Ivan tea (fermentation of fireweed leaves) - master class (page 16)

Elena Kadiewa
I started making tea at the very, very end of July, when I got to this topic and now I'm a complete tea-maker! There is not much to do, but VERY much, especially Ivan-tea. My men only drink it. There, when you re-read Temka, you will also read different reviews about the influence of this tea.

Rather, in the field for the fireweed)) I read a lot about him and not only on this site. And I came across this site when I came up with an idea to ferment currants with a like-minded person. I scored in a search engine and here this site with soooo information)))

And from your point of view?
And from my point of view, and from the point of view of all "tea-lovers" already, this is definitely a medicine! But I mostly use mixed herbs with medicinal properties. Here here, for example, described tea "Autumn", preventive. Look above and below the posts.
Elena Kadiewa
And how we are waiting for this time!
And in anticipation of this hour, we are learning to make sour cream, yogurt, sausage, sourdough, all the more, here they will always prompt, help, and if necessary, they will give a magic pendel! And you know, it helps, very much even. And what kind of bread the girls bake!
And if you are a techie, then you can also do the editing, we needed an installer there in the tea gazebo, the fisherman came here.

"Autumn",
We have a problem with cypress)))) Eastern Siberia)))

I read about the fisherman. Give a link to the gazebo

And who said that you have to behave yourself ?!
Seryozha, don't be alarmed, we are peaceful, we just love to be pinned. Visit us at tea gazebo, we drink tea there together and talk about life. Have fun.
Elena Kadiewa
Instead of cypress, a cedar, or any conifers, will go perfectly, there should be quite a bit!
Lina, so etozh Galya was looking for an installer, and I was so current to help her! (Then you will teach me to give links)

or any conifers,
But there is already a pine in the blend. Although pine with cedar is different in smell and taste. Two days ago I came across a young cedar in the taiga)))
Elena Kadiewa
It's okay, something is being replaced by something, although Lina's recipes are extinct, she is special.

I believe you. Everything must be tested. But moderately)))

I read about a fisherman
Now this is discussed in the gazebo, and on business - in topics about tea. About conifers: the cedar was not "measured out", of the other conifers, cypress is in the first place, pine is in the second ...
Elena Kadiewa
I did the village, shoved everything in a row, there were 10-15 plants, and then in the winter bastard, the name is one, and the taste is all different!
Lina, should I send you a cedrush?
Linadoc

Lina, should I send you a cedrush?
Flax, try it yourself without fermentation, but with aging and you will report.
Elena Kadiewa
I wrote that I did it in late autumn, or rather, in winter, cedar + pine, without fermentation, I really liked adding a little bit to the teas.

Good day . My name is Sergey. Since last year I have become interested in fireweed. I collected it and dried it. But recently I learned that you can ferment. I read your description of the collection, fermentation and drying - and got sick with this case)))) I brew and drink herbal tea from dried fireweed. Sumptuously. Podsk What is the difference in usefulness between dried fireweed (grass) and fermented?
turner, Sergei, welcome to our tea themes! We are very glad to see you! And the fact that you "got sick with this case" - and even more so!
While I was away, our girls have already explained everything to you! Thank you, Lenochka, Linochka, Tonya, Mary Poppins!
I'd like to add that when making tea, we first of all pay attention to the taste and aroma of tea, and secondly - to the benefits. That is, we are doing rather not a medicine, but a tasty and aromatic drink. But Lina (Linadoc), as a specialist, has already noted that the benefits of this tea are very tangible. Over the winter (and I for 3 years) everyone was able to make sure of this. Goes soft cleaning the whole organism, normalization of the work of all organs. But with simply dried fireweed (for me personally), all these processes are very powerful, which is sometimes not very good. For example, I cannot feel that line in the dosage that is easy to break by using dried fireweed herb. And in fermented Ivan tea, this line is erased by itself. And you can drink this tea as much as you like!

Good day, Lyudmila))) I am also glad to join your tea-maker community))) Thank you girls for really supporting the conversation. I have tea-making experience only on paper))) But I'll catch up)) Tell Luda, somewhere I read that the first spring fireweed is the strongest saturated with usefulness. As they say, tea from such raw materials turns out to be aristocratic.?
Elena Kadiewa
Here, probably, Lyudmila wrote that tea from the first leaves of fireweed is the best, the most aromatic, it is also the easiest to process. But we also made tea from the last leaves, hard and semi-dry, it is harder to process, but it turns out richer.
Fireweed in general, of all the leaves, the most grateful in processing, make it even leafy, even granular.

