I made marshmallows from homemade jam - though the jar was the last one, it was thick jam, it was the last one, 700 g, not sweet jam. Whipped up beautifully. turned white. A beautiful mass.
I added 1 protein - it whipped even more beautifully, like a cream.
But it seemed a little, added 3 more proteins, beat it up properly, like on a biscuit.
smeared on parchment, dried in grass, dried to dry - porous, lightest, melts on the tongue. Delicious apple meringue.

rather, bezeshki, because I whipped the jam + proteins to hard peaks - as an alternative to Belevskaya pastille - well, very tasty, only eaten instantly

gawala, Galina, I am with greetings again
I'm drying the marshmallow, I'll glue it soon.
I took apples on the market, the cheapest green ones, I don't remember the variety, I don't know it. I decided not to add pectin, although I had already bought it. The puree was whipped normally. I added a little cinnamon.
I also perforated the paper with a toothpick so that the mass dries better, it seems to have helped. This time it dries evenly. And the edges are not dry, and the middle is not wet. I recommend this to those who complained about the non-drying middle.
So I'll bring the cut to show in the evening.

gawala, Galina, I really want to make a fluffy marshmallow. Yesterday was the first pancake, which is lumpy. Today will be the second attempt I would like to get closer to the result.
I don’t know what to change this time. The source is the same - frozen apples with skin, but without the middle. Last time it turned out 970g mashed potatoes + 50g sugar + 1 protein. Didn't interrupt the mass for sure. The consistency was very similar to your photos.
How many trays do you need from 1kg of mashed potatoes?
I put it in the oven on "hot air" at 70 *. The door was closed. An hour later, the surface leveled off (from the traces of the scapula), then it began to sit down a little and in the morning there was a plastic pancake 2-3mm. The pancake, of course, is also delicious, but I also want lush beauty.
I’m thinking, can I add pectin? If so, how much and how to enter? I have it in bulk.
gawala
I somehow didn’t do it from frozen apples .. it seems there’s nothing to do ... Fresh are always there ..
maybe because frozen, the structure is wrong when baking is obtained. Did you bake apples or just defrost and whip them in protein and sugar?
I still have a slightly different dryer and other contraries, they are shown on the first page. that's just for 1 baking sheet 950g-1kg mashed potatoes, but when you start to level out the mass, then the excess is separately deposited in a jar, for a further layer. Ideal for my baking sheets 950g. layer 2 cm. in dried form 1 cm is obtained.
It is not necessary to dry a whole night in the oven, as a rule it takes about 6 hours. The oven must still be opened and the fan turned on there. Excess moisture will go away. I started making marshmallows in the oven. But then set not 70 degrees if the oven is ajar, but 85 degrees, taking into account that the oven is ajar and the fan is running, well, if there is one, of course, if not, then it is better to open the oven all the way back.
Not all apples need pectin. In Antonovka it is not needed. I didn’t add it to my household. In the purchased ones .. In the photo there is a pack of pectin, here is one pack for 2.4 kg of ready-made puree, baked and mashed.Let's say that I added it from the "bald" in such proportions, because I also don't know how much is needed and right .. But as a result, it turned out fine. according to the instructions for a pack of 1.5 kg of raw materials, one pack of pectin.
Introduce it in mashed potatoes and boil for three minutes, just close the lid, otherwise the mashed potatoes begin to erupt like a volcano. one such blowout and the whole kitchen will be "spattered" with a mass of apple ..
Nata333
Summer apples, I don't know the variety, but not exactly Antonovka. Relatives threw in a few bags I transferred most of it to jam (boiled in the microwave), and cut some into quarters / halves, peeled them off and threw them into the freezer. Because it was urgent to do something with them.
I poured them frozen on a baking sheet and baked, then blended and wiped them from the skins on a food processor.
I asked about the size of the baking sheet, since our areas are about the same. 31x31 = 961cm2, and I have 26x36 = 936cm2.
Could you tell me how much pectin is in the pack that is in your photo (is there only pectin or something else?) I just once took 1kg of pectin, so there is still a lot of it left.
I will check if the fan in my oven will work when the door is open. If not, I will swap the trays.
It’s painfully beautiful marshmallow, I hope it will work out for me someday.

gawala, Galina, and at what temperature do you bake apples, and how long approximately?
gawala

and at what temperature do you bake apples, and how much time?
200 degrees until ready. It all depends on the variety of apples. There are baked quickly, there is not very much. I pierced it with a stick, gently means ready. In average 45 minutes, but full pallet with top. Apples, cut into halves and cored. Even if they are slightly fried and peel, it does not matter. he threw the koruhu away, but the pulp remained. This does not affect the final result.
But another moment, there is a lot of juice from purchased apples, I drain it twice during these 45 minutes. Excess moisture is not needed at all. The pastille may simply not be fluffy and dry. there was already an experience of not receiving the correct marshmallow precisely because of a very large amount of juice, which was not drained, but was punched with a blender in mashed potatoes along with the pulp.

