If you bake quick bread, then 2 tsp. (Yeast-R => 2 tsp.), If the standard, then 1 tsp. (Yeast-B => 1 tsp.) So you have written ...
Rina
and I, like a bore, will say this - do not bake "quick" bread until you master the basic program! And in general, do not get carried away with this "fast" one, they do not have time to go through at least the minimum necessary processes in the dough, such a dough is not very useful (keep in mind that even the standard program in bread makers is very short in terms of baking parameters). And there are very few recipes that are actually obtained with the "fast" program.

Oh, I clearly did not figure out where the main, where the fast program is. I have a program there 01, 02 .... and so on.
Rina
the main one - 4 hours, the shortened one - 1:55 (or 2:00).

01 is the main one, i.e. 4 hours. I mainly bake on it. There are simple recipes on the site, I started with them. She hung it on the scales. Everything worked out))) Good luck.

Can you link to the recipes?
Elena
I still can't put links in messages. You go to the "forum" - on the left at the beginning of the page. then in the subject of yeast bread you find: the simplest bread (according to the models of bread makers): D I don’t know if I explained it clearly)))

Well it's good when you have someone to consult with. And many people here are already experienced

Hello, experienced and non-experienced bakers. Probably, no one dared to buy a bread machine for so long as I did. But, I always knew that it would be Panasonic. Finally, I became the owner of the SD2501. About how we waited for the first bread, it was possible to make a film. 6 people are sitting at the table and waiting for the end of the process. Comments like "40 minutes left", "36 minutes left" and so on. I even started to get nervous - all of a sudden the bread did not work, then the store ended, in principle they decided not to buy, it was night outside But my first bread was just a miracle. Thanks to the stove. Now I bake constantly.
Only the question is - I don't know where in Rostov-on-Don to buy rye malt, I really want to try baking such bread. I didn't find it in supermarkets, there is one store - they only sell 50 kg in a bag, no less than that much for me. Can anyone help?

Buy an extract of kvass wort, you can dry rye kvass, but see that without chemicals.
Erine
thanks, I'll try it, only I saw liquid, in a bottle, will this work?

It's very simple, Madam!
No need to freak out with replacements, see
buy and remember gratitude,
The plus signs have not been canceled yet.

All of these stores ship malt by mail.

Yesterday I baked the first French bread.Waited with great impatience these 6 hours, worried
When I opened it, I was delighted! Thanks to the creator of the bread maker! Already 4 bread is eaten with pleasure
I baked on Tverskaya flour "Extra" and everything turned out to be fine. By the way, I haven't bought electronic scales yet, I use mechanical ones, like nothing. I don't have time to take a picture ... But believe me, it's great!

Nice bread turned out. Well done! And today I baked rye. Super. The roof is pretty. It's a pity I can't take a picture - the fotik was discharged, but they have already started for the bread and ate the crust on both sides)).

Hello everyone! First bread (2501). Program 02 (main fast), size M, cor. average. I wanted the main one, but until I figured it out, time was gone. Photo from the phone. Recipe (regular white bread).
The bread turned out rather, although I think not quite. The yeast is barely felt, but delicious. Whether it was baked properly or not, I did not have time to understand, they immediately sentenced. Honestly, he was guarded for the first 15 minutes after baking.
The crusts are crispy on the sides, the top becomes soft (not crunchy.) When it gets cold Very airy. Can be squeezed in the palm of your hand. But it does not spring willingly (slowly). Not a single yeast was bubbled (warm water), and did not crumble (more like plasticine), although the date is normal, I did not find others. Did it dry at your own peril and risk. Flour "pre-porter" baking. There was also "Makfa", did not dare. When the kneading began, I immediately became a steep kolobok. Then my heart skipped a beat, and I poured 5-10ml with a little water.
The gingerbread man turned out in the first 5-10 minutes, then I left.
The first experience, hence the question: Is it necessary to correct what in the recipe and how the yeast can still be checked (after all, the dry ones worked).

1. Try not to play with the "fast" program anymore. Bread is not the most useful, it is heavy for the stomach. And we bought a bread maker to improve our nutrition? And he will not behave like normal bread.

2. The yeast can be tested by diluting it in water with a little flour to make at least a thin dough.

3. Do I see a pack of compressed yeast? Then try baking regular white bread with them at the rate of 1.5-2 g of yeast for every 100 g of flour. Just crumble them to the bottom of the bucket, flour on top ... Or you can make a type of dough - yeast, 150 g of water and 200 g of flour on the "pizza" program, after 10 minutes, reset the program, add all other products and start the "main" one. To get a more springy crumb, you can try adding 20 grams of natural apple cider (!!!) vinegar or substitute 1 / 3-1 / 2 of the water with acidic whey.

I see in the picture a familiar pack of yeast (on the right, the inscription in Russian). I use them all the time. I like it very much. Good quality - I haven't gotten to bad ones yet, even if the deadline is already at the finish line.Convenient packing-50g, open ones are quickly consumed. They are well stored in the refrigerator (just not in a plastic bag !!!) without any tricks like freezing. Cheap - in Pyaterochka less than three rubles. On the other hand, Swedish ones are three times more expensive, but no better.

