that of the blossoming ones.

  • Oh, and this is a long process! Collecting flower tops in the meadow, many times I caught myself thinking that the creator of the recipe sells it cheaply. Only some 2900 rubles per 100 grams. ! Grachev does not share the recipe for its preparation, but only offers to buy, enticing those who have looked at his website with inviting phrases. I didn't have any special questions about the technology of making tea. I found all the answers for myself in Tatiana's message and in the price list. I decided to cook 2 fermented tea options: Drying in a dryer at low temperature and drying in an oven in the traditional way.
  • This was not easy to do, since I managed to collect only 300 grams. the tops. And not because there were none. They were, but the process collecting them very long. This process would be much faster in June.
  • As with any tea, first I wilted tops. This stage took me 24 hours.

  • There were very few raw materials, so I had to ferment tea in a large tea cup. I decided to ferment for 3 hours. During this time, the smell has become very strong - the tart smell of fireweed flowers, fruits, honey and meadows!

  • Since I wanted to try another version of the tea, I dried in the oven, starting drying at 100 * with a further decrease in temperature to 50 *.
  • I decided to try the tea immediately after drying. Brewed, as usual - 2 tsp. for 1 glass of boiling water.

  • The brewed tea turned out to be dark and transparent. The aroma is very strong, floral-honey, the taste is bright, but at the same time, soft and delicate. Doesn't taste like ordinary willow-leaf tea. After drinking a mug of tea, a very pleasant and long sweetish aftertaste remains. It does not disappear even after drinking a glass of clean water. The organism reacted surprisingly. First, sweat appeared !!! Secondly, such cheerfulness appeared that despite the late hour, I was ready to redo a bunch of things.
  • Oven-dried tea tasted better. Some "greenish taste" has disappeared in it. But he lost some of the unique flavor. For myself, I decided that I shouldn't "kill" him with a high temperature. Moreover, you cannot make much of such tea.

  • I foresee the question: what if prepare tea from fireweed flowers? You can collect a lot of them. Of course you can ... But it will be a different tea. And I did it when the willow tea was blooming in full force. She did it using the same technology as the white and pink - dried, twisted in a meat grinder, fermented and dried in a dryer.

  • But it was difficult for me to drink it as tea. Ivan tea flowers are very bitter. The stems would save the day, as they have a very pleasant sweetish taste. But as soon as the bud opens, the stem becomes tough and unsuitable for processing in a meat grinder.

I make tea from fireweed exactly at the stage when the buds are about to bloom, but I collect not only the tops, but with the leaves. The tea is delicious. the manufacturing method is reliable and simple:
1.Pack the collected leaves and tops in a plastic bag and put in the freezer of the refrigerator for a day
2. After aging in the freezer, remove the fireweed from the bag, put a portion of the leaves on a cutting board and knead them with a rolling pin (in principle, I do not grind in a meat grinder)
3. I roll a well-mashed portion of fireweed with a sausage and put it in a 5-liter enamel pan
4. I repeat paragraph 2.3 for the rest of the fireweed
5. I moisten a clean white cloth with abundantly boiled water, wring out the cloth so that no water drips from it, and cover the fireweed placed in a pan with a damp cloth. I pre-fold the fabric in four layers.
6. I close the pan with a lid and put it in an electric oven.
7. I turn on the electric oven and keep the fireweed at a temperature of 42 ... 45 degrees for 24 hours.
this process is called fermentation. I control the temperature using an ordinary room thermometer. It is important to maintain the temperature precisely in this interval and not by eye, but with the help of a thermometer.
8. At the end of the day, I take out the pan with fireweed from the oven, transfer the fireweed to a baking sheet, let the fireweed air at room temperature for 2 hours, and then send the fireweed into the oven again.
9. I set the oven temperature with the temperature regulator at 70 ... 75 degrees.
in this case, it will not be possible to measure the temperature with a thermometer, it is only necessary that it be set according to the temperature regulator and obviously does not exceed 100 degrees.
10. During drying, every 30 ... 40 minutes I take out a baking sheet with fireweed from the oven and stir up a mass of fireweed for even drying. The drying process lasts until the mass of fireweed ceases to be wet to the touch.
11. After drying in the oven, I transfer the fireweed to the summer kitchen and dry there for 2 days on a grid