Good afternoon, Lena)) Now it’s interesting that from the last leaves Russian tea turns out to be more saturated)))
Elena Kadiewa
Of all the late leaves, the tea turns out richer and richer, but how difficult it is to twist them! that's why we freeze them, but this is in "rustic" or in mono teas.

turner, Sergei, yes, probably, you have read here about the aristocratic nature of spring Ivan tea. I wrote about it.Or maybe they found it somewhere else on the network! I posted the recipe for Ivan-tea in the middle of June last year, so while the girls were going to make tea, the leaves had already become a little coarse. I myself start making my first tea at the end of May. This tea cannot be compared with anything. It turns out to be very refined, with an indescribable taste. During storage (dry fermentation) by the middle of winter it gets a crazy smell. And this smell only intensifies over time. And, of course, the taste is "fattening up". By the end of July, the fireweed becomes coarse. Its taste becomes stronger and more tart, and the aroma changes towards a rougher one. At the end of August and September (if you can still collect the leaves), the tea becomes simpler, but does not mean that it is bad. I love fireweed any time of the season. But all the same, the emphasis is on June-July. And at a later date I am engaged in "Village" and mono-teas. By this time, the leaves of garden and other plants are gaining strength, and tea from them turns out to be much richer in aroma and taste. You just need not to miss the currant, since it is in its very strength before harvesting. So, Sergey, we have work for the whole season.

Wow, how in life)) Is there work? Is there a rest?)))
It has become so with us now. And a week ago in the topic "Fermented teas from the leaves of garden and wild plants" we talked about everything we wanted. But then we realized that we litter the topic with information that prevents those who came to the topic to make tea. Therefore, we decided to create a "Tea Gazebo" for this. So, Sergei, welcome to all tea topics, including the "Tea Gazebo" https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=415592.0

mono teas
Good day. Do not consider me stupid, I just clarify so as not to ask stupid questions in the future. I know that mono means -one. Mono-tea is a tea made from one kind of flavor ??? In the future, if desired, can mono-teas be blended?))))
Elena Kadiewa
Quite right. Some leaves are difficult to twist in a meat grinder, so we freeze them or twist them with others, which, as it were, "lubricate" the meat grinder, facilitate its work. Ivan Chai is in the lead here too.

turner, Sergei, check your health! As a teacher I tell you - there are no stupid questions. So, ask about what and whenever you want, we will always answer with pleasure.
The girls have already answered you. I'd like to add that mono teas turn out to be great, and then they can be blended with other mono teas. But a mixture of different leaves for the preparation of one tea reveals each flavor in a special way. These teas (we call them Village) are very good! I would say that mono options are much better. Again, I do not take into account the fireweed, because this is a special tea. Good both in the Village and alone!

Good evening, Lena)) After freezing, the leaf seems to begin to float? Does it become watery? Therefore, it is easier to twist in a meat grinder?)))
Elena Kadiewa
Ivan tea does not need to be frozen at all, it spins wonderfully after drying in a meat grinder and hands (I didn’t twist it myself, late I started making teas, so I have a whole meat grinder). Our experts will answer about the structure of the frozen sheet.

Quote: Turner

turner, Sergei, no, any leaves, including fireweed, "do not float" after freezing.Freezing the leaves softens and thus makes it easier to roll them into rolls between your palms (for loose tea). Or - make it easier to twist the leaves in a meat grinder. The leaves of plants such as raspberries, cherries, currants, bird cherry (a number of others) are very difficult to roll into rolls and twist in a meat grinder after drying. Freezing greatly simplifies these procedures. And the longer the freezing lasts, the better. Our leaves lay in the freezer for several months.
Freezing ruptures the intracellular membranes, allowing juice to be released from inside the leaf. But this juice is very small for the leaves to float in it. The leaves just get slightly damp.
And as Lena already answered, fireweed is the most malleable material. he doesn't need freezing. Withering only.

and I had Ivan's tea without withering, and through the refrigerator and then twisted with handles .. excellent tea. Please do not throw heavy slippers at me, only light ones.

These are the consequences of the fall

Well I exhibited a beautiful picture of Ivan-tea + other perfumes all in flowers (with a bunch of other flowers).
Elena Kadiewa
Hello! And honey was made from it, and dried separately and with other flowers! It’s as if someone’s head on the roost was shandarah! And that's right, you won't eat someone else's shampoo, and most importantly, without a menu.
Galina Iv.
I made honey and added to Ivan's tea, but in order to brew separately ... but what a beautiful one when brewing (I mean flowers)
For some reason, I thought that they were added for aesthetics only.
Mary Poppins
I froze ivan tea for both leaf and granular. Therefore, I will first put the packets in the freezer, and then I decide what to do with it. For leaf tea from fireweed - from the freezer is generally very convenient! I'm in these topics about freezing Ivan-tea and have read a lot of sausages spinning very quickly!

Galina, tea from the same flowers ?? You also use pineapples with hazel grouses there, right?)
I only add that to tea, mainly at my tastings or with me when I wrap it for guests))

Girls, last year I managed to make tea quite a bit from fireweed, and the aroma and taste are incomparable. on the eighth of March, relatives brought the purchased Ivan tea, they brewed it and they drink praise. and then I brewed mine and a little later said what kind of tea, so they did not believe it. if you make hay with us it will be tastier than buying for that kind of money, don't know what. this year I will try to make more of my tea preparations. Anechka, very beautifully designed the packaging of tea, teach such beauty to do.