I wish you success! And the very first cute one turned out. Congratulations!
Egor
Thanks for the congratulations! Milky white for the night, set the timer. It seems to have worked out, delicious and similar to the first. There is less yeast per spoon, and the smell is the same as from two on "basic fast". Can I find fault? The crust on top becomes soft as it cools. I realized that you need to wait for a complete cooling, it becomes denser and springy.
Can the pressed yeast be crumbled to the bottom of the bucket if you set it on the timer? Or are there underwater rocks?
Rina
no awful pitfalls. Just crumble the bucket to the bottom (this, by the way, is a sign of the freshness of the yeast; stale ones are more like plasticine and do not crumble). You can also use a timer. Normal yeast will do a great job under flour for several hours without losing its properties.
Dr. Lena
Egor, with the first bread! I wish you a lot! And with regard to yeast, look at Temka about yeast. I like dry active ones, those that need to be activated beforehand - I put them in a glass of water and see whether they work or not. I switched to them, after having "screwed up" the Easter cake, instead of which a brick turned out!
Egor
Thanks again for the congratulations.
Now I'm doing on pr.03 with honey and nuts. used yeast, in my post on the right in the picture. I remembered the smell from childhood when my mother baked pies. ... In those days, there was only one yeast in stores. But they don't crumble, they stick to my fingers, although the smell is pleasant. I bought yeast in different stores. They lie in the refrigerator at the door. I'm waiting for what happens.
Dr. Lena, first of all I read the topic about yeast and realized that I did not understand anything, in the sense that there are many and different and act in different ways. That is why I asked the professors which ones consistently give results.
"highly active bakery" shelf life 30 s. date of exile 30 01.12.11, Swedish "royal" 08.11.11--27.12.11, and not crumble. So I thought either left-wing yeast or myself ...
Thank you for your help, the main thing is She works and makes me happy, and we will slowly figure out the rest.
Rina
crumbling yeast is a guarantee of freshness. But the "plasticine" ones, if without an unpleasant smell, may well cope with their work. You may just need to increase the dose a little. By the way, keep in mind that for baking (sugar and fats) you need more yeast.

Good night to all who are awake! Three weeks of using the HP have passed, the store bread has not been bought even once. There was a small joint a couple of times, the yeast failed. They baked mostly plain, rye and with honey and nuts. Believe it or not, I have minus 2kg. The wife speaks great, but you can see from the eyes that she doubts, but in vain. And I want to try baking with whole flour, the question arises (and how is whole flour?). The first or second grade of flour can replace it ???
Rina
if there is a 1st or even more 2nd grade of wheat flour, then bake from it! closest to whole grain 2nd grade. I really regret that I cannot buy myself such flour now
doom
Thank you!!! And which of the 1st or 2nd grade bread is better? It's just that we don't have it on sale either, but they bring it from the base on order.
Rina
more useful - that's for sure. For me, this bread is the most delicious. Since childhood, I adored Arnautsky, and it is baked from 1 or 2 varieties. This is the same gray wheat bread

cook according to the recipes of standard wheat bread, even without added sugar. If you want, I will find a GOST Arnautsky recipe so that it is clear what it is from.
doom
Today I will order 2kg for a start. And how will they bring ...
Rina
Arnautka Kievskaya (oven)

Use proportions, only increase the amount of yeast (if pressed) to 6 g. Cook on the main program. Control the liquid by kolobok (I hope you know how to do this?)

Or use my favorite method - knead the dough on the "pizza" program, reset the program after 20 minutes and leave the dough in the bucket. After a couple of hours, add the rest of the products and set the "main" program.

If you have the opportunity to order flour, find out if it is in stock. ZH flour is flour, ground from grain and not sifted, that is, it also contains bran. I really like whole grain flour, their bread does not turn out to be excellent, including in HP. And where are you "at the edge of the galaxy." I originally ordered whole grain flour from Altai. Now she has appeared in Moscow. I think there is no need to talk about the benefits of bread made from such flour
This kind of bread is obtained from this flour.

here is the truth Hurray !!! I finally bought it !!! While we are baking bread every day, my husband said, "It's so good that I bought a bread machine, I never regret it!" (I raved about the stove for two months and I bought it too) Delicious, very tasty bread, it didn’t work out only twice, and it didn’t get enough, it’s not baked, now everything is ok, delicious fluffy, and how did we live without such a treasure ??

It seems to me that now the price does not depend on the quality of the product.

anything can be. I bought 500g rye flour from us for 23 rubles, and then I found 1 kg for 11 rubles 50 kopecks. It turns out the same bread.
doom
Imagine me with 1-2 grade flour, they said you can order it, but it is not known when it will be delivered. But I took the crushed grain, passed it through a blender and added 250g to 250g of wheat flour, and there was an hour left for the children's program, and then we'll see.

Hello everyone! For a week now I have been the happy owner of Panasonic 2501 HP. HP is excellent, happy with everything. While baking 2 times, and the first time the bread turned out great. The first made wheat, the second - onion with dill
Works silently! It even turns off quietly, which is why I slept 1 bread at 3:00 am !!!)))
Generally I recommend!
