I noticed that when you take out the bread, the crust wrinkles, but does not fall off. This is normal?

OlgaVlad, absolutely normal .. Already repeatedly discussed, but I do not remember in what place, therefore, in a nutshell .... The law of physics says that when heated, bodies expand, and when cooled, they contract. When the loaf cools down, the internal steam in the loaf rises up and softens the top crust, which is already the thinnest in HP. If you put a loaf on its side, then the bread can deform ... The strongest part of the loaf is the "heel", that's where they usually cool it. When baking in the oven, the rules may be different, because there the upper crust is stronger ... there you can just put it on its side so that the bread does not "squat".

MY CHOICE was PRESENTED BY MIND))) I bought a Panasonic 2501. Only a little upset. I have a question for the owners of this stove on the configuration. In your photos, all the bread is on the grid, but I have NO such in the box. and the box also says about the diamond-coated stirring paddle, but it also DOESN'T ((((
tat-63
grille is not included, use any. And there are two mixers - a comb and an ordinary one.

I use a regular hot metal stand, you can take it from the microwave.
tata0303
Thank you reassured, otherwise I already wanted to call the store. swear)))
lightstorm
I use a wire rack from the oven. The bread is cooling down - I put the baking sheet back into the cabinet.
tata0303
Tell me which bread is better to start with? And is it necessary to add milk powder to French? Why not substitute milk for water. (maybe stupid questions, well, excuse me, I'm a newbie) I read a lot of porridge in my head on the forum))) I went to the store for yeast.
tata0303
In my opinion, I messed up .... I put the usual dough for 1 program. The process of standing has begun (what kind of animal is this? On the video on YouTube, everything immediately starts to mix). I urgently had to leave when I arrived, the dotted line was on the lift function. And the dough seemed thin to me. As one of the knowledgeable people said on the forum that it is necessary then to add a little flour (it was even recommended to leave 50g of the recommended rate for later addition) I without thinking twice press the stop button, add flour, and install 1 program first. And now I sit and think: probably in vain I did this?

Yes, you shouldn't have reset the program at this stage .... you had to wait for the baking ... What could have happened if YOU hadn't interrupted the program? The roof could have fallen, but it’s not so bad ... The bread would be edible, but not very cute .... What could happen now? DO YOU add flour? Does the stove stand and does not mix (equalizes the temperature)? Write, maybe all is not lost yet ...

In general, here is my report. Waited for a loaf until 2.30 at night))) The view is awesome. My son liked the taste.Says soft inside with a very hard crust)))) This is probably from an excess of kneading In general, the first pancake is practically not lumpy

Congratulations! The crust is always hard at first, then it will soften during storage, if it has time ...
Rina
A very hard crust is if you immediately took out the hot bread and allowed it to cool in the air. More moisture evaporates from a hot crust. Here I violate the manufacturer's instructions and let the bread cool down quietly to a warm (as I say, gripping) state in a bucket. If the bread is taken out warm, the soaked crust will have time to dry, but will not be so hard.
tata0303
But I didn't know about that. She pulled it out immediately and covered it with a towel. Now my mother called and said that her son had eaten half a loaf for breakfast. I have a question: does a small spoon poured to the top or only to the last rizka correspond to one teaspoon? It was just that when the bread was almost ready, the kitchen smelled of yeast as well. Maybe I overdid them?
Rina
a measuring spoon is poured "under the knife", that is, typed, and brushed off the hump.
As far as I know, 500 g of flour can easily reduce the amount of dry yeast to 1 tsp. But I am not a special advisor here - I use pressed, "wet" ones. I count on 1.5 g per 100 g of flour.

We don't like the yeast smell either. We put in less. We started with 1 tsp. (in recipe 2), have now reached 1/2 tsp. The result is the same - the height of the bread is the same, but it smells less.

A * wet * also under flour hide?
tata0303
For some reason, in the Panas recipe for the first program for 500 grams of flour, 1.5 tsp of yeast is written. So I thumped 1 under the knife (I read about this on the forum) and half more.

Crumble the bucket to the bottom, and then everything, as in the instructions.

Today we bought a Panasonic 2501, and quite unexpectedly. We ordered 256 models, but it was not available and they brought 2501, for the same price, I don’t know whether to be sad or happy. No, I'm glad, of course. Have already tried it, I cut circles around Panas, listen to the rustles, my wife smiles, looking at it. The result pleased me, and the main thing in all this is my own bread, and I know for sure that I did not put any suspicious crap there. I will work out the grace of movement, decide on flour and yeast, and then we will start teaching my wife to work on the unit. I baked so far, so she gave me so many advice from the couch, and all the wrong ones.
Rina
Barbuda, congratulations on purchasing such a cool unit (by the way, you can proudly indicate model 2501 in your profile without "expected").
Have you already mastered the theory? Have you read the tale of Kolobok?

