(that is, Soviet-style saucepans) Nobody heats anything in an ice cream maker and a portion of ice cream is there for half an hour, and not the entire volume is directly in contact, but a thin layer, which freezes to the walls in the first minutes. So, I think the aluminum bowl does not do much harm. And a spoon, so it's more convenient for me with a silicone spatula (Teskomovsky, they are more dense). I scrub everything from everywhere with these shoulder blades - I pick everything clean. And I don’t keep ice cream to a solid state in an ice maker. Firstly, it is easier to unload, secondly, I like soft, and thirdly, experience shows that then it fills well in the freezer, without pieces of ice.

A bit almost offtopic: I recently made ice cream, everything seems to be the same as always, but for some reason the cream stratified into fat and water. Tried hiding this cocoa joint but didn't help. Throwing away such an amount of goodness did not raise the hand, so I decided to experiment. He heated the mixture again, added melted margarine, baking powder and flour until the consistency of thick sour cream. Stir it all, in paper molds and in the oven at 180 degrees for 20 minutes. The result is such awesome chocolate muffins! Very tasty with a delicate "foam" structure. I filled in everything "by eye", so I'll try to reproduce the recipe:
The ice cream mixture was - 2 yolks, a glass of sugar, 3 glasses of milk, 50 ml of heavy cream, vanillin.
Added - 2 tbsp. l. cocoa, 100 grams of melted margarine, 300-350 grams of flour (to the consistency of thick sour cream), half a bag of baking powder.

First, after pouring the cream into a saucepan, I break everything with a blender (but small lumps are still present). Then I heat it up to about 40 C (warm, but does not burn) and again with a blender. Then all the lumps and disperse and the cream acquires a homogeneous consistency. And for the first time I decided to just melt it, so the "solid" fraction melted like butter and when it cooled down again it was taken in lumps, no beating helped.

And it seems to me that the mass after cooling has increased in volume a little. It remains to find real condensed milk for sale. I don’t dream of cream, for 10 years I have never seen more than 15% on sale. What I got with concentrated milk is much tastier and more natural than the "ice cream" that we sell.
