Ivan tea (fermentation of fireweed leaves) - master class (page 24)

Lily, and collect it until it blooms, it is weak now!
Kokoschka
elena kadiewa, thanks, okay tomorrow I'll go see ...

For some reason it seems to me that with fireweed a 3-hour fermentation will not work very well.
Veronica, I did 3 hours in the summer, in July. The tea was great. probably this trick will not work with young fireweed.
niamka
And I have joy: girl_claping: Yesterday's fireweed tea became tastier and darker. All day I lay in a jar and became so fragrant, berry. It smells of strawberries, and some other forest treats. Moreover, the aroma intensifies right before our eyes. Brewed up - not at all like yesterday. Even in a glass it smells like berries. And the taste is more intense, and the color. Not a hint of grass.
lappl1
niamka, well, I'm very, very happy for you! And in the fall you will not recognize him - it will be even better.
Kokoschka
lappl1, Lyudmila, and in your recipe it is indicated that the collection when it blooms ...
lappl1
Kokoschka, Lily, everything is correct! But we decided to try to make young Ivan tea as well. He's different. You can wait for flowering. And we can't wait any longer.

Ludmila, thanks for the advice. I have already asked my son to pick more fireweed, he is now at the dacha. I want to try to make a granular one.
lappl1
niamka, Natalia, to your health! Make tea a lot and different - spring and summer. And even autumn. You will see that there is never a lot of tea. anyone will confirm who made tea last year.

That's for sure. I myself drank a lot of my last year's tea, although it turned out to be weak fermentation, it tastes like green.

I subscribe to every word! Sometimes it was even embarrassing when someone comes to visit - and you already cannot "treat" Chayk with you ... it remains only for yourself ... and for a couple of seeds. The daughter-in-law has already complained today that there are only raspberries and currants left, and today Vanechka has finished all over!
lappl1
Borisyonok, Helen, I am also ashamed that I could not send tea by mail to some of our girls. Well, I have practically no old Ivan-tea left. I gave it all away, and kept a little for myself. But there is still a lot of tea from garden scent.
paramed1
Luda, so I'm young and meant. Maybe because it is more juicy and fermentation should take longer? Do not all the substances have time to react? I'll try for 3 hours anyway. I didn't do it out of summer either. I'll watch the process. We need to see how the color of the raw material will change.
Borisyonok

And I have almost no "garden" left! True, I did it a little ... and gave it only to "especially close ones"
lappl1
Veronica, the smell at the 3 o'clock is awesome. But it seems to me that I am jumping to conclusions. He hasn't even been in the box yet - it hangs in the bag. But I still ferment longer - 12 hours. And it seems to me that juiciness has nothing to do with it - we dry it to the desired state.

And today I did a three-hour one, I never caught the smell. Well, nothing, winter is long, we'll see.
Girls! I made the first tea after 5 hours of fermentation, then after 7 hours, and the last after 12. I did not feel a strong smell during preparation, but yesterday, having brewed freshly made tea, I enjoyed drinking it with sweets. Today I mixed everything and put it in a pillowcase. Now I'm sitting with a cup of tea and trying to figure out the taste .. tea with a pleasant smell, dark, astringency has appeared, something resembles a compote with prunes ... I find it difficult to compare with other teas, I have never tried it, but the taste is unusual, pleasant.
But yesterday I asked my husband to mash the leaf, so after 10 minutes, he returned the bowl back to me and said that he had earned corns .. Therefore, I left it for fermentation, I think it will stand for another night ..
lappl1
Jouravl, Nadia, of course, wants to try the tea right away. But I, apparently, was the most patient of all - I waited a month. You will see how he will delight you in the fall, if he stays.

Y-yes ... Not every man can withstand such monotonous work. And tea, of course, let it still stand, make it in the morning.
Tricia
Lyudochka! I tried my yesterday's tea, although it was scary to run into a silo and a broom.
There is no smell of broom and grass at all, which made me very happy! There is no sourness, neither in taste nor in smell. The husband says that the cool tea smells like dry strawberries / berries from the jam. I still doubted, but now I myself feel that it smells of something pleasantly sweet-fruity. The brew color is not very dark, the infusion is not very thick, but very pleasant. I am very pleased! I will hold it in the "air" for another day and seal it in a glass jar. And there I'll leave it for a month or two.
I was convinced of my intention: while the leaf is tender, I will not grind it, I will knead it with my hands and ferment for at least 30 hours.
lappl1
Nastenka, Well, thank God! And then - broom-hay ... You are grounded in theory, so you can't fail to make tea. I am very glad that tea suits you and you are full of plans for this tea season. Make tea for health and with pleasure!

