Ingredients

Dough
Flour 200g
Starch 60g
Sugar 100g
Butter 100g
Egg 1 PC
Salt pinch
Vanillin pinch
Filling
Water 700ml
Lemon 1 PC
Sugar 100g
Semolina or semolina 100g
Egg 2 pcs
Raisins 100g
Dried apricots 100g
Nuts or almonds for sprinkling

Cooking method

Wipe the zest from the lemon and squeeze out all the juice.
Pour water into a saucepan, add lemon juice and zest, sugar, semolina to it. Stir and cook, stirring constantly until semolina is tender and thick. Cool, stirring occasionally.
Soak dried fruits in boiling water for 5 minutes, rinse and finely chop dried apricots.
For the dough, mix flour, starch, sugar, salt, vanillin. Add soft butter, loose egg, knead the dough. Roll into a ball, wrap in plastic and refrigerate for 30-40 minutes.
Drive eggs into the cooled semolina porridge with a mixer, stir in raisins and dried apricots.
Roll out the dough into a layer 5 mm thick, transfer it to a mold with a diameter of 20 cm and distribute over the bottom and sides.
Put semolina filling on the dough, smooth out. Sprinkle on top with ground nuts or almonds and put in an oven preheated to 180 degrees for 40-45 minutes. Remove the completely cooled cake from the mold.

Delightful Italian dessert Torta di Semolino. Very light, delicate and incredibly delicious tart cake stuffed with semolina lemon soufflé with dried apricots and raisins. And shortbread dough with starch turns out to be very tender and literally melts in your mouth.
