Girls, I got an Antonovka apple in the amount of about 3 kg here on the occasion. It turned out that Antonovka was growing at a neighbor's dacha and she kindly presented it to me. In our area, this apple is a huge rarity, the land and climate are not the same, they do not take root.
So that's it. Please advise where to apply it, so that it is not in vain to translate a valuable product. Do not offer pies, jams, etc.
My neighbor made 3 three-liter jars of pickled apples in my presence, but she was making the recipe for the first time, so her impressions are not.
What other ideas are there?
Mandraik Ludmila
Svetta, well, firstly, if this is the correct Antonovka, then these are winter apples and are stored in the underground or in the refrigerator until February in the light. I put them in a couple of boxes for the winter, we bought an old Antonovka together with the house. You can soak it, I soaked it in oak barrels (with malt), But most of all I like to ferment with cabbage, halves or quarters are laid in cabbage for sourdough and cabbage is more aromatic and the apples themselves are delicious!

Already not only in yours, Svetta ... Even in the markets, other apples are sold under the guise of Antonovka. You need to eat them, not cook them, because they are so delicious! And they are stored perfectly! Baked Antonovka with filling is also extremely tasty.

Svetta, Light, three kg is not so much, I am in favor of "adding" to sauerkraut, only you need to salt it in the classical way, then the cabbage will win in taste, and the apples will turn out great, but there is nothing to talk about the benefits. Leave a part and let it lie down to reveal the taste.
If soaked, then in rye straw and honey. You can also add a currant leaf.
Svetta
Thank you all for your advice, BUT.
No, cabbage is not good, we cannot eat it (((((((
I have nowhere to store these apples until winter, there is no basement and there is no place for them in the refrigerator.
The pumpkin is not yet, until it is harvested at least a month.
There is no rye straw and I don't know where to get it.

Apples Glory to the winners, pear Favorite Klapp 2.5 boxes, the plum did not go through the photo session. Each box contains 1.5 buckets.
Summer apples, they cannot lie, we eat as if not to ourselves. The pear is the same, and the plum ... in short, there is something to eat in the immediate queue besides Antonovka.

Svetta, put it in a box and eat like that, they are easy to eat, and 3kg

Eh, I would have such a neighbor, with an Antonovka tree
I planted myself an Antonovka tree, I hope to get at least a couple of apples next year. But now I'm 99.9% sure that it won't be a real Antonovk
Svetta, I know that cabbage is not welcome in your family. You won't bother with the marshmallow either. But marshmallows are fast, easy and tasty! Yes, even from Antonovka Or pastila, but the one that is simpler. I like this one very much.

And with the addition of cranberries! Somewhere I had a funky recipe, I copied it from some owl. magazine. But I did it only once, 10 years ago. I remember that it was very tasty. But we don’t have kkk Antonovka, the cranberries are expensive, I didn’t try any more.
Yarik
Svetta, well, if you don’t eat it, you don’t need jam, can you make mashed potatoes and put them in jars?
Svetta
Once again, thank you all for the ideas for using apples.
SvetaI, I once did a similar seam, only there was still a bow. And here without onions, I will definitely try to make 1-2 jars.
Nelya, you lure with marshmallows. Vaughn and Angela also advises. I'll think about it.
Tina, I will definitely make meat, I like the addition of apples.
Yaroslavna, and why apple puree? If you just eat, then it does not go with us, it is easier to bake an apple in a micron and not fool your head with jars and storage space.

In short, I decided for myself - I will close the soaked jars with pepper and make a marshmallow or marshmallow. I'll just try everything and attach my 3 kg.

Taya, well, here's another, they take the freezer. Apples are available to me all year round, it's not a problem to make mashed potatoes for marshmallows at any time. By the way, I have never made either marshmallow or marshmallow - I limit my husband's sugar.

Sveta, Taya, I make Belevskaya marshmallow according to Galina's recipe, generally 50g of sugar for a maximum of 4-5kg of apples or 3kg of puree. And the marshmallow is insanely tasty !!! From Antonovka then in general !!!

