Easter cake of Baba Gali

here is the easter recipe. A pastry chef friend gave it to me. So now I only make such cakes. For the whole family - his own, brother, grandmother and aunt. It turns out airy and very delicate. In the photo from the oven, for the experiment last year I made it in the cartoon. I did not feel the difference.It turned out rosy, except for the top (but we still cover it with beauty)

Recipe for 6 pieces 7x6 cm
Structure
milk 500 ml
yeast 11 g dry or 50-60 g fresh
flour 1-1.3 kg
eggs 6 pcs
sugar 250-300 g
butter 200 g
a pinch of salt
vanilla. sugar 1 tsp
raisins 300 g

Glaze:
2 squirrels
2 tbsp caster sugar
sprinkling

Preparation
1) Add yeast to warm milk. Let it ferment.
2) Add 500 g flour. Put in a warm place. Cover. After 30 minutes, the dough should double in size.
3) Separate the whites from the yolks. Grind the yolks with sugar and vanilla.
4) Beat the whites with salt until foamy.
5) Add the yolks to the matched brew and mix.
6) Add softened butter. Mix.
7) Add proteins, mix.
Add the remaining flour, knead the dough. The dough must be kneaded well, it does not stick to your hands for a long time.
9) Place the dough in a warm place for 50-60 minutes.
10) Soak the raisins in warm water for 10-15 minutes. Add to a suitable dough and place in a warm place. The dough should rise well.
11) Grease the mold with oil, put the dough by 1/3. Cover with cling film or towel. Let it come up.
12) Put in an oven preheated to 100 degrees for 10 minutes. Then increase the temperature to 180 degrees. Bake until tender: form 11x17 cm for about 35 minutes (10 minutes at a temperature of 100 degrees + 25 mints at a temperature of 180 degrees).