Girls, well, today I took Ivan-tea ... it turns out he is already not painfully small, I thought he was still very little, but he ... almost like a summer one, just not blooming, like spring is late, not on we live in the south, the border of the Moscow and Tver regions, I was even upset that I was late, but I got it anyway, and I got a lot, as always, well, I can't do it in small batches ... I’ll pick it up like that, sat for two hours, then cut it off, dried it overnight I put it on the sheet, now I'll turn it around, maybe at night, in the morning I'll see how it wilted, now it's already warm, maybe it will. there will be a problem with drying again, it will be necessary to divide it into several dryers, I'm afraid to re-ferment the rest ... I'm already afraid of everything)))) I want delicious tea like all of you girls !!!! And another question for Lyudochka and the girls who made country tea, specifically, cherries. I did a lot throughout the autumn, almost until the frost, I vomited and asked my son to help. Girls, how do you pick leaves from trees? My son, of course, tore as quickly as possible to get rid of my mother, holding the branch, tore off the whole branch with the other hand in one motion, I thought back in the fall if this was not harmful for cherries ... but now I see that on the bulk of the lower branches just where we tore, basically, there are no leaves, respectively, and flowers too, apparently something with the bud, we damaged it ... That's my trouble. Girls, how do you tear leaves from fruit? after all, they do not need 10-15?

I cut with scissors, leaving the leg on the tree. And so I cut from my own and from strangers.

ksyusha1997, I rip just like your son. These cherries do not bear fruit at all (neighbors). They want to cut them down, but they haven’t cut them down yet, because the construction site takes them all the time and they gave me these trees to be torn apart. They did not bloom before me, they do not bloom now. But she cut off all her apple trees every year - without ceremony. I have more than 20 of them. They bloom profusely every year, not responding to my actions.

I don't know how to do it right, but I think that damaging the kidney is, indeed, fraught. Itself always tore, pinching off with a fingernail. Yes, the nail, of course, sometimes broke, but I feel sorry for the tree more
Jouravl
Today I caught this crazy scent !!!! Dried the leaf, after almost 2 days of fermentation! The smell is sweet, something fruity. Well, we perceive all smells in different ways - like colors - remember the dress is gold or blue
I realized that it takes more time for fermentation, even when scrolling through a meat grinder.
And here is a leafy one, even if it was cut somehow, and maybe somewhere heterogeneous (there were tops with stems)

If you take a branch by the tip and tear off the leaves in one motion against growth, the buds should stay in place. The cherries on my site are in the same strange state with the lower branches, but I didn’t take the leaves off for tea, she’s small. All summer she was picking off the neighboring apple trees - now they bloom so that you can't see the branches. It is difficult to damage the kidney, it is either there or it is not, that is, it was broken. And this does not happen when the leaves are removed. The main thing is to keep the buds that form at the end of the branch, the buds of growth.
Omela
Nadia. very beautiful leaf turned out!

Quote: Jouravl
Realized that it takes more time to ferment,
That's how we are all different. Now dry, fermentation for 8 hours. forgot about the leaves. had to twist in the night. So this is not at all the same aroma as with a 4-hour fermentation. Weaker and less pronounced smell of "perfume".

shl. girls, and you do not cut off the fruit legs? twist with them?
Pancake
Girls, I quietly envy you here ... in terms of the amount of fireweed collected ... and I just go to my six bushes and look ... it is blooming right now ... my hand does not even rise to pick a couple of leaves. .. I will wait until it grows ... I have to at least roughly estimate what kind of tea it is ... but the fruit leaves are already drying up ...

Jouravl, Nadia, the tea looks amazing! Congratulations. This is how you will find your version of tea - by choosing the method of processing the leaf, the time of fermentation. And in the summer, there will also be cool tea, more tart and pronounced. So don't relax, everything is still ahead.

Ksyushaand I went back to the 12 hour fermentation. and the smell came from somewhere. but I already have almost a meter long fireweed, the leaves are large and darker than young ones.

Ksyusha, I do not bother how it happened, and I do it. Only on currants, raspberries and strawberries I try to pick it off, but this is near the autumn leaves, and now you can not do this, they are not very good yet. tough. and in a meat grinder everything will twist.

Pancake, Sveta, flip a couple of pages back. you will see in the photo how the growth of lateral shoots in fireweed begins, if you break it off now. It will only be better for him - a lush bush will turn out instead of one stem. and, of course, it needs time to grow. but the main thing you did is wait for flowering, which means that the plants have taken root.

Oksana, and I, just like Lyuda, will break loose, except for currants and raspberries. I collect them immediately without petioles. Everything else scrolls nicely.

lappl1Thank you very much, Luda! I came to this quite by accident. I want to say Many thanks to Natasha Kalmykova which buzzed all my ears, about how delicious it is! Omelochka-Oksana, who treated Natasha, and of course you People's tea guru... Without you, I wouldn't have succeeded ..

Shl. Yesterday I dried the stems, it looks like straw for me ... but the taste is not bad, my husband neatly put everything in boxes and said, this is for me ...
We'll have to twist it again from the freezer and ferment longer ..
well, he is a lover of herbs. Our entire bathhouse is filled with dried herbs from St. John's wort to celandine ...

