Cooking method

  • Chop the cabbage as you like. I like it big enough, shredded with my hands.
  • Put the chopped cabbage in a bowl in parts, add a little salt to each part. After about five minutes \ "shake \" the cabbage with your hands, and leave it, let it rest.
  • We take out a bag of dried porcini mushrooms

  • we need a handful of dried mushrooms. Place the mushrooms in a small saucepan and cover with cold water. After about an hour, you need to boil the mushrooms until tender, pour the broth into a cup, rinse and chop the mushrooms well.
  • Cut carrots into strips, quarter onions into rings. Heat vegetable oil in a frying pan, add a spoonful of ghee to it. Put the onions and carrots in the pan, when the onions become transparent, add the mushrooms. Stir occasionally. Simmer for 5 minutes, then add mushroom broth, but a little: the broth should not cover vegetables with mushrooms. Cover with a lid and let everything be stewed and saturated with aromas for another 10 minutes. The ratio of vegetables and mushrooms looks like this:

  • Next, you need to drain all the liquid formed in the cabbage. Put the contents of the frying pan in a bowl of cabbage, pepper, add a little salt and stir well with your hands.
  • Pour some vegetable oil into the wok, heat and put the cabbage, cover and simmer until tender, stir occasionally. If the cabbage is very dry, while stewing, you can add a little mushroom broth. But you should never drain the entire broth so that the sand that has settled to the bottom does not get into the food. In the process of cooking, try the cabbage for salt, if necessary - salt.

Natusichka,, for the first time I hear that mushrooms need to be soaked for so long, and even more so for 9 hours. I never cooked so much meat. Maybe mushrooms are soaked for 3-4 hours if they are dried whole. We dry with plates, otherwise the dryer will not cope
I soak the mushrooms until they are completely soft, and I see no point in keeping them in the water further.
By the way. Porcini mushrooms, like champignons, are eaten raw.