Thank you!

I welded on both sides, because there was little material. And so, if there is enough of it, it is enough to weld a strip in one side and grind everything. A height of no more than 2 cm is better to do. Above, I think not worth it.

Lil, on page 12 "Reply # 239 March 11, 2018, a photo of the pectin I am using. For 2 kg of mass 1 sachet. you can take a 1: 2 sachet, mine says 1: 3. I think you sell such pectin .. It's Austrian, but you seem to have it.
I don’t make candy for 1 kg, I always have more mass. I also took two bags for more than two kg .. You don't need to cook it for a very long time. A maximum of a couple of minutes, just close the lid by all means near the pan, a lot of things "spit" ..
the last time I made 1 sachet 1: 3 per 2 kg of mass.
gawala
Apples + apricots.
The cakes are soft, completely dried. There were 3 kg of apples and 1 kg of apricots. already mashed. it turned out 4 pallets. I had to use two dryers.
My husband's childhood friend was visiting today, he is a professional baker, he could not believe that this was not a biscuit until he tried it.

Yeah. Itself did not expect that this will turn out.
The cakes were immediately softest, sometimes it doesn't work that way. I don’t know what influenced it, apricots or “dry” applesauce. I poured the juice that was released during baking, and the apples were baked almost without juice. By the way. "I sell the idea" of purchased apples .. so that the "chemistry" does not bake and do not wipe afterwards .. One thing is that in the process of baking the apples must be agitated so that they bake evenly. But it's not a problem.

gawala, Galya, thanks for the detailed master class I was cooking while in the oven, my dryer is weak, I dreamed of the Grass cabinet. I think I'll be ripe for a purchase by autumn)))
In the meantime, the deliciousness itself is incredible - apple and cherry candy. Well this is soooo tasty and fragrant !!!! Everyone urgently needs to cook! Especially Ilmirushka, since I really need to know how Travolkin's wardrobe will cope))))

Sit down two! you listen badly in the lesson! Reply # 326 May 27, 2018 4:22 pm
Write .. It is imperative to drain the juice, the more the puree is, the better the marshmallow will be.

Check mark, Thank you!!! It's not difficult to cook at all. But it's sooooo hard to wait until the candy is prepared and choke on saliva from the crazy smell. And about the height of the pallets in Travolka, I even did not catch. It will be necessary to ask around the girls in the profile Temko.
Lilechka, let's cook yummy already. I did not drain the juice from the apples, there was very little of it now - the apples from the store were last year. But after baking the juice, a lot came out of the cherries, I poured it all into a glass and drank it.

I didn’t drain the juice from my homemade apples, but always from purchased ones. there is a lot of him ... If Natasha has her own apples, it is clear that they are not the same, not that juicy, but they have a lot of pectin. In general, you need to look at the weight during the baking process. If you see that there is a lot of juice, drain it better, do not leave excess liquid.
notka_notka
gawala, Galina, yes, the apples are certainly not the same. They are last year's, brought from the storage facility from Lebedyan, not imported. There is already a little juice in them, there were 4 spoons in the baking sheet at the bottom. I shook out the baked apples along with this juice into a bowl and blended (along with seeds and skins), and then into a sieve in the CM. I didn't want to peel and cut apples, so I simplified everything)))

Oh, your famous apples and plant are juicy .. or whatever its correct. Well, in short, juices are made or made. I drank these juices, I liked it.

And you don't need to peel these apples, I don't peel mine, it's me imported I am cleaning from the neighboring Federal Land. They are as fresh, shiny .. well, in general, processed, they contain a liter and a half of juice .. on a pallet. I still took out the middle from mine with such a round bone remover and baked it without the middle and the bones.
Quote: notka_notka
apples of course are not the same.
But such apples contain a lot of pectin. Yes, everything worked out well. Such a bright marshmallow.
I wonder what is more profitable for you, to make your own marshmallow or to buy, taking into account that it costs, in my opinion, expensive, 100gr -200 rubles?
I have no options, we do not sell it. Your apples, electricity. cheap.
notka_notka

Gal, where do you live?

Galya, to my shame, I have never eaten the purchased Belevskaya pastila. And I didn’t see it on sale here, maybe I just didn’t pay attention. And I don't like marshmallow like lokum - there is live sugar like in marshmallows.