Buttercup, I found it in one smart article
"To the north of the Bryansk-Orel-Lipetsk-Michurinsk line, the variety is considered winter, to the south it is late autumn. The usual harvest time is mid-September. "
🔗
And since we have central Ukraine in general (the weather is closer to the south), the apples are ripe just now.

That's it, I bought red pepper at the bazaar, I'll report back later.

We have a very old Antonovka tree, planted by the previous owners of the house, if not my age, I'm sure if they could have taken the tree We have two very old Antonovka apple trees and an autumn striped one. Both are classic. They bore fruit every year, when suddenly last year we had no apples at all, neither on large nor on young apple trees, but this year everything is breaking. I am afraid that in this way the apple trees can start bearing fruit in a year, for me it would be better less, but every year.

Mandraik Ludmila
Many apple trees can bear fruit every year, Antonovka, autumn striped for sure, but if there are a lot of apples, then they cannot simultaneously lay the harvest on the trail. year and "endure" the harvest of this year, and switch to fruiting in a year. It is necessary to cut harder in autumn and spring and feed harder in July, when the fruit buds are laid on the trail. harvest.

And I specialize in ice slices of Antonovka, since we have two apple trees, and in winter I cook compote from Antonovka and a pinch of blackberry. It turns out very tasty, such a delicate and aromatic taste. I tried to freeze other varieties of apples, not that coat.

Likewise. And our old woman Antonovka switched to fruiting once every 2 years. Her apples are ripening Closer to October, so she was very surprised that Svetta now wants to use them. Our grinds are now as hard as stone and sour than lemon.

So, from our Antonovka we drive juice, roll it into sterile jars and without added sugar. In winter I pour it into a jug and dilute with water.

OgneLo, we severely cut the old apple tree, carefully removing all branches going inward.

In what dish / product will Antonovka sound better than other apples? Any suggestions.

In pies, jam, pastille! That's exactly what you don't need)). This is just the classic application of Antonovka. The most pectin apple, therefore, went for processing.
The apple itself is quite sour. Maximum sweet and sour, sharp, do not eat much. Very distinctive aroma and taste. You can't confuse it with anything. Better heat treatment then soften. At least bake with honey and nuts. Charlotte from Antonovka is a classic. Pastila belevskaya and marshmallow from Antonovka (pectin !!) - classics, etc. Self-hardening jam from Antonovka (pectin !!))) - classic. But you don't want it. Then there is nothing left at all except to eat raw.
Soaking Antonovka is also a good thing, but it is kept in the cold, as good as anything soaked. Only yellow is selected for urination. It ferments faster and tastes better (sweet!). If you don't have a cellar and there is room for 3 kg of apples in the refrigerator, then where are you going to get a tub of soaked apples? Yes, soaked Antonovkas are very tasty: tart, aromatic.Instead of straw, I often use rye flour.

Compote? Remove the core, fill the jar (well, cut it in half at most) and double-fill. Do not sterilize. And then Antonovka will crawl into porridge.

And about October. Yes, our Antonovka ripens in September / closer to October. in the fall. But taking into account that Sveta is in a different climate, it is logical that it bloomed earlier, started earlier and fruiting begins earlier.

The farther south Antonovka is grown, the earlier it ripens and, as a result, it is stored worse, less aromatic, less sour ... Since the classic characteristic taste and appearance of Antonovka apples is formed in the microclimate of the Middle zone.

Svetta, I closed last year according to your prescription eggplant sauté... I added Antonovka instead of vinegar. She kept all the jars under the bed. Delicious!!!

We had a good harvest of Antonovka last year. The sister brought the remains in early October. I didn't eat anything tastier. They matured to amber transparency and brown seeds. In the old years, everything was cut off earlier, my sister went for the last time in early September. While I was cutting them, I ate myself to the edge. The aroma is indescribable. Not a single apple this year.
