But from red you will not get a side dish - it is very soft. There will be a homogeneous puree porridge. Soups are cooked from it, in addition to taste, it also gives thickness.

Girls, information on types of lentils: brown is not soft and is used for side dishes. Cook for 30-40 minutes, you can soak for 2-3 hours;

green is prepared in the same way as brown.
Salt, tomato, vinegar are added only to ready-made lentils, otherwise they will become hard. For a side dish, you can mix different types of lentils - green 65%, red 29% and dried herbs.

Just do not forget that the lentils have absorbed the water when they are locked, so do not overdo it before stewing with water. I had two multi-glasses of dry lentils, and after steeping, I added three multi-glasses of water.
