Ingredients

Wheat flour 3 tbsp.
(415 g)
Salt 1/2 tsp
Sugar 2 tbsp.
Softened butter 240 g
Large eggs 2 pcs.
Baking soda
(I took 1.5 tsp.)
2 tsp
Vanilla essence
(who doesn't have vanilla sugar)
2 tsp
Very ripe bananas
(325-350 g of pulp)
4 things.
Sour cream
or natural yogurt without fillers
1 tbsp.
(270 g)

Cooking method

  • Sift flour, soda and salt and mix.
  • Beat butter, add sugar (vanilla sugar) and whip all together into a fluffy mass. Add eggs one at a time while whisking. Add vanilla essence.
  • Mash bananas well with a fork and mix with sour cream. Bananas should be very, very ripe. Better - overripe, almost with black koruzha.
  • Add bananas with sour cream and flour with salt and soda to the butter mass, stirring with a spatula without fanaticism. Knead to a homogeneous dough. Do not use a mixer. All the slightest preserved "strings" of banana pulp just whip into a liquid and spoil the texture of the finished product.
  • Place the dough in a greased savarene tin (with a hole in the center). Knock the mold on the table (if it is silicone, shake it, lifting it by one edge) to release air bubbles, level the surface and bake for 75 minutes at 180 degrees. The cupcake rises a lot - about twice, so calculate the volume of the form.

They advertised it to me, they said it was very tasty. I could not pass by, I prepared it. I couldn't wait for the first bite for a long time - I had to let it cool down.
Quite by accident in the market I came across discounted bananas. Overripe, overripe, already black. I clung to them so happily that the salespeople probably thought I was in a financial crisis. Let them think. They don't know what kind of delight can be concocted from these unattractive bananas.

The color of the muffin flesh will vary depending on the banana. Strongly ripe bananas give it a chocolate color. Mine were black, but not enough yet.

Strong banana flavor, slightly damp texture. Delicious. You just need to let it cool down to at least a warm state.

This is the most delicious banana muffin ever! baked half a portion in a very loose count. Well, under the remnants of what was, I adjusted. I strongly suspect that my dough turned out to be thinner.
