solmazalla, thank you very much!
price for german bosch (for statistics)
Cutter knife 13x13x8mm 00633442 - 7,00 €
Kneading hook 00641665 - 12.50 €

I think it's worth buying:
1) "grinding" 00642151 (5.80 €)
2) puree accessory 00641688 (€ 7.00)
Do you think the attachment is worth the purchase or is the mixer better? Grinding the right thing?
lena_letochka
Girls, owners of Boshik, I have a sadness: when grinding minced meat into a sausage emulsion, the minced meat somehow climbs into the place where the drive is located. I took the combine specially for "sausage". I was very upset and tortured to pick out the emulsion from the gears. The emulsion turned out great, but the consequences are not very good. I'm worried about the harvester, a couple more times of such sausage, and the pipe harvester ... Is this a feature or was I so lucky? Are there any ways to deal with this?
Miranda
lena_letochka, this is a feature of any similar device with a stick in the center. Because the law of physics pulls food under the stick. And few of the manufacturers (I don't know such, but suddenly there are), somehow covered it with at least a silicone gasket.

Moreover, I saw such complaints not only about minced meat, but also about batter. For example, there is a photo there 🔗

However, I can say that the Bosch motor is protected.
Products can fall under the stick, through it onto the gear on which the stick is put on, but there it is sealed and does not hit the motor. That is, it's just frustration and cleaning hassle.

I read this in advance, so I did not experiment with the sausage emulsion (protein (meat) + fat + liquid), but immediately approached this question on the principle of a test in 30 seconds. That is, she twisted the minced meat with crushed ice, and poured the liquid in portions at speed. Well, I also looked. Because if you twist for a long time, then you can't trample on the laws of physics - it will drag you down.

Good luck!
lena_letochka
Miranda, thank you very much for the detailed answer.
Here is your advice and I would like to hear, because I read somewhere that you made sausage in Boshik.
Today I was spinning frozen minced meat, there was no ice, there was frozen cream. Topped up in the process.
Pulled ((barely washed
Have you managed to make an emulsion without "dirt"? How much do you put (in grams) minced meat.
How fast are you spinning? How long?
I know that you seem to have sold Boshik, or are you selling the sausage? Maybe you found another way of cutting?
Miranda
lena_letochka, I bought a Kenwood kitchen car, and sold Boshik.
But I loved him, and I do not refuse a single word of kindness about him.

I also used cream or milk as a liquid, and frozen milk as ice.

Appliances with sticks in the center pull liquid products - dough, emulsified minced meat, etc. That is, until there is the necessary liquid structure, it will not pull. Chopped pepper does not drag away.

Therefore, I added it when I saw that the liquid was well absorbed by the minced meat. And so 4-5 times. That is, not like in a dough recipe at once in a thin stream, but in parts. And the maximum that pulled me down in the end was a little under the rim of a thick stick with a knife on it. I somehow felt that I had to stop.

You just need to fill your hand, or something.

By the way, Kenwood's food processor, which also drags down with a nozzle and with a stick in the center, But I beat it in a bowl, for a long time, about 15 minutes. And in Boshik I don't remember the time with knives, but definitely not more than 5 minutes.
lena_letochka
I also ordered Miranda Kenwood (it will be in a month and a half), but I thought that it was necessary to cut it with knives for dumplings. Do you knead for boiled water in Kenwood? Does it work? Probably making fine minced meat?
Damn, I just bought Boshik, I thought it would be for boiled water ... but that's how it is ...
Miranda
lena_letochkaif you bought Bosch only for a sausage emulsion, no matter how cruel it sounds, this is a mistake.

Such a function is not incorporated in Bosch and in combines of similar design. Or blenders. Or even choppers. Although, in choppers you can get an emulsion, but you will get 200g. + - to lay.

At one time I re-read the forum of sausages who, long before me, went all the way of buying various household devices for sausages, they even bought a blender soup cooker. And in the end, everyone either resigns themselves to the compromises of a not quite perfect emulsion, or goes broke on cutters of a completely different design and money.

From more or less "cheap" options (ie, cheap relative to others) - this is the type of buying

Or they are looking for a Sirman cutter on Avito, the smallest / cheapest is C4VV. The new one is about 35 + - thousand, and on Avito it is possible for 10-15 bp. at. or suddenly even better luck.

But it all makes sense if you do a lot of cooked sausage / sausages / sausages for sale. For yourself, if you stop getting upset and make friends with a compromise - Boshik will do.

Bosch is an excellent multifunctional harvester. But he is not an emulsion cutter. The way I made an emulsion in it, pouring liquid at a speed of 4-5 steps is an acceptable compromise. Where and under the stick did not pull (although, if you twist for more than 10 minutes, it will pull), and the consistency for home use is less.

