Aunt Besya!
1. Rye, I think, will do.
2. Is it impossible to order in metal repair?
3. Bow and scissors - necessarily! As soon as you hang it, give the brownie to play for 2-3 hours. Then start looking. If you don’t find the next day before noon, it means ... I have seriously offended the brownie.

Right!

For me, when, after another sawing with a knife, the spatula became just like Gwynplaine's smile, I just switched to a rye spatula, no problem ...

Thank you, I have more or less got used to Macfa, so I will try further. Just throw in a link to the recipe The airy result is very tempting!
Hairpin, I apologize for the delay in answering, I was at the dacha and completely forgot to check the topic. Regarding the recipe - unfortunately, I did not mark in the recipe who the author is, so I can only quote this recipe (with my changes):
2 tsp dry yeast - (I take 6-7 g live)
1 cup (150 g) wheat flour - (180 g)
2 and 3/4 hours (360g) peeled rye flour
1.5 tsp. Extra-R
1 tbsp. l. panifarina
4 tbsp. l. rye malt
1 tbsp. l. ground coriander
1 tsp salt
2 tbsp. l. rast. oils
2 tbsp. l. honey (I take molasses)
420 ml of water (of which 80 ml for brewing malt) - (I have 400 ml)
5 ml wine vinegar
Brew malt and coriander, cool. Place the products in order, "Pelmeni" mode, proofing for 1.5 hours, baking 1h10 - 1h15 min.
By the way, in the photo there is a loaf for 150 g of wheat and 310 g of rye flour, respectively, there was 5 g of live yeast.

Aunt Besya can be ordered through Panasonic

Elena. RU! Thank you, but how can you make a proofing after the Pelmeni regime?

The "Pelmeni" mode is over, turn off the stove, mark 1.5 hours (I put on the oven timer), then put it on the baking. And that's all. Someone on the forum advised to turn on the baking for 1-2 minutes at the beginning of the proofing, so that the oven warms up a little. When I remember, I do so.
Aunt Besya
Oh guys, thank you all for the answers, otherwise I have, to be honest, hysterical !! I've been looking for her since two o'clock in the morning, fortunately, the garbage was not taken out, so I even went through the trash can, I went through each tea leaf twice - zero. I will use rye for now and search for a service along the way (I already assume that there will be difficulties, the service is not a distribution store in the country, it is unlikely that it will deal with it)
Hairpin! I have no girls and never had, and I don’t wear bows, but now I’ll build a bow out of a scarf - I’m ready to believe what you want !!! There is also something to say, but what? I forgot?
tatulja12
Hairpin, maybe I missed something, but proofing after the dumplings mode is very simple. The dumplings-xp mode is over and the light is flashing. So let everything remain as it is (do not turn off hp and do not press any buttons) the dough will be defrosted in hp on heating. I often make the dough not on the "dough" mode, but "dumplings" and steamed on heating. Sorry if I poked my head around.
-Elena-
tatulja12, can you tell me where the instructions say about heating after the "Pelmeni" mode? It seemed to me that the heating only works after the end of baking.
tatulja12
where it says in the instructions, I don't know, I know from practice, I do this. When after 1-1.5 hours I take out the dough from there it is up to the edges of the bucket and warm-warm. If after any mode the stove is not turned off, then it remains in the heating mode.
-Elena-
tatulja12, thanks, probably, I just didn't have the opportunity to test it in practice, because I always turn off the stove right away.
tatulja12
When I bake with fresh yeast, I feel sorry for the leveling time, so I put dumplings. The yeast starts working immediately. I figured it out and in time it turns out the same. Only the extra 0.5-1 hour HP is not idle.
sazalexter
There is no heating in the dumplings mode! If there is no yeast, why heat it? Just after the dumplings, turn on the Main for 2-3 minutes, while the ten is turned on to warm up, then leave for proofing
sazalexter
On fresh yeast, you can set the BAKE RAPID mode (FAST BAKING) there is no leveling of the HP starts immediately kneading the dough

Yes, I have no problem with that, people just ask.
With fresh yeast, you can set the BAKE RAPID mode (FAST BAKING) there is no alignment - maybe, but, it seems to me, there is not enough time for proofing, and I do not want to add more yeast. I reduce the amount of yeast in all recipes, and when I switched to live, I began to put even less.
sazalexter
Mostly about 1 hour, see instructions
-Elena-

