Lyudochka, will they send it by mail, or is the mail also far away?

I don’t know how much to ferment.
Oleg6 - 8 hours is enough! It's very interesting what you can do. Will wait.

Allochka, mail is also almost inaccessible to us. Everything is very difficult. In general, I will manage it for now. Thank you for your concern!
francevna
Luda, if it keeps fresh for longer and longer in vacuum bags, I don't understand at all, it's better for fermentation of leaves.
francevna
I went to reread about fermentation

if it keeps fresh for longer and longer in vacuum bags, I don’t understand in any way, it’s better for fermentation of leaves.
Yes, I only wrote in the comments about anaerobic and aerobic bacteria. The recipe was not loaded with this theory.
And in the vacuum apparatus it is stored longer and longer, because there is no source of oxidation and, as a result, damage - oxygen.
Galina Iv.
vbrv, what is your result? we look forward to, let's hope for a positive result.
vbrv
Greetings to all. Yes, it seems, the tea has not disappeared, but I have not tried to brew it yet.
All night until the morning he dried in two grills. In the morning I fell asleep, ran away on business and somewhere from 11 am on land.
The first basin has dried. It turned out 1355g of tea leaves.
There is also tea leaves in the bucket in one more basin. The raw material is lukewarm, there are no unpleasant odors yet.
Kimaryu in 20-25 minute intervals between approaches to the grill.

Now I read it, maybe I'll try to dry it in a frying pan.
Is it necessary that it is thick-walled? I have a cast iron one, but it has low sides - a pancake maker, I'll try it in it.
And there is also a thin-walled one, but the high one is a stewpan, I don't even know from what, with some kind of coating, it probably won't fit.

Later I will write how much it turned out on the clock and temperature.
francevna
vbrv, for the first time dried in a high thin-walled frying pan, you cannot leave it, I was a little distracted and burned the granules, black tea turned out. And then dried on ceramic with a thick bottom, it turned out well
Galina Iv.
vbrv, I really feel sorry for you ... is it worth such suffering, without normal sleep. Collected the package-fermented-dried! Why bags? Do not be offended by my words, but I honestly say that I see no point in cooking at the same time with "production" volumes.
vbrv
As the girl wrote above, I have neither a summer residence, nor a car, so getting to tea leaves is a big problem for me, and when I succeed, I collect it until I get bored. And collecting leaves for half an hour, an hour or an hour and a half is not a big difference.
Plus, it's scary to spoil it. This time I will have two batches with a sufficiently large difference in fermentation time, I'll look at the differences.
Well, last year only one of 3-4 three-liter cans survived. Let there be a reserve.
The main thing for me is to write down all the parameters in more detail, so that later I can repeat it.
Me and cooking as well. Nothing is remembered. I paint all the recipes for myself by grams and minutes.
Pancakes I can't win for a year. 2 times out of three I pour the dough into the toilet until I have found reliable proportions, with a regular positive result.

Well, anyway, most of it will be distributed for gifts, I myself do not drink it with horse doses.
Galina Iv.
vbrv, well, then it's understandable, but if there is a place in the freezer, I would still throw it there, and then gradually fermented and dried. Good luck to you!
lappl1
vbrv, I look forward to hearing from you, as from the Ivan-tea front line. I am worried about you and your tea. But I am sure that in the end you will succeed. Yes, do not sleep for a day or two, but then, in winter, you will praise yourself.
It is correct that you take notes about your tea. This way you will find the best conditions.
Galya wrote to you about the freezer correctly. All raw materials must be wilted, then put into bags and placed in freezers - your own or your neighbors and friends. And then in a few steps without straining to make tea.
In general, we keep our fists for your tea! Good luck!
Omela
I have bloomed everywhere. Lyudochka, remind me, where did you write about the pillows ?? Pooh heaps.
lappl1
Ksyusha, somewhere in the past year, I don't even remember where. But I remember the essence. Need to take pillowcases. fill boxes (not open) in them, sew by hand, turn over by hand seam down. Hang in the sun for a couple of weeks. During this time, the boxes will open. Then shake the pillow, the boxes will fall down, and the fluff will be at the top. Gently pull out the thread, remove the empty boxes, sew up again.
But I am afraid that it will not be possible to do it any more - all the boxes are open. Last year I could not collect them - I choked on the fluff and ran away.
Omela
Ahh .. Look how it is .. Without boxes, but I thought all together, zip up and take it off. Not then we delete.))

I say, we missed this time. Again a year to wait ... As if not forgotten: girl-q: b ...

Ludmila, and in my little plot, among a heap of dry branches, willow tea blossoms in a second circle. Many flowers, tops and leaves are green. As I understood this is new shoots. True, the leaves are not large, but clean. Only now I can’t get to them. Drying, preservation, jam, etc.

I’ll tell you a secret, I got chickens and ducklings by the end of summer. Now I have to cook in the country until winter.

Can you ferment in a vacuum?
It's a pity, just right now I reached the Internet. DO NOT! This process includes 2 sequential stages - oxygen and anaerobic. Without the first stage bullshit tasteless the unfinished taste will come out. Do not invent, do as people have done for centuries. And you will be happy.
lappl1
Linochka, Well, thank you ! She came and put everything in its place. I also almost wrote, but not as professionally. Yes, first you need to oxidize with oxygen. well, and then the anaerobes begin to work.
I wonder what happens in the experiment?

Tata, yes, it is from the roots that have grown this season that shoots have gone. Last year I also had such a young plot in September. For a long time I made tea from it. So, all things cannot be redone - make at least some more tea. It will turn out cool.

Oh, so that's great! How I love all animals. chickens bring such joy. nothing, sit until winter. You will still have time to name yourself in the city.