To prevent the meat from heating, you either take a break for the refrigerator if the meat was chopped in Boshik (he does it great!). Or, in a meat grinder, get fine minced meat (which, too, in the refrigerator, together with a Bosch knife, hold until the emulsion), and then no more than 5 minutes with fine ice and pouring liquid at speed.

***
About Kenwood under the spoiler, because the topic is offtopic.

Here is an interesting video where everyone is in Kenwood

But it is not shown there, which also drags
Although, and less than in Boch.

I stir the minced meat passed through a meat grinder twice in a K-shaped way. I keep the bowl and attachment in the refrigerator before that. Therefore, I interfere for at least 15 minutes. Does not heat up, everything is ok.

That is, I sometimes like in the video with knives, but as with Bosch, according to the principle - I add liquid at speed. Or in a bowl.

This is also a compromise emulsion for boiled water. Not suitable for opening your own store, but good for home.

But for the rest of the sausages, kneading minced meat is perfect in Kenwood.

lena_letochka
Miranda, thank you very much !!! I want to make sausage for myself.
I have a sausage child, he cannot live without her, what they sell is to poison the child
Previously, I did not bother, the products were more or less, but now it is not possible to eat, so we gradually move on to our own (this is all the forum is to blame)))
I want to make dumplings at least once a week, a little kilogram - one and a half, while there is no Kenwood, I will use Boshik, and then I will think ... maybe I will sell ...
Miranda
lena_letochka, I only sold Boshik because 90% was duplicated by Kenwood. If there was a big kitchen and a lot of money, I wouldn't sell.

But, the dough in 30 seconds, the ideal cube size (it is the largest in Kenwood), the free disc is better in Boshik, and there was no double. And its bowl is larger than in the Kenwood processor.

I also make different sausages for myself every 7-10 days.
Me that a compromise with Boshik, that a compromise with the Kenwoods on boiled sausages suits me.

To get the look like in a store, you need completely different devices for different money. This applies not only to sausages, but also pasta, for example, not like that. When they dry up, they crumble, etc. Well, the store ones are made by completely different devices, the size of a room.

But it's not a fact that the home option is worse. More often it is better in quality and taste, although outwardly different. It's just that we already have a store image, which, for some reason, we consider an ideal.

Bosch msm 3100, never used, you need to beat eggs with sugar for a biscuit - please write, at what speed to do this? Power 800.
Miranda
| Alexandra |, unfortunately, I won't tell you here.
I did not use a whisk in Boshik, except for testing.

But, if whole eggs and experience with other devices, I would set the speed higher. Well, look at the quantity so that the eggs have room to grow.

Good luck!
solmazalla
denomi, I bought a rub, but I need it for summer preparations, so it is still untested. But for mashed potatoes, I think it's not worth taking. Boil potatoes, assemble a combine, stain it with this puree, transfer it somewhere, and it has already cooled down. And then also wash the harvester
Well, if I had a family of 5-6 people and ate mashed potatoes every other day, then I would look this way
And by the way, the wiper consists of two parts: a sieve and a paddle, they are sold separately.
| Alexandra |
Miranda, thanks for the answer, this Boshik does not have a whisk, a disc for whipping ...

Posted on Tuesday Feb 21, 2017 2:23 PM

There is also a blender with a whisk, 500W, is that not enough, or try it?
Miranda
| Alexandra |, ahh, disk ...
I've never tried this.

It will take a long time with a whisk, if your blender can withstand a long work, then why not. Our grandmothers whipped a biscuit with a hand whisk, it turned out. And electric and even more so.
| Alexandra |
I have a whisk in another Boch - 5380/02, but I don’t know how to approach it with a biscuit - there are too many things, even two lids, they gave it to me for ham, quite recently. Now I'll take a look at the recipe.

Laniko
Hello. I also decided to buy this model, and I plan to buy potato pancakes, fries and medium. I read in this Temko that there is still julienne. But does it come in the kit or am I confusing something? She looked at the officer. the site of the bosch and many in some stores, a disc for Asian dishes and in some places it is also called julienne. Is it the same thing or not?
Miranda
Laniko, yes, the disc for Asian cuisine and julienne are one and the same, just the shops call names differently.