Thank you, I updated the profile. I went over the topic from the beginning, I remembered little, although I acquired some theoretical knowledge. First, I'll feed myself with yeast, and then I'll experiment with leavens.
They reminded about Kolobok, he was already sad. A sad story, it's actually a story of three attempts and one successful murder of the bakery mind by a shabby flea mammal.

Let me sit next door ... Yesterday, too, I became a happy owner of Panasonic 2501 ... I already baked a simple bread, taking into account all the posts I read with underwater edges ... and today I was forbidden to bake bread ... it turns out too tasty, they can't come off, they are afraid on the scales stand up)

Congratulations! I bake 2 weeks, everything is very GOOD !! True, once it was "damn lumpy" through my personal fault, I forgot to pour water. * JOKINGLY * Good luck.

if you do not entertain yourself with all sorts of delicacies, but only bake simple wheat bread without additives (and it would be nice to use flour 1 and 2 s), you will quickly notice that you have begun to eat less bread. You get satiated with proper clean bread faster, one piece is enough, and not half a loaf, as when using purchased one.

I had at least one loaf of purchased bread for three adults a day, and a loaf of homemade bread in two days (or even longer).

I have had Panasonic for 9 months already ... I rarely bake without additives, I really like mixed bread with spices, seeds, etc.
But even if it's just a Frenchman (I usually do it with the addition of rye flour), it flies away instantly. For 9 months + 5 kg

that's why I wrote "if you don't have fun with all sorts of delights." I have experience not only of my own, but also of friends.
If they constantly bake simple bread, as our grandmothers baked (that is, simple bread is in the daily diet, and not from time to time), then the consumption of bread decreases.
And if all sorts of herbs, seasonings, seeds, nuts, then the chances of getting extra. kilograms are much more. And if you also indulge in baking every day or every other day, then these kilograms are almost guaranteed

Joined Panasonic Club yesterday, model SD ZB2502WTS.

Immediately I ran the first test - menu number 1, the simplest white bread, Makfa flour, the highest grade, however, there was only brown sugar in the house, PAF dry yeast, olive oil, filtered water (reverse osmosis). For weighing I used Vitek 2400 scales, accuracy 1 g.

I carefully weighed everything, put it in the mold. Checked the list - forgot anything? Oops ... forgot ... forgot to insert the spatula! Ugh, idiot ... We are looking for a suitable container, where now to dump all this stuff. I found it, dumped it, put in a spatula, loaded the mixture back.

After 4 hours I got my first bread. He was great! Both in form and in content - the crumb is spongy, uniform, baked. We look forward to cooling down. After 5 minutes, crumbs remain from a 1 kg roll.

First noted advantages: It is surprisingly quiet, except for the loud clicks of the yeast dispenser, from which the cats fell from the chairs. The gingerbread man was formed strictly according to the forum requirements :-)

Disadvantages: After the first test, the whole house reeked of an unpleasant odor, but not plastic, but, it seems, engine insulation. Gentlemen from Panasonic could insulate the stator windings of the motor and better, given the very robust cost of the unit. But this is so far the only noticed drawback, I hope that after several runs the smell will disappear.

much depends on individual sensitivity. At first, I very clearly felt this smell, but my father and husband did not feel it at all.

As for "impossible" - that's right. I just took out the product of the next dough (from the word "dough", not "dough" :-) - this time menu # 3, bread with raisins - great! The bread maker still emits an unpleasant smell, but smaller, and the bread has a great aroma, there is no admixture of burnt insulation.

So ... it's time to start controlling your own weight :-)

Several days of active use of the home bakery ... She got the name ... "Sonechka" ... I read on the forum that there are times when a spatula of a bread machine remains in a loaf .... to avoid this, I after switching to the "Rise" mode I decided to pull out the spatula ... in the end, instead of an indecent hole in the finished product, I got a big notch ... (maybe someone will need such an experience) ...
Yesterday I decided to bake pies with potatoes ... I kneaded the dough in the oven, made the composition and quantity as for basic white bread, baked it in the oven ... the dough turned out excellent, I never kneaded it by hand ...: yahoo: I'm happy))

And in the process of lifting, the stove crumples the dough several times, a spatula is needed, but the hole from the spatula is not the point .. the main thing is bread ..
