Ingredients

katyk (yogurt, kefir) 500 ml
sugar 4 tbsp. l.
salt 1 tsp
flour 330 g
egg 1 PC
soda (no slide) 1 tsp
vanillin

Cooking method

Honestly, before my pancakes did not work - either they were not baked, then they came out flat ... Everything was until I found this recipe. According to him, they always turn out lush, tasty.
So we heat the katyk so that it is hot, but not boiled. I don't have katyk, I use Georgian yogurt, the product is similar, the author indicates that kefir can also be used.
Add sugar, salt, vanilla, egg to hot yogurt, mix thoroughly. I like it sweeter, sometimes I add 1 tablespoon more sugar (maximum).
Then add flour, 2.5 cups (325-330 grams), but I do "ON THE EYE", since the amount of flour depends on the size of the egg. We want the dough to be quite thick and hard to fall off the spoon. If the dough is thin, you will not achieve the desired splendor. For example, I have an egg in a shell weighing 72 g, the dough took 325 g of flour + 1 tbsp. l with a slide.
Mix the dough and ONLY NOW add the soda. Mix, the dough will immediately begin to increase.
We leave it for 10 minutes. Now we collect the dough with a spoon and put the future pancakes in the pan (do not mix anything). There should be not a lot of oil in the pan, pancakes should not float in it.
Put the finished pancakes on a paper towel.
Serve with sour cream or jam. Bon Appetit.

For a long time already I have been making only such pancakes, and even posted the recipe on another forum. But I add water to kefir, for 250 ml of kefir 40 ml of water, and it warms up well until curdling. I do it in the microwave. But I don't like empty pancakes, so I always cut apples and any berries into the dough.
