A couple of questions:
1. Do you adhere to technology? I do, as in the video in the recipe, I mix everything loose, I mix everything liquid, except boiling water separately, then I mix everything, quickly pour boiling water, quickly knead until smooth and in a cartoon.
2. Did you replace baking soda with baking powder? The recipe contains half baking soda, half baking powder. If you replaced 1.5 tsp. soda for the same amount of baking powder, then this is not very correct, because in recipes usually soda can be replaced with baking powder in a ratio of 1 to 2, that is, 1.5 tsp. soda had to be replaced with 3 tsp. baking powder. Better just not to change anything, for the sake of experiment.
3. You have reduced sugar, but what if this is the case? This is also a free-flowing ingredient, the difference in a glass could affect the result. (But I'm not exactly sure.)
4. In time I bake two cycles of 45 minutes, spreading parchment on the bottom. But I don’t think that the difference of 10 minutes affects the result that much.
