Eggplant sote

Ingredients

eggplant 3 Kg
Bulgarian pepper 1 kg
tomato 3 Kg
garlic 1-2 goals
bitter pepper 1-2 pcs.
salt 100 g
sugar 2 glasses
vinegar 9% 100 ml
vegetable oil 1 glass

Cooking method

  • 3 kg of ripe hard tomatoes, 1 kg of bell pepper, 1-2 heads of garlic, 1-2 pcs. hot pepper - twist in a meat grinder, pour into a large saucepan. Add 100 g of 9% vinegar, 100 g of salt (this is 3 full tablespoons), 2 stack. sugar, 1 stack. vegetable oil, boil everything.
  • Cut 3 kg of blue into 1 cm circles and dip in boiling sauce. Cook over medium heat, stirring occasionally, for 20 minutes.
  • Arrange in prepared jars, twist.

I usually cook half a portion, it's more convenient to stir.

I have been doing it for 10 years already, I like it for the speed of the recipe (I hate sterilization!). The taste is awesome !!!

The recipe is really very simple and for the lazy like me. I did a little more than half a portion, it turned out 7 half-liter jars.

No, there is not a lot of sugar, it is leveled with vinegar. Saute turns out to be sweetish, not sweet, very balanced taste. IMHO.

I can answer as I did: I took the jars clean, washed and dried in advance, with screw caps. I didn’t sterilize the jars, I didn’t cook the lids .... True, I wrapped the sote in the jars in a blanket until it cooled down, but it was not difficult for me!