Hello everybody! I am new to tea making. Take me to your friendly company. I came to the forum precisely because of this recipe. The master class is just excellent - everything is described in detail, everything is chewed, supplemented with nuances. Wonderful!!! Many thanks to the author. I made my first portion at the end of July, and I couldn't stop! Everything worked out the first time. I tried to brew it a week later, the taste impressed. Optimism increased and I began to look at the bushes and trees. I tore everything up, at myself and at my neighbors ... In short, I made different ones to try. We will compare and evaluate in winter. Once again I want to thank the author for a great master class !!!
P.S. Sorry for no photo. I will come from the dacha - I will make a complete photo report.
lappl1
tat23, Tatyana, welcome to our friendly tea company! If you knew how pleasant it is to read, that you have made the tea, and that the recipe is written clearly and easily. I am very glad that you were "infected" with these exciting and useful things! Stay tuned, come to the Tea Gazebo just to chat about non-tea topics. It's very warm and cozy here. An active link to the Gazebo under each message! Thanks for the report! I was very happy to read it.

lappl1, Good day. Recently I came across this site about Ivan-tea and I can say that I am very moved. I have not read it yet, this information would have been about 7 years ago, when I started experimenting with Ivan-tea. More than a 3-liter can I have not harvested all together - and HERE such volumes - wow! Thank you for the reading and recipes, I have already adopted something for myself, in particular, I managed to cook Vanka's fluffy with yellow leaves. I do not know whether they wrote here or not, but tea is obtained from both yellow leaves and from red ones, and the tastes differ. Pressed tea also has its own RAISE, it takes up less space, and the volume is saved (this is for those who do not know what to do with "extra tea")

Tell me more about the pressed, it's interesting!
There is no author of the recipe yet, but we will try not to lose face and answer. Don't you make country teas? There are links on the first page of each recipe, read it.
How old is your son?
Lyoshka
elena kadiewa, Son 3 years old, named Egorka. About the press: after fermentation, I fry in a cast-iron pan with stirring, it takes about 20 minutes, then I squeeze the pancakes until juiced, the color turns out to be brown. After drying in the sun (on the window) or in a dryer, I look there in time until it dries completely (without the sun on the window, it can lie for a week). The taste is pleasant prunes - when the compote is so cold so straight, the color is very rich and dense (those who are familiar with black pu-erh will understand this color) As time will be, I will complete my goal, otherwise my son should be put to bed. We now have 22.12 Perm Territory
Lyoshka
Did anyone write about the steamed sheet?
Elena Kadiewa
Okay, good night, son, sweet dreams. I have a nephew Yegorushka.
There are links on the first page, look, there are a lot of interesting things, you mean the method of sweating? They soared in pots, but we need to read the topic (horror! There is so much written there!)
Lyoshka
No, steamed, then fermentation to the desired color, then drying
Lyoshka
Somehow, jogging everything, ask, if I know anything - I will answer I went to put my son to bed, probably I will fall asleep myself

Alexei, very interesting - about yellow and red leaves. This, if I understood correctly, then, when the fireweed finally bloomed and threw out its seeds?
Elena Kadiewa
Ol, a new idea?
Zachary
Lyoshka
Zachary, read about the pots, remembered my first taste of tea - then it was a blackberry leaf. Creeping wild blackberry, scored two handfuls to "try", the leaf languished in the cooling oven, changed from green to brown-orange. When drying, there was a funky smell of strawberry jam. The tea tasted very pleasant with a slight sourness. By the way, a raspberry leaf can be made in the same way, it turns out to be quite moist and pass it through a meat grinder onto the granules - and for drying! I read it in some cookbook - there is such a method of making tea from the leaves of wild plants, plus the root of carrots or angelica was added - everything languished in a Russian oven, and then dried. The carrots were removed - and for the boys!
Lyoshka
MariV, Fireweed may not bloom, this is because of the weather - if closer to autumn it is warm, sunny, then there will be a lot of yellow, orange, red leaves - whole islands, or even fields of fireweed, as we had last year. And now, for almost 2 months, the rain has been pouring out and it is still dripping, so Vanka cannot be found all sour and green, let alone a colored leaf. And, yes, if the fluff flew off, then it is advisable to sort out the leaf from the fluff, otherwise it will smell burnt when frying - this is not a "fluffy"

Ol, a new idea?
Lena, if good tea made from these seemingly dead leaves - why not try it?
Alexey, we seem to have green leaves; I'll go and take a look today.
Lyoshka
Steamed: The Chinese say "kill the greens", that is, remove the hardness and excess oiliness from the tea leaf for further processing. We take a sieve or a colander and put it on a saucepan in which water boils, pour a whole or cut Vanka's leaf and mix it with your hands (don't burn your hands, you need a little steam, so ..), the leaf will change color to "khaki" and become sticky, after which - pre-fermentation and drying. Which one is either black or green. Last year I made a liter jar - I drank it like a green Chinese without bitterness, and left a sample (a year has passed), so in a jar it changed from green to black (dry post-fermentation) - and the taste is raisin
Lyoshka
MariV, No, the leaves are not withered, the whole is good - only colored. You need to look near the river or in a ventilated place where the sun is - there are red leaves, they grow on the top, and not the dried ones below.
MariV
Well, my plantations are not by the river. And there are enough drafts.

However, I went and collected it.

Alexey, are you talking about this?

Ivan tea (fermentation of fireweed leaves) - master class
MariV
I'll start sorting, otherwise there are fluffs.
Lyoshka
MariV, Yes, about that. I wanted to drop last year's photo, but something doesn't work
MariV
So he still exists in the suburbs.

Poor Ivanushka! In winter, he will probably have peace from crazy tea-makers!
