Whole wheat bread with walnuts and sourdough dates

Ingredients

Sourdough 100% moisture 100g
Opara
water 50 grams
Whole grain wheat flour 50 grams
dry yeast 3.5 grams

Whole grain wheat flour 75 gram
oat flakes 75 gram
honey 1 tbsp. the spoon
cut walnut 100g
dates 50 grams
fine sea salt 6 grams
nuts, flakes for sprinkling

Cooking method

  • Active wheat sourdough 100% moisture, was fed twice by me wholegrain flour (10:10:10; 30: 40: 40). The second time 7 hours before kneading the dough.
  • Opara
  • Mix All products and leave for an hour in a warm place.
  • Dough.
  • Mix all ingredients except c / fruit and salt. Knead the dough with your hands until smooth, add salt and knead more for 3-4 minutes. The dough is soft, not sticky. Leave for an hour until it doubles in volume. Stir in nuts and dates. Leave to rise for another hour. Form a loaf, roll it in nuts and oatmeal. Place in a proofing and baking dish, seam side down. Let it rise. The proofing took me 1 hour.
  • We bake with steam for 30 minutes at a temperature of 200 degrees. We take it out, take it out of the mold, cool it down and enjoy the healthiest bread.
