Svetik_, it all depends on which recipe you choose. In an ice cream from Anastasia, for example, you need to whip 35% cream. And there are recipes where the cream must be brought to a boil. I think that sour cream will not be a substitute here. But where there is homemade milk and sour cream, there is usually cream too. And since homemade cream is o-very fatty, then milk will come in handy, dilute them. But the main product for ice cream and buttercream is still cream, not milk or sour cream.