Mostly about 1 hour, see instructions
So I say that it is not enough. In quick baking, everything is based on double the amount of yeast. I don't want to repeat myself.
tatulja12
sazalexter, I will not argue, but try it yourself and see that after the dumplings, hp heats up. I say this with all responsibility, because I put the flour at room T, the eggs from the refrigerator are slightly warm, when the dough is kneading I touch the bun, I won't say that the dough is warm, no. But when I take out 1 hour after the dumplings mode, the dough is very warm.
sazalexter
tatulja12 The dough is quite tight, the machine heats up, this can cause the bucket and dough to warm up. I will repeat once again in the Pelmeni mode the ten does not turn on, unlike the Pizza mode. The truth may be a glitch that after executing the program, you have it on. to warm up, as after baking.
Rina
My dough was also very hot in the dumplings mode. Although I never finished the program, I was afraid that the dough would "brew"

I put dumplings, after a squeak it costs 1-1.5 hours and take out the dough. The lien program runs completely for 20 minutes, the dough is not brewed. The fact is that the dough after 1 hour is much warmer than it was.

How many percent solutions?
No difference. The main thing is to know how many grams of solution correspond to what. For example, I pour in 100 g of a prepared solution and I know that this is 1 tsp. salt and 1 tbsp. l. Sahara

I wrote a little earlier that (in my humble opinion) there is no need to dissolve salt and sugar for the upper filling of the liquid - they themselves will practically dissolve while the HP stands, from half an hour to an hour and a half, and maybe even more on a timer.
It is summer now, it is recommended to take water from the refrigerator (I do so), sugar, and even more coarse salt, may not dissolve in such water in 2 hours.

I have not used the timer since I switched to live yeast.
Quote: Kapet

And the overwhelming mass of scratches on the bucket are not from salt and sugar, but from solid additives and from the hard crust of the finished bread when you take it out.
I personally don't dissolve for this reason, I just made sure that the preliminary dissolution of sugar has a beneficial effect on the evenness of the "roof" of the bread.

Hello everybody! Will you take me into your ranks? On Saturday, she also became the owner of Ranasonika. I have already baked 3 loaves: the main one. French is still staple today with honey and nuts. I'm very happy! My boys too (2 sons and a husband).Only my youngest asks to bake a chocolate cake, I will decide on the recipe. My question is, did anyone bake a cupcake from a semi-finished bag? My sister baked in lji, but does not remember the exact ratio of the components. There is some kind of problem with components.

Should the raisins be weighed before or after washing?

No bread rack, there is a microwave grill rack

In the instructions, all measures of weight are written, read, M is 600 gr. in Panas, if I'm not mistaken.
anivik
oh thank you very much, I have a grill stand and I read the instructions to the holes, but apparently blind)) I went to read again
sazalexter
anivik there is no lattice in HP in the order of the lattice, and they are usually used from a microwave or airfryer M - 400g flour, L - 500g XL - 600g, raisins, when added, are washed from the beginning, dried, then weighed
Hairpin
And if the raisins indulge and fall to the bottom, then they still roll them in flour so that they behave well!

O great bakers! Help me understand what it is. Why does my oven sometimes make eerie sounds when mixing (we already wake up at night). It happens irregularly. Maybe I don't say magic words when putting ingredients or collecting HP after washing ??? But then it absolutely noiselessly interferes with the dough, then it rattles so that the neighbors probably hear ... The stove is only a month old, maybe this marriage needs to be changed?

the dough can be in different positions, if it is well "wrapped" on the scapula, then it will be quieter, it will be quieter, it will roll around in a bucket, and you sometimes sleep at night, you could sleep through the noise. Listen less, it still emits many interesting sounds.
Rina
By the way, with different steepness of the dough (that is, the ratio of water and flour), very different sounds will also be ...
Nastasya
I read the topic. I learned a lot of new things. It never crossed my mind before. that if you set the size of the loaf to a larger one, then the bread is baked stronger (but in general, did I understand correctly ???). A test will have to be done.
And with a scapula and I have trouble. She's badly scratched. I suppose it's because I often indulge in French bread. I pull the blade out of the hard crust with a fight. Apparently she did it ...
PS Hairpin, and more about scissors with a BOW can you ?? I have never heard ... it will suddenly come in handy.
sazalexter
NastasyaYou understood correctly, with a small mass of dough, put XL, it bakes stronger The scapula is also baked, so HP, workhorse When the scapula gets stuck, I use a bamboo stick for Sushi to extract
Nastasya
sazalexter, and the technology of extraction with a stick is possible ??? Do not even imagine. I tried crocheting, but I only have it made of iron ... in general, I do everything neatly with my hands ...