Girls, take them to your warm company. All winter I prepared theoretically and now ... I waited. When I was ready to go for fireweed, there was information on TV that we saw a bear 22 km from the city (Surgut), so we drove in this direction. It's good that fireweed grows in an open place, I would not dare to go to the forest. Probably out of fear, she layered three bags, then went through 4 hours until the night, but almost half still remained and I left it in a tied bag overnight, in the morning these leaves became slightly damp, warm and began to smell like compote, I picked them up, finished them and twisted them on fermented in a meat grinder for 5 hours, when it dried, it seemed that it smelled like sorrel pies, and now in the pillowcase the smell resembles a mixture of compote with the smell of brewed henna. Maybe the leaves that have already begun to ferment could not be dried additionally? Has it spoiled or is there still hope?
lappl1
swamp, welcome to the ranks of tea maniacs! Everyone who comes to us voluntarily cannot leave voluntarily. So let's make tea together.

swamp, such a method, when first whole leaves are fermented, and then twisted, scientifically is called double fermentation, but in our opinion - the "Sweating" method. Someone likes this tea, someone is delighted with it, I did not like this one. I did it a couple of times and didn't do it anymore - I like the usual method with one fermentation more. Do not throw away anything, the tea will still be infused until autumn-winter.

lappl1, Thanks for the support. I will experiment. Our gardens do not grow, the climate is not the same, but the fireweed is like mud.
natushka
I went to the forest today in the garden, did not find a bush of fireweed, only I plucked two bushes near the fence of the neighbors in the garden. I collected Victoria leaves, pears, some raspberries, I will have to do everything together.

Girls, help out! advice is needed. Yesterday I collected fireweed in the afternoon, by the evening it was still fresh, left everything until morning, in the morning in a meat grinder and in a glass pan (for 5 liters, there was a lot of raw materials), for fermentation, at about 10 am I laid it. Three hours later, the smell was very strong, but grassy, I decided to wait. It is already evening, the smell has weakened, but still grassy with sourness, I put my finger in a saucepan, it was a little warm there, and by evening everything had cooled down. Home is about 20 degrees, and how am I now? put on drying? or in a bowl of warm water for further fermentation?
ksyusha1997
Oh girls, and of course Lyudochka, and I for help! So it started ... the season !!! The Ivan-tea collected yesterday has dried up, now I would like to twist it, but before 19 o'clock we urgently need to leave. What do i do? I tried to just wrap it in the same sheet, it immediately became warm, I got scared, I don't want double fermentation, I want 12 hours like Lyudochka's. While I put it in a bag open in the refrigerator, I'm afraid to ruin it ...at least cancel the trip, although neither one nor the other, dry at 3 o'clock at night or what? pets generally will touch me ... What to do, girls, help !!! I don’t want to freeze, like, if you twist it in the evening, then why ???
lappl1
ksyusha1997, it is possible in the refrigerator, or you can cover the leaves with a thin layer of another sheet without folding into a sheet. But even in the refrigerator they will not have anything - the temperature there is not suitable for fermentation.

Girls, help out! advice is needed.
svetn, Svetlana, you can continue fermentation by placing it in a bowl with warm water (not hot), but you can already dry it. If the house is 20 *, then it was necessary to wrap the pan with the mass in blankets, then due to the self-heating of the mass, this heat would be preserved. But this had to be done at the very beginning of fermentation. I added to the recipe yesterday, take a look. And the smell will not go anywhere - fermentation has already been going on, which means that you will feel it during drying.

Please describe your feelings to me
I, yesterday at 23 o'clock rolled the rolls after drying and freezing and put a bowl with ivanushka on the curbstone, near my bedroom, at night, at 2 o'clock tea began to smell so strong and harsh that I woke up and urgently took it to the kitchen. Of course, at night I did not dry it, but at 8 o'clock in the morning it no longer smelled so piercing.

And I'm with a question. Narvali today with Vanyukha (son) of ivan-tea with stalks. Now you need to cut it all off or can you dry it up like that?
lappl1
Quote: olma
Now you need to cut it all off or can you dry it up like that?
olma, Olga, must be cut off from the stems, since there is no tannin in the stems. They are, of course, useful, but they will not give taste and aroma to tea. In addition, they have a lot of juice, they will dry out for a long time. And the leaves will dry up during this time. And excess moisture damages fermentation.
Soon the fireweed will grow up and it will be easy to collect it.

but at 8 o'clock in the morning he no longer smelled so shrill.
Lucilia, and I again had a strong aroma during the entire fermentation time. Today the batch was fermented at 12, 14 and 16 hours. The smell is very strong. I think this is due to the fact that the leaf has become larger and aromatic substances have begun to accumulate in it.

Actually, I was going to send the stems into compost, and put the leaves into tea. I just don’t know if the stems will let the leaves dry normally? Well, what really, it's time to sleep anyway. The leaves are in the annex, there are now 10-15 degrees, perhaps they will not even begin to wither.
This is the second batch of leaves from the first one that turned out to be incomprehensible tea ... Well, it's not enough. I fermented in a container with a tight lid - the mass was warm, then I began to put my nose there without end, I did not feel the smell change, after 8 hours I put it to dry, also without a special smell. But today, a day later, it smells very nice in the pillowcase. Freshly dried, I brewed it .... and now I will endure at least a week, otherwise I'm afraid to be disappointed.