Comparison of julienne and medium grater / shredder can be found here https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=22259.0

And so there are two similar models on the market. They differ in color, and slightly in power (1200 and 1250 watts.). And one more of the three disks in the complete set - MSM 68885 has julienne, MSM 64085 has a free disk. The rest is the same.
Laniko
Thanks for the clarifications! I know this model, while I was choosing, I learned it by heart: But 68885 is more relevant to me, because fries are not important, and if you wish, you can make it with pens and in our separate sale it is cheaper than julienne. Of course, potato pancakes and cubes are the most important thing for a Belarusian.
Ludmila 2014
Girls, I stopped receiving reports on Temko, so I am writing now, although, perhaps, it is no longer relevant. An emulsion for sausage, believe it not, it turns out great in a cocktail bowl, and does not pull anything anywhere. There is enough power there, only you do not need to pound for a long time, and do not set the speed too high. Sometimes, in the middle of the process, you may need to open the lid and scrape off the sides with a spatula. And there you have to put all the liquid at once so that it can be stirred evenly.
Ptichkina
I read the whole topic - I really wanted to get a Boshik. But the question is ripe - can I whip them butter from cream?

Whisk in the bowl, of course, why not.
Ptichkina
here they wrote that the liquid "tightens" under the stick, so I'm worried - how to wash it later))
Miranda
Ptichkinawhen the knife is iron or plastic, then it can tighten.

And the whisk is dressed differently, it turns out that there is no stick.

Rather, there is a thin stick on which the bowl is put on.
On it is a corolla reducer.

And when there are knives, then there is still a thick stick on top, on which the knife is.
Here, under a thick one, it can sometimes tighten.
Ptichkina
Oh, I understood everything, thank you.My hands are itching to buy, but I’ll wait for some discounts - until March 8 these Boshiks were in the area of 9 tons, I hoped that they would get cheaper, but they ...
Ivanovna5
Ludmila 2014, of course, it is relevant for those who are still facing the choice of a model and for those who have not yet tried to prepare a meat mixture for ham and sausages in Boshik (like me, for example)
Ludmila 2014
On a cocktail blender, I even make meat-peanut butter with a sausage emulsion. There, however, there are nuances - I fry the peanuts, and then add some water, and boil this peeled and fried peanuts in it until it swells. Then I cook caramel (water + sugar + milk at the end), cool it a little, and put it all together in a cocktail bowl for 3 minutes at medium speed - the paste turns out - it does not live longer than a day in any quantity. You can do this with any nuts.
And meat emulsions are already a classic. True, the volume would have been larger for the bowl, but I'm already finding fault)
Here I have this Boshik for a long time, my conclusions, the most frequent use is cutting into cubes, somehow everyone suddenly stopped loving to cut everything with their hands. And the boards are idle, the current for bread is mainly used. Large and small cubes are our everything. And a medium grater! The chopper-knife is used much less often - I mostly scroll tomatoes on a tomato, and I don't remember anymore. For the dough, the nozzle is used well - we like homemade dumplings. The rest of the nozzles, oh, I remembered, the average shredder 2 buckets of cabbage chopped me in 5 minutes in the harvesting season.
I wrote about the cocktail bowl above, why I use it, well, in addition to cocktails.
But cubes are clearly a priority, there is only one caveat - if you use boiled potatoes, then you need to cool them completely so that there are neat cubes, otherwise there is a tendency to crease. But I'm not so picky - and I cut both carrots and beets - and think, no one gave up their portion, they didn't even notice. This is already from the point of view of aesthetics I write as beautiful. In general, ask if there is anything.
degteva
Ludmila 2014, and the meat emulsion is obtained as for boiled sausage? It won't work for ham. Will the knives break the meat badly?
Ludmila 2014
Yes, liquid for boiled. And for the ham, chopping is excellent in the bowl of the combine, because there it is not necessary to chop it hard into dust, and it does not turn out to be liquid, it does not drag it down. I made minced meat in the bowl of the combine, pieces of different fraction. The flight is excellent.
Ivanovna5
degteva, Ludmila 2014, I didn't understand what "meat emulsion" means, I decided that it was about kneading the meat mixture (pieces of meat and minced meat) to the threads.
degteva
Ivanovna5, as I understand in the cocktail bowl such powerful knives that they will grind all the pieces of meat and the ham will not come out. Why did she ask that the meat mass is obtained for boiling?
Anchic
Meat emulsion is usually called a very finely ground minced meat, as for doctor's or similar sausages. Because the mass should ideally be practically homogeneous.

Girls, hello everyone, finally I decided to buy model 68885, I reread the whole topic, I kind of understood, but to make sure I want to ask if I understand correctly that:
1. Cutter knife, 13x13x8mm, for MUM5 .., MUZ.CC. (00633442)
2. Filter sieve for wiping berries, tomatoes, boiled vegetables; for MCM55 (00642151)
3. Disc grater / shredder, for MUM4 / 5 .., MCM6 .. (00573024 - MUZ45KP1)
these are all add. nozzles will fit model 68885 ??
is this the middle grater?
filter sieve, for the life of me, I don't understand how to use it and make juice, for example, from oranges

what else besides potatoes and peppers for freezing can be chopped with a disc for fries?

