The other day I became the owner of the Panasonic SD-2051 bread machine. Great thing!
All is well, the bread rises and is baked. But, there is a small but.
Whatever recipes I try, whatever flour I put, it still works
muffin-like bread. Delicious, but more like a loaf than bread, and slightly sweet.

So far I've tried four recipes. Basic, Basic Fast, French
and, from this site, the main one with the addition of rye flour. All bookmarks are strictly according to recipes.
Thought the "problem" was premium flour (Makfa). I took another one from the network, "general-purpose flour", the variety is not specified. Added rye. The result, with small variations, is the same. I tried it on mineral water, no changes.
You can try it on 2nd grade flour, but so far we have not found one.
I would like to add a little "shop" to the bread.

Xadex, how much rye flour do you add? I add almost a third of rye flour and rye malt - 1 tbsp. spoon, and put a little less yeast - and then the bread is denser and tastes closer to the store. But you already have to select this in practice, take some recipe as a base one and experiment - a little less sugar, a little more salt, replace part of the flour with rye or rye flakes, if there is no malt - add dry kvass - and so, step by step, pick up bread tastes best for yourself. In any case, it will be better and tastier than the store! I wish you success!

Hurrah! Finally, I bought a new Panasonic SD2500 bread maker. I used to have Mulinex Home Bread. Gospidyaya! How I dreamed that she would crash, break, so she got sick of me, tired of these pale, frightened rolls!
And in my brand new oven, everything bakes just fine.
Now I bake every day with pleasure, there hasn't been a single failed bread yet, I'm looking for more and more new recipes and I'm happy like an elephant !!!

The natural softness of the bread is 3-5 days! The bread begins to dry out on the second day! This is the norm!

As a result, you have to bake bread in the evening, and in the morning there is already "yesterday's", because no one wants to get up early in order to put bread on the wire rack, 2-3 hours before breakfast.

We slept the bell a couple of times, in the morning we took out excellent bread. The oven, if not turned off, heats the bread for an hour by evaporating moisture, then cools down by itself. When you get the loaf in, take it out on the wire rack to dry the bottom and that's it. It is better to put a light crust, otherwise in an hour in a warm oven the loaf will brown a little.

Rye, baked on the Rye mode, rarely satisfies anyone in taste and appearance. A stirring paddle, of course, is needed, but it is possible without it. I bought it at a service center, now I have it! And you will learn recipes and techniques from members of the forum on baking rye without a program!
