Ingredients

Dough:
Wheat flour 250-300 g
Fresh yeast 11 g
Milk 80 g
Egg 1 PC.
(55 g)
Sugar 35 g
Butter 50 g
Salt pinch
Filling:
Poppy 50 g
Sugar 50 g
Curd cheese "Almette-creamy" 150 g

Cooking method

  • Prepare the filling: steam the poppy seeds with boiling water and leave to cool. Then drain the water. Mix poppy seeds with sugar and cheese.
  • Prepare the dough: grind the yeast with 10g. sugar, leave for 10-15 minutes.
  • Next, mix yeast with warm milk, melted butter, egg, flour, remaining sugar, salt.
  • Mix for 5 minutes with a mixer. I have the combine knives. The dough will be smooth and elastic.
  • Further options are possible:
  • 1. Roll the dough into a ball, cover with foil and leave for 1 hour until doubled.
  • 2. Roll the dough into a ball, put in a bag and leave in the refrigerator overnight. I did just that. In this case, according to the author of the recipe, the dough is more airy and pleasant to work with.
  • Knead the matched dough, divide into three parts. Roll each part thinly, cut into 8-10 parts, grease with filling, roll from the wide side to the narrow one. I was afraid that the filling would leak out and put it in little by little. As a result, the filling remained.
  • Place on a baking sheet with baking paper and immediately bake in an oven preheated to 200C until golden brown (I have 30 minutes).

Thanks for the recipe. I did it with Almette cottage cheese, it turned out very tasty. I was very surprised by the taste of this cheese. I followed the recommendations of the recipes for my bread maker - I rolled small pieces of dough into balls, then with a cone and then rolled out with a rolling pin and twisted from the wide part to the narrow one. It turned out beautifully, but yours is more beautiful.

And I'll put more poppy seeds next time. Very tasty filling.

For a long time this recipe was in my bookmarks, I finally baked bagels! Omela, this is just a miracle! True, I used dry yeast and instead of almetta I took ordinary cottage cheese, rubbed it well with sugar and added poppy seeds (the first time the poppy filling was a success!). Super!

Thank you very much for the recipe. Today I brought it to life. Thanks to Vladislava for the tip about using cottage cheese instead of such a "formidable" and unknown Almetta ...I just smashed homemade cottage cheese + sugar + pre-soaked poppy with a submersible blender. Mazyukala so well shob bulo, but still the filling remains, so next time I'll take the curd 100g instead of 150g according to the recipe. We liked the amount of sugar very much. I try to reduce it in all recipes, but here it is sweetness!

Girls, but my filling was all gone, it was VERY thick (and stood in the refrigerator while the dough rose with dry yeast five times, until it rose to want to bake) - so I just applied it in a layer ... It all remained in bagels! Very yummyooooo, the kid brought bagels to school today for the "edible break". And thanks for the poppy too - no matter how I cooked or steamed it before according to recipes, it remained dry, and this time it was just perfect in baking!