Tell me, please....
Ludmila 2014
I don't remember the part numbers, but I didn't have an average grater in the kit, I bought it separately from the site. And large cubes too. I don't use a grater-sieve - according to reviews I didn't buy it - they write that fibrous fruits often clog holes, and therefore I did not take it. If you need juices in large quantities, then it's better to go broke on a juicer. And in small quantities, juice with pulp is excellent in a bowl for cocktails or in a large bowl with a knife to turn at high speeds. I did not see the difference. True, when I made raspberry puree, the resulting mixture was simply rubbed through a sieve. But I didn't have so many raspberries - about 2 liters of puree came out - I froze them in containers for the winter for children. And I don’t know anymore where I would fit this attachment if I had it. I didn’t take it, I couldn’t come up with an application for it, and it’s a pity for the place. For citrus fruits, by the way, this sieve attachment will not work, there is another one for them, but this is for those who often make juices from oranges and lemons. It's not me ).
And I didn't take a disc for fries. I looked at the reviews for chopped products - not a presentation for potatoes, if you fry it, they turn out to be semicircular, and there are a lot of scraps.
But the pepper for the frozen soup for the winter I just make with nozzles with cube cutters. For soups-borscht, I cut it into small pieces, into a container, and into the freezer. For stews-salads - large, and there too. But I often cut fruit into large cubes for fruit salads and ice cream additives. Everything is cut perfectly smoothly: kiwi, apple, pear, melon, peaches are not very soft.
Ask if anything. I will give you a hint.
P4elk @
Thanks for the quick answer, about the grater-sieve we were convinced that it was not really needed, it’s just that the Bosch website says what is for citrus fruits and what is extra. for citrus fruits, how many looked I did not find

my husband loves fried potatoes, so I come up with a nozzle to replace my pens)

I also use a hand grater for fries, but not Berner - too spicy, we did not make friends. I also heard that they praise manual cutting for fries like Nice Diser, but I can do it manually, although, of course, I would not refuse a normal attachment to the combine. You can find a photo on the network of what kind of potatoes are obtained when cutting with this nozzle - if you are satisfied with the result, then why not. I've been thinking from time to time that I can reduce my requirements and buy a disc for fries. Maybe whoever has it will write about the results. And I'll look for a link for citrus fruits right now.
PS. I could not find a link, before this nozzle was on the official website and was called a citrus press. But maybe now something else has been invented.

That's why I think it may still look))) the only thing I've read is that it shakes very much from this fries nozzle, so I doubt it

Yes, yes, I also read that the nozzle is poorly centered and can ruin the combine. I have a julienne attachment, and it really shakes - I removed it, I use a medium grater. I see no difference.
Miranda
Ludmila 2014, it is not that badly centered, and so all of this type of attachments work.

Maybe so, the repairmen told me that these 2 nozzles are most likely to hit the harvester. After all, modern equipment from the factory has a wear period so that it breaks down, and we went and bought a new one. That is why I don’t want to cut my life - I am too happy with it, and there is no such money every few years so ruined. And with all the other nozzles, it stands like a glove, and I am calm about the engine.
P4elk @
In general, while I was getting ready, but I want a harvester for about a year) now I decided BUT 68885 is almost not on sale, and if there are only display cases, but they cost 64051, where there is less power, there are no cubes, and a citrus juicer) I will go I also read reviews, all the same 68885 warmed my soul more, how do you think to take 64051?) Now I have doubts)
Miranda
P4elk @, with cubes there are still 64085
It is not much different from 68885

Differences.
1.free disc instead of julienne disc, the rest of the package is identical
2.the bib is white against the bib of gray, and they also feel different to the touch
3. Power 1200W vs. Power 1250W. this is only used at maximum speed, which I personally have never used. But even if I used it, 50W. imperceptible value, marketing difference.

Here is a man in pictures (under the spoiler) gives a detailed comparison of the average grater and julienne Bosch food processor - cuts into cubes! # 1409

The medium grater is not put in any configuration, in any of the large line of models. It is necessary to buy it separately, and it is the most demanded.

Cubes are a thing.
I would take with them. Since buying them separately is more expensive, plus not all models will fit.
Ludmila 2014
I, too, for the cubes, otherwise why go broke for such an expensive device. I looked, but they sell a lot of 68885. Hammer the search in Yandex market - a bunch of offers.
P4elk @
Well, that's it) I ordered it, I'll take 64085 at VT and immediately took the middle grater)) wow, I hope everything will be fine)) I can't wait)) thanks for the help