If, after removing the bread from the bucket, immediately put it on a cutting board, and not on a wire rack, then the lower crust will soften and the spatula comes out easily. Then place the loaf wherever you want. I use a plastic crochet crochet - it does not scratch the coating.

And how can I find that golden goov who somewhere once wrote about covering a bucket with a towel ...

Apparently, it's really a matter of flour. I have 255 recently, but I already ordered the dumplings dough. It turned out great, it didn't stick to my hands, the flour was Nastya.

Once I wrote here that at the end of the "baking" program, you can immediately turn on the same program and it will be displayed not from 30 minutes, but from 1. Then I tried it myself - it didn't work out. Today I experimented again (or rather, made a mistake). I put the dough in a bucket in the HP for proofing and turned on the "baking" for 1-2 minutes. Then I decided to repeat this operation, but I forgot and only remembered when there were 22 minutes left on the scoreboard. I turned off the program and decided to immediately try it again. In the program "baking", the display showed one, adding time (using the "timer" button) was also one minute each. I think that this option works if the "baking" program was forcibly stopped, and did not end normally.

My bread maker also scares me with nocturnal sounds. When she starts the dough, slap the walls. And even when I bake with seeds, it also rustles with seeds during kneading, and the dispenser snaps off quite loudly. And since, due to the renovation, we actually live in the kitchen, it turns out very loudly in the night during the day and you won't notice, and so we studied all its sounds. I adapted to drag her to another room, then I can no longer hear.

If the mode with a dispenser is turned on, then at the moment of opening its lid, this is for one second, the electromagnet of the latch pusher turns on, which is loud enough, and the bucket sometimes shakes when stirring, which is audible.
This is all normal and you do not need to be afraid.

The display is constantly blinking from the first day of purchase.went, exchanged under a guarantee - it's useless. The voltage was checked, connected via a UPS. Maybe it's a family thing?

NNoisy, watched the work of 3 Panasov (one of them was his own). None of the displays blink, maybe the voltage in your network is unstable and you need a stabilizer?
Obligaciya, you have not heard Ken's work, that would be scared! Panas is a very quiet stove compared to him.

Last week, due to power surges at the dacha, the LG HB-156JE bread maker broke down, which has served faithfully for more than 3 years. We bought a panasonic sd255 instead. Baked bread for the morning today. According to the standard French recipe, but instead of milk powder and water - regular milk. I share my impressions: 1. The quality of the bread maker itself is not comparable to LG: a metal spatula, the quality of the bucket itself, the quality of the plastic, the panel. Everything is done better and more accurately. 2. Works ABSOLUTELY SILENT compared to LG. 3 Recipes are quite different from LG's, especially in the amount of yeast. If the Panasonic recipe contains 1 tsp. yeast 400 gr. flour, then in a similar recipe from LG for 375 grams of flour is 2.5 tsp. yeast. There is no sugar in Panas's recipe, but LG does. The bread turned out to be tasty, but somewhat different than in LG - more dense. What is called - feel the difference ...
I have a question - I downloaded a recipe book from Mulinex and there is a recipe for "Mediterranean" bread made from a mixture of wheat and rye flour, sprinkled with coarse salt and a few tomatoes on a loaf. Nobody baked something like that in Panas? To put the program "Rye"? I tried to bake this recipe at LG - the bread was not baked.

I was here at a construction site ... Well, in general, I needed a crowbar ... I shout, they say, is there a crowbar? They answer me, yes! I scream, give! And catch me! Have you ever been thrown with a crowbar? I jumped as much as two meters to the side, and then lifted the crowbar, and it was lightweight ... Because it is titanium !!!

In short, I have an unverified hypothesis that the blade in the SD-255 is titanium! Here!
